- 1. Gather your spices. Chop and mince the onion. Set aside
- 2. Cover 2 slices of bread with water. Let set for 10 minutes With your hands squeeze all the water out that you can. Discard the crusts. Set this mass in a strainer to drip while you prepare the next step.
- 3. In a large bowl mix with your clean wet hands combine the meat, onions, spices, parsley, salt & pepper and the bread mixture. You can use bread of your choice. I used Dill Rye bread.
- 4. Now add the beaten egg. Again mix very well with your hands. Let this mixture set for 1/2 hour.
- 5. You can broil the patties, or cook on the outside grill, even fry gently.. Do not let them burn or burn!!!
- 6. Serve on a platter, with cut lemons, and a little fresh parsley. For a dinner I like yellow rice, fresh tomatoes and cooked spinach to round out the meal. Don't forget the ozo!! OPA! now enjoy!

A great barbecue dish, and a nice alternative to steaks. Really quick to prepare! You can also fry them in a pan. ENJOY!

Steps:
- Preheat grill for indirect heat.
- In a large bowl, mix together ground beef, yogurt, thyme, and salt and pepper. Form meat into 8 patties, about 2 to 3 inches in diameter.
- Cut the cheese into 4 slices. Place one cheese slice between two patties, and seal the edges. Repeat with remaining beef patties and cheese slices. Set bifteki aside.
- Brush grate with oil, and arrange bifteki on hot grate. Cover, and cook for 15 to 20 minutes, or until meat is cooked through and cheese is melted.

BIFTEKIA (SPICED BEEF PATTIES)
This style of preparing hamburgers is popular in Greece. The seasoned beef patties stay moist and delicious thanks to the liquid exuded when grating the tomato and onion-be sure not to drain any of it away. Serve with roasted potatoes and a green salad.

Steps:
- Place bread in a large bowl. Cover with water and let soak for 10 minutes. Drain the bread and squeeze out excess liquid; return to the bowl.
- Position rack in upper third of oven and preheat broiler. Line a large rimmed baking sheet with foil.
- Add ground beef, tomato, onion and garlic to the bread. Stir in eggs, oil, oregano, vinegar, salt and pepper. Knead until the mixture has a fluffy consistency. Shape the mixture into 12 patties and place them on the prepared baking sheet.
- Broil the patties, flipping once and rotating the pan from front to back, until browned and an instant-read thermometer inserted in the center registers 165°F, 12 to 15 minutes total.

Steps:
- Saute the onion in 2 tablespoons of the olive oil until it turns golden.
- In a large deep bowl, mix the minced meat, the sauted onion, the eggs, tomatoes and herbs with your hands and season.
- Wet your hands with cold water and knead the mix until it is light and fluffy. Then let it settle in the refrigerator for about an hour.
- Rub your hands with olive oil and form the biftekia so that they are all the same size, but not too thick.
- Grill or bake for 6-8 minutes on each side.
