1.5 lb ground turkey
1/4 cup diced onion
2 oz feta cheese
1 egg
1/2 cup ground pork rinds (can sub 1/2 cup almond flour or 1/2 cup standard bread crumbs)
1 tsp dried parsley
1 tsp dried oregano
1/2 tsp crushed red pepper

Steps:

  • Add all ingredients to a large mixing bowl and mix until thoroughly combined
  • Take the mixture and form six 5oz burger patties - it helps to wet your hands before forming the patties
  • Heat a greased grill pan or outdoor grill over medium heat
  • Cook the patties for 7 minutes each side on an uncovered grill pan or open grill
  • Remove from heat, allow to cool slightly and enjoy!

These Greek Turkey Burgers, mixed with Kalamata olives, feta, and spinach,combine all my favorite Greek flavors and can be served with or without the bun.

1 ½ pounds 93% lean ground turkey
1 tablespoon minced garlic
1 teaspoon ground cumin
2 teaspoons dried oregano
1/3 cup Kalamata olives (finely chopped)
3 ounces crumbled feta cheese
1 cup finely chopped and packed fresh spinach
Pinch each of sea salt and black pepper
Olive oil spray

Steps:

  • Preheat the oven to 420°F.
  • Add all the ingredients to a large bowl and mix together thoroughly.
  • Scoop out a large fistful of meat, roll it into a ball, then flatten it to form a patty around 1 ½ inches thick. Repeat with the remaining meat to make 5 large patties of equal size.
  • Once the patties are formed, use your thumb to make a shallow indentation in the middle of each patty to prevent them from forming a dome as they cook.
  • Set a large oven-safe nonstick skillet over medium-high heat and spray lightly with olive oil. When the skillet is hot, add the patties.
  • Cook on one side for 3 to 4 minutes, until the edges are brown and seared, then flip the patties over.
  • Cook for an additional minute, then place the entire skillet in the oven to cook until the internal temperature is 165°F, 9 to 11 minutes.
  • You can also bake them on a baking sheet lined with parchment paper or aluminum foil for 8 to 10 minutes.
  • Enjoy these as a burger with a toasted whole wheat bun, butter lettuce, cucumber slices, thin red onion slices (optional), sliced tomato, and a little Greek yogurt instead of mayo. Or pair a patty with salad, rice, quinoa, or even roasted vegetables!

These Greek Turkey Burgers with Feta are so juicy, delicious, and easy to make. They come together in under 30 minutes and are also prep-ahead and freezer-friendly! I like to serve them with homemade tzatziki sauce for extra amazing flavor!

1 pound ground turkey ((85% lean, 15% fat))
¼ cup finely chopped Italian parsley
1 tablespoon finely chopped fresh dill
½ teaspoon dried oregano
2 tablespoons very finely diced red onions
2 cloves garlic, minced
¼ cup crumbled feta cheese
½ teaspoon Kosher salt
¼ teaspoon freshly ground black pepper
Olive oil for pan
4 burger buns of your choice (I like sesame or brioche buns)
Tzatziki sauce (homemade or store-bought)
Crumbled feta cheese
Tomato slices
Cucumbers slices
Onion slices
Lettuce

Steps:

  • Make the the tzatziki sauce per the recipe link instructions. You can make this 1-2 days in advance, if desired. You can also use store-bought tzatziki. Set aside.
  • Make the turkey mixture: In a large bowl, combine the ground turkey, parsley, dill, dried oregano, diced red onions, minced garlic, crumbled feta, salt, and pepper. Mix with your hands until evenly combined, but do NOT overmix. Note: overmixed meat will result in dry and tough patties.
  • Form the turkey burger patties: Divide the mixture into 4 equal parts and form ½ inch patties with an indentation in the middle. Make them a bit wider than the buns (about ⅓ or ½ inch larger or so) - this is because burgers tend to shrink while cooking. Tip: an indentation in the center to prevent them from puffing up as they cook. This will also prevent them from shrinking.
  • In a large skillet, heat a few drizzles of olive oil over medium heat. Cook for 4-5 minutes on each side. Tip: Don't press down the burgers with a spatula as they cook - this will remove all the moisture.
  • Build the burgers on the buns along with the toppings. Serve immediately and enjoy! I like to build them in this order: bottom burger bun, lettuce, turkey burger patty, tzatziki, crumbled feta, tomato slices, cucumber slices, onion slices, more tzatziki, top burger bun.

Ground turkey burgers get a bad rap for being a little bit boring. But when dressed up with flavors of the Mediterranean like olives, capers, garlic and dill, and then stuffed with salty and tangy feta cheese, they become anything but. To maximize the flavor we made a quick tzatziki sauce and slathered it over toasted sesame buns, then topped the burgers with fresh tomato slices and crunchy spinach.

1/3 cup plain whole-milk Greek yogurt
1/4 cup fresh dill, finely chopped
1 baby cucumber, grated (about 1/2 cup)
1 clove garlic, grated
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
Vegetable oil, for the grill grates
1 1/4 pounds ground turkey
1/2 cup pitted kalamata olives, finely chopped
1/4 cup fresh dill, finely chopped
2 tablespoons capers, finely chopped
1 teaspoon dried oregano
2 cloves garlic, minced
Zest of 1 lemon
Kosher salt and freshly ground black pepper
2 ounces fresh feta cheese, crumbled (about 1/4 cup)
4 sesame seed hamburger buns
1/4 cup olive oil
1 large Roma tomato, sliced into 8 rounds
Sliced red onion, for serving
Iceberg leaves, for serving

Steps:

  • For the tzatziki sauce: Mix the yogurt, dill, cucumber, garlic, lemon juice, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl until smooth. Refrigerate until ready to use.
  • For the turkey burgers: Prepare a grill for medium-high heat. Lightly oil the grill grates with vegetable oil.
  • Mix the ground turkey, olives, dill, capers, oregano, garlic, lemon zest, 2 teaspoons salt and a generous amount of pepper in a large bowl until well combined. Divide the mixture into 4 equal balls (about 6 ounces each). Working with one ball at a time, divide it in half and flatten to make 2 patties, each about 4 1/2 inches in diameter. Spoon 1 tablespoon of feta into the middle of one of the patties, leaving about a 1-inch border. Top with the other patty and press the meat together very tightly, forming a large patty shape with the cheese secured inside. (If needed, refrigerate the patties if you notice they are becoming a little malleable and too soft to work with while you build the remaining burgers). Repeat with the remaining balls and cheese. (At this point, you can freeze the burgers, wrapped tightly in plastic wrap and placed inside a freezer bag, for up to 3 months.) Thaw in the refrigerator before cooking.)
  • Grill the burgers, flipping once, until golden grill marks have formed, the meat is no longer pink on the top and an instant-read thermometer registers 165 degrees F, 5 to 6 minutes per side.
  • Meanwhile, split the buns open and brush both sides with the olive oil. With about 2 minutes of burger cooking time left, toast the buns on the grill until golden and a few grill marks have formed, about 2 minutes.
  • Spread about 2 tablespoons of the tzatziki sauce onto both halves of each bun. Layer each bottom bun half with a burger patty, 2 tomato slices, some red onion slices and iceberg leaves and the top bun half.

1 tablespoon dried parsley

1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup fat free sour cream
4 pita bread rounds
1 small cucumber, diced
1/4 cup feta cheese

Steps:

  • Prepare charcoal grill for direct heat cooking.
  • Remove cooking rack from grill and spray with non-stick cooking spray.
  • In medium bowl combine turkey, olives, parsley, garlic, cinnamon, nutmeg, salt and pepper.
  • Evenly distribute mixture into four burgers (approximately 4 1/2 inches in diameter). Grill burgers 2 to 3 minutes per side until meat thermometer registers 160 to 165 degrees F.
