2 cups penne pasta
¼ cup red wine vinegar
1 tablespoon lemon juice
2 cloves garlic, crushed
2 teaspoons dried oregano
salt and pepper to taste
⅔ cup extra-virgin olive oil
10 cherry tomatoes, halved
1 small red onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
½ cucumber, sliced
½ cup sliced black olives
½ cup crumbled feta cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Rinse with cold water and drain well in a colander set in the sink.
  • Whisk together the vinegar, lemon juice, garlic, oregano, salt, pepper, and olive oil. Set aside. Combine pasta, tomatoes, onion, green and red peppers, cucumber, olives, and feta cheese in a large bowl. Pour vinaigrette over the pasta and mix together. Cover and chill for 3 hours before serving.

1/2 teaspoon grated lemon zest
1/4 cup fresh lemon juice
1/2 cup (packed) fresh parsley leaves
1/2 teaspoon dried oregano
2 teaspoons Dijon mustard
Pinch ground cinnamon
Salt and freshly ground black pepper
6 to 8 ounces fresh curly spinach, stemmed, washed, leaves torn into 1-inch pieces
2 cups (measured uncooked) medium shells cooked, chilled and patted dry
2 kirby cucumbers, washed, peeled, seeded and cut into half moons
2 scallions, thinly sliced
6 kalamata olives, pitted and halved
1/2 cup feta cheese, crumbled or cut into dice
2 plum tomatoes, seeded and cut into fine dice

Steps:

  • In a blender or food processor puree until smooth, the olive oil, lemon zest and juice, parsley, oregano, mustard, and cinnamon. Season to taste with salt and pepper.
  • Make a wreath of spinach leaves on the outside edges of a large shallow pasta bowl or dinner plate. Combine the pasta with half of the dressing, the cucumbers and the scallions. Center the pasta salad in the middle of the spinach. Drizzle the remaining dressing over the spinach and garnish the spinach with black olives. Garnish the pasta with feta cheese and tomato.

3 cups uncooked tricolor spiral pasta
1 medium tomato, cut into wedges
1 small sweet red pepper, julienned
1 small green pepper, julienned
4 ounces crumbled feta cheese
1/2 cup sliced ripe olives
DRESSING:
2/3 cup olive oil
1/4 cup minced fresh basil
3 tablespoons white vinegar
2 tablespoons chopped green onions
2 tablespoons grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano

Steps:

  • Cook the pasta according to package direction's rinse in cold water and drain. Place in a large serving bowl; add the tomato, peppers, feta cheese and olives., In a blender, combine the dressing ingredients; cover and process until smooth. Pour over salad; toss to coat. Cover and refrigerate for 2 hours or overnight. Toss before serving.

300g fusilli pasta spirals - or you can use farfalle (butterflies) or penne (quill tubes)
225g bag prepared fresh baby spinach
250g punnet cherry tomatoes , halved
100g black olive (we bought kalamata from the deli counter)
200g feta cheese , broken into rough chunks
3 tbsp olive oil

Steps:

  • Tip the fusilli into a large pan of boiling salted water and boil for 10 minutes. Throw in the spinach, stir well and boil for another 2 minutes. Drain into a colander or sieve and leave to drip-dry.
  • Tip the tomatoes, olives and feta into a big bowl, grind lots of black pepper over and then drizzle with the olive oil.
  • Toss in the drained pasta and spinach, and let everyone help themselves.

1/2 cup olive oil
2 lemons, juice of
2 tablespoons oregano
1 large garlic clove, minced
900 g pasta, cooked and drained (your choice)
1 1/2 cups feta cheese, cubed
3 tomatoes, seeded and diced
1 large cucumber, seeded and diced
black olives
3/4 cup green pepper, seeded and chopped
2 tablespoons parsley
1/4 cup chopped green onion

Steps:

  • Prepare the vinaigrette (mix well together, oil, lemon juice, garlic and oregano).
  • In a large salad bowl, mix the pasta, feta cheese, tomatoes, cucumber, olives, green pepper, parsley and green onion.
  • As many black olives your little heart desires!
  • Pour the vinaigrette over the pasta and vegetables; mix well.
  • Salt and pepper to taste. Refrigerate for a few hours to allow flavours to blend.
  • Remove from the refrigerator for about a half an hour before serving.
  • You can use many types of pasta ie: rotini, farfalle, penne.
  • You can half the recipe by cutting down the amount of pasta -- but I would still make the same amount of vinaigrette.
  • It's way too yummy!

80 g pasta (maccaroni or penne)
125 g frozen spinach
150 g kefir
2 garlic cloves, minced
1 red onion, diced finely
2 tomatoes, sliced
40 g green olives, halved (stones removed)
1/2 lemon, juice of
1/2 bunch dill, chopped finely
1 tablespoon walnut oil or 1 tablespoon other flavourful oil
salt and pepper

Steps:

  • Cook pasta according to package instructions until al dente (firm to the bite). In the last five minutes of cooking add spinach.
  • For the sauce combine kefir, oil, garlic, dill and lemon juice in a bowl. Season with salt and pepper to taste.
  • In a big bowl combine sauce, drained pasta and spinach, tomatoes, olives and onion.
  • Season again to taste.
  • Let cool and serve or eat warm. Enjoy!

  • PASTA: Bring water to a rolling boil and generously salt the water (See Note 1) before adding in the pasta. One tablespoon fine sea salt to about 16 cups of water is a good guide. Once the salt has been added, wait for the water to come back to a boil, and then add in all the pasta. Cook pasta to al dente according to package directions (if using Barilla Mini Farfalle, this is 7 minutes). Drain and rinse in cold water until cool.
  • VEGGIES: Meanwhile, prep the veggies. Halve (and pit if needed) the olives, dice the red onion and green pepper (See Note 2), cut the cucumbers into half moons (See Note 3) and halve the cherry tomatoes. Mince the parsley and crumble or cut the feta into small cubes. Add all of these ingredients to a large bowl and then stir in the completely cooled pasta.
  • DRESSING: Combine all of the dressing ingredients in a mason jar. Shake thoroughly to combine, making sure no honey or Dijon is stuck on the bottom. Use a spoon to stir, and then shake again if needed. Refrigerate until ready to use. To serve, shake dressing again, right before adding to the salad and then drizzle over salad. Toss, add in feta, and toss again. Chill for 30 minutes to an hour before serving. At serving time, gently toss salad again and taste to adjust any seasonings as needed.
