Green Bean Bundles with Garlic Browned Butter image

This green bean recipe is impressive-looking but simple to make. The bundles make a wonderful addition to a holiday table or a fun presentation to liven up any dinner party menu.

1 pound thin green beans or haricot verts, trimmed
24 long, thin slices red bell pepper
8 long, thin scallions
2 tablespoons butter
2 cloves garlic, peeled
1 tablespoon extra-virgin olive oil
¼ teaspoon flaked sea salt, such as Maldon
Freshly ground pepper to taste

Steps:

  • Bring 1 inch of water to a boil in a large pan fitted with a steamer basket. Steam green beans and bell pepper until tender-crisp, 3 to 5 minutes. Trim whites off scallions and place the 8 long greens on the vegetables in the steamer during the last minute of cooking to soften. Transfer the vegetables to a large plate.
  • Divide the beans into 8 portions (10-14 beans each). To make a bundle, lay a scallion green on your work surface and place 1 portion of beans and 3 pieces bell pepper across it. Wrap the green around the vegetables and tie a knot to secure the bundle. Transfer to a serving platter. Repeat with the remaining vegetables.
  • Melt butter in a small skillet over medium heat; smash garlic flat, add to the pan and cook, swirling often, until the butter is nutty brown, 2 to 4 minutes. Discard the garlic. Stir in oil. Serve the bundles drizzled with the butter and sprinkled with salt and pepper.

10 slices bacon
1 pound fresh green beans
1 cube beef bouillon
4 tablespoons Worcestershire sauce
2 teaspoons soy sauce
2 tablespoons butter
2 tablespoons brown sugar
½ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until partially cooked. Drain, cut each piece in half, and set aside.
  • Bring a large pot of water to a boil. Place the green beans on a rack or special steamer basket over the boiling water. Cover with a lid so that the steam does not escape. Steam for a few minutes until the green beans are done. Set the green beans aside. Reserve about 2 cups of the water and dissolve the bouillon cube in it.
  • Take a bundle of green beans (4 or 5) and wrap them with a piece of bacon. Secure with a toothpick if necessary. Place the bundles in a shallow baking dish.
  • In a saucepan over medium heat, combine the reserved stock with the Worcestershire sauce, soy sauce, butter, brown sugar, and garlic powder. Stir until the sugar is dissolved.
  • Pour the sauce over the bundles and bake in a preheated 350 degrees F (175 degrees C) oven for 20 minutes or until the bacon is done.

These are the best green bean bundles I have ever tasted. I make them every Thanksgiving and for parties, everone raves about them. It certainly isn't the healthiest, but is the tastiest! I got the recipe from a friend of a friend-so not sure where it orginated. They are time consuming to make, and you have to plan ahead but I promise you they are well worth it!

1 cup brown sugar
1 cup melted butter

1 pound fresh green beans, trimmed
8 bacon strips, partially cooked
1 tablespoon finely chopped onion
3 tablespoons butter
1 tablespoon white wine vinegar

Steps:

  • Cook the beans until crisp-tender. Wrap about 10 beans in each bacon strip; secure with a toothpick. Place on a foil-covered baking sheet. Bake at 400° until bacon is done, 10-15 minutes. , In a skillet, saute onion in butter until tender. Add vinegar, sugar and salt; heat through. 8 -10 slices bacon, cut in half
3/8 cup butter
1/2 cup brown sugar
1/2 teaspoon Worcestershire sauce

Steps:

  • Melt butter with brown sugar. When melted add Lea & Perrins, soy sauce, lemon juice and garlic salt.
