1 tablespoon vegetable oil
1 onion, chopped
3 tablespoons all-purpose flour
1 cup milk
1 cup shredded mozzarella cheese
½ cup cottage cheese
1 teaspoon white sugar
1 teaspoon salt
2 (9 ounce) packages frozen green beans, thawed
2 cups seasoned bread crumbs
1 egg, beaten

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a medium saucepan over medium heat, saute onion until translucent. Stir in flour, milk, mozzarella cheese, cottage cheese, sugar and salt; cook, stirring, until thickened.
  • Place green beans in a 9x13 inch baking dish; pour cheese sauce over green beans.
  • In a small bowl combine bread crumbs and egg. Spread over green beans.
  • Bake in preheated oven for 40 minutes.

1 tablespoon vegetable oil
8 ounces green beans, trimmed
1 tablespoon Worcestershire sauce
1 tablespoon sriracha or other hot sauce
Fresh lemon juice, as needed
2 ounces crumbled blue cheese

Steps:

  • In a large skillet over medium-high heat, heat the butter and oil. When hot, add the green beans in one layer. When the beans are just beginning to color, stir them around and add the Worcestershire, sriracha and lemon juice. Cook until the beans are crisp-tender, a few more minutes. Transfer them to a plate, crumble over the blue cheese and serve.

4 ounces shiitake mushrooms, stems removed, julienned
1 1/2 tablespoons olive oil

1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
4 ounces goat cheese, crumbled

Steps:

  • Preheat the oven or a toaster oven to 400 degrees F.
  • For the green beans: Place the green beans on a sheet pan. Add the mushrooms, olive oil and capers, sprinkle with 1/4 teaspoon salt and toss to coat. Roast the green beans until tender and the skins blister, 8 to 10 minutes depending on the thickness of the green beans.
  • For the goat cheese sauce: Meanwhile, add the butter to a small saute pan over medium heat and cook until it starts to bubble and brown. Add the flour and stir to cook the flour, 1 to 3 minutes. Slowly whisk in the milk. Continue to cook until the mixture simmers and thickens, about 10 minutes. Add the garlic powder and pepper. Remove from the heat and add 3 ounces of the goat cheese. Taste and season with salt.
  • For the garnish: When the green beans are tender, pour the goat cheese sauce on the bottom of a platter. Top with the roasted green beans and sprinkle with the remaining goat cheese and crispy fried onions. Serve immediately.

I found this among some recipes my husband's aunt sent me. I tried it once, and it became a family favorite immediately. I save it and use it in the summer when beans are freshest. Then we always have something to look forward to each summer. I often double this recipe just to have enough for my children to have leftovers! You can prepare this ahead of time, but make sure that the casserole is at room temperature before baking. I often use a mixture of both green beans and wax beans in the casserole.

3 cups trimmed green beans, snapped in half
3 slices bacon, diced
6 green onions, chopped
½ cup shredded sharp Cheddar cheese
¼ cup sour cream

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 2 1/2-quart baking dish with a lid.

1 tablespoon unsalted butter, softened
1 ¼ pounds fresh green beans
freshly ground black pepper to taste
kosher salt to taste
2 teaspoons Dijon mustard, or more to taste
1 ½ cups heavy cream
2 ounces Comté cheese, grated
2 tablespoons freshly grated Parmigiano-Reggiano cheese
2 tablespoons unsalted butter, melted
⅓ cup dry bread crumbs
1 pinch cayenne pepper, or to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Generously grease a casserole dish with 1 tablespoon butter. Bring a generously salted pot of water to a rolling boil over high heat.
  • Remove stems from beans by trimming with a knife or snapping them off with your fingers. Cut beans in half.
  • Add beans to the boiling water, stir, and cook until just barely tender, 5 to 6 minutes, testing often to make sure you don't overcook them.
  • Remove beans with a strainer and immediately place in a bowl of cold water to stop the cooking process.
  • Once beans have cooled to the touch, use your hands to drain and transfer them into the prepared casserole. It's okay if they're still a bit wet.

3 tablespoons butter
8 ounces mushrooms, cleaned and diced
2 shallots, minced
2 garlic cloves, minced
1/3 cup flour
1 cup chicken broth
1 cup whole milk or 1 cup half-and-half
1 pinch thyme
1/2 cup gruyere, swiss or 1/2 cup cheddar cheese, grated
3 tablespoons dry sherry

Steps:

  • If using fresh green beans, clean and trim them. Blanch them in hot water for 6-9 minutes, plunging them into ice water. Drain completely. If using frozen, thaw and drain completely.
  • Melt butter and add the mushrooms, shallots and garlic. Salute until mushrooms release moisture and then evaporates, approximately 6 minutes.
  • Add flour and cook 1 minute, stirring constantly; add broth while stirring.
  • Add milk/half and half, reduce heat to medium low and simmer until sauce has thickened, about 10 minutes.
  • Add cheese and stir until melted.
