Black-Eyed Peas With Chard and Green Herb Smash image

This is a super-quick stew which has its roots in Palestine. Pick your chard color here-the clean green Swiss or the sweet-shop-neon rainbow chard. It is not often that one vegetable provides such a bouquet of options. Sometimes, I like to top this with tahini for an extra layer of flavor.

Number Of Ingredients 21

For the peas:
1 leek
1 tablespoon coconut oil or olive oil
2 cloves garlic
A good pinch of chile powder or chopped dried chile
1 (14-ounce/400-g) can black-eyed peas
1 teaspoon vegetable stock powder or 1/2 stock cube
A good grating of nutmeg
1/2 unwaxed lemon
7 ounces/200 g bunch Swiss or rainbow chard
Sea salt and freshly ground pepper
For the herb smash:
A large bunch of cilantro
2 green chiles
2 cloves garlic
1 ounce/30 g shelled walnuts
1 tablespoon runny honey or maple syrup
1 tablespoon good olive oil
Juice of 1/2 a lemon
Sea salt and freshly ground pepper
Rice or flatbreads, to serve (optional)

Steps:

  • Fill and boil a kettle of water and get all your ingredients together. Put a large saucepan over heat.
  • Wash and finely slice the leek. Add to the saucepan with the coconut or olive oil and cook over medium heat for a couple of minutes, until soft and sweet. Finely slice the garlic and add to the pan with the chile powder and cook for a couple of minutes, until the garlic is beginning to brown. Add the black-eyed peas with their liquid, the stock powder, and 2/3 cup/200 ml of hot water from the kettle and bring to a simmer. Grate in the nutmeg, squeeze in the juice of the half lemon, add the squeezed lemon half to the pan, and simmer for 10 minutes or so. Meanwhile, strip the leaves from the chard stalks. Finely slice the stalks and add them to the pan, then finely shred the leaves and put to one side.
  • Put all the ingredients for the herb smash into a food processor and purée until you have a smooth, grassy paste. Season well with salt and pepper.
  • Once the peas are soft and flavorful and the liquid has reduced to a thick,soup-like consistency, stir in the chard leaves, season well with salt and pepper, and leave to cook for a couple of minutes. Scoop into deep bowls and spoon over the herb smash. If you're really hungry, some rice or flatbread would go well alongside.

  • Heat the olive oil in a large saucepan over medium heat, and cook the onion, pepper, and celery until tender. Pour in the chicken broth, and mix in rice, black-eyed peas with liquid, diced tomatoes and green chiles, diced tomatoes, and garlic. Bring to a boil, reduce heat to low, and simmer 45 minutes, or until rice is tender. Add water if soup is too thick.

1 garlic clove, minced
8 cups chopped collard greens
1/2 teaspoon salt

1/4 cup lemon juice
2 tablespoons grated Parmesan cheese

Steps:

Steps:

  • Heat the oil in a large pot over medium heat. Add onion and cook till softened. Add garlic and cook 30 seconds. Add turkey and cook till done. Stir in the bell pepper, jalapeno pepper and chili powder and cook 1 minute.

In this dish a hunk of ham is left whole as it cooks with the peas. Not cutting it up is very country.

Extra-virgin olive oil
3 garlic cloves, smashed
1 fresh green chile, halved
1 piece country ham, about 4 ounces
1 pound dried black-eyed peas
2 bay leaves
2 quarts Chicken Stock (page 156)
Sea salt and freshly ground black pepper
1 (28-ounce) can whole tomatoes, hand-crushed
1/4 cup sugar

Steps:

  • Place a 2-gallon stockpot over medium heat. Drizzle with a 2-count of oil. Sauté the garlic, green chile, and country ham together until the garlic is soft, about 3 minutes. Add the black-eyed peas, bay leaves, and chicken stock. Simmer for 45 minutes, until the beans are tender, stirring when you think about it. Wait until halfway through the cooking process to begin seasoning with salt and pepper. You want the flesh of the bean to break down a little bit first so the flavors can penetrate the beans.
  • In a separate pan, cook the tomatoes and sugar over medium-low heat for 20 minutes, stirring occasionally, until the tomatoes are like jam. Serve the black-eyed peas in a large bowl and spoon the sweet tomatoes on top.

I made this on New Years day because I didn't have any greens to add, but I had some hatch green chiles in the freezer, and it turned out really well. The chorizo I used is Mexican chorizo, which is a raw, oily sausage that you fry into crumbles. This is not the cured chorizo. I used https://www.caciqueinc.com/products/pork-chorizo/, but anything similar would do. It was just what I had on hand.

1 lb dry black-eyed peas
9 ounces cacique mexican chorizo sausages (or equivalent)
1 large yellow onion, chopped
1 -2 jalapeno, seeded and chopped
2 garlic cloves
2 quarts chicken broth
28 ounces diced tomatoes
8 ounces roasted and chopped hatch green chilies
1 lb diced ham
2 bay leaves
1 teaspoon garlic powder
1/2 teaspoon ground thyme
salt and pepper

Steps:

  • Sort and rinse black eyed peas and soak in water overnight.
  • When ready, drain the peas.
  • In a 7 quart dutch oven, cook the chorizo. Don't drain, you'll use the oil.
  • Add the onion and jalapeno and cook until softened.
  • Add the garlic and cook another minute.
  • Add the black eyed peas and the remaining ingredients to the pot.
  • Turn the heat to high and bring the pot to a boil, then turn down to low and cover.
  • Maintain at a simmer for three hours, stirring every half hour or so.
  • After three hours, check the peas for doneness and add salt and pepper as needed.
  • Serve with corn bread and enjoy!

  • Meanwhile, preheat oven to 400°. Toss quartered onion, poblano chiles, and half of serrano chiles and tomatillos on a rimmed baking sheet with remaining 1 Tbsp. oil; season lightly with salt. Roast, tossing occasionally, until lightly browned around the edges but still vibrantly colored, 15–20 minutes. Let cool.
  • Transfer chile mixture to a blender; add cilantro and remaining serrano chiles and tomatillos and purée until smooth.
