During St. Patrick's Day, there are a lot of mint dessert recipes but I'm not a fan of mint desserts. So I made these cookies look like mint chocolate chip cookies with the green food coloring. You can easily make them mint chocolate chip cookies by adding some mint chocolate pieces in the batter.

2 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 cup butter (softened)
1 1/2 cups white sugar
1 egg
1 tsp vanilla extract
5 drops of green food coloring
1 cup chocolate chips

Steps:

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper. In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  • In a large bowl, cream together the butter and sugar until smooth. Beat in egg, food coloring and vanilla. Gradually blend in the dry ingredients. Stir in chocolate chips.
  • Roll dough into balls about one inch in diameter and flatten slightly to create round discs, and place onto ungreased cookie sheets lined with parchment paper.
  • Bake about 10 minutes in the preheated oven, or until golden around the edges.

Steps:

  • Preheat oven to 375°F. Mix flour, baking soda and salt in medium bowl. Set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, food color and peppermint extract; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in chocolate chips.
  • Drop by heaping tablespoons about 2 inches apart onto ungreased baking sheets.
  • Bake 10 to 12 minutes or until edges are lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.

Wilton Color Right Food Coloring - Red, Yellow, Blue

Steps:

  • Cream the butter, brown sugar and granulated sugar in a mixer.
  • Add the eggs and vanilla and mix until fluffy.
  • Add the Baking Soda and salt and mix.
  • Add the flour a bit at a time and mix until it is completely incorporated.
  • Separate the cookie dough into three equal portions.
  • Use food coloring to color one of the portions red and one of the portions green.
  • Add chocolate chips to each portion.
  • Create a 2 oz. cookie dough balls.
  • Slightly press the cookie ball down onto the cookie sheet.
  • Bake in a 375 degree oven for 8-10 minutes or until golden brown around the edges.

1 (17 1/2 ounce) sugar cookie mix (the 1 lb. 1.5 oz Betty crocker pouch)
1/2 cup butter, softened (1 stick)
1/4-1/2 teaspoon peppermint extract (NOT mint, mint is like a toothpaste smell or taste)
6 -8 drops green food coloring
1 egg
1 cup creme de menthe baking chips (such as Andes baking chips)
1 cup semisweet chocolate chunk

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, stir cookie mix, butter, extract, food color and egg until soft dough forms.
  • Stir in creme de menthe baking chips and chocolate chunks.
  • Using a small cookie scoop or teaspoon, drop dough 2 inches apart on a parchment-lined cookie sheet.

1 TBS golden flaxseed meal (substitute the flaxseed meal and water for one large egg if not vegan)
3 TBS water
2 cups brown rice flour or all-purpose flour if not gluten-free
2 1/2 TBS green tea matcha powder
1/2 tsp baking powder
pinch of salt
2/3 cup + 1 TBS sugar
1/2 cup unsweetened applesauce
5 TBS unsalted vegan butter spread or regular unsalted butter if not vegan
2/3 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 375ºF (~190ºC). Line two large baking sheets with parchment paper or silicone mats.
  • Make a flax egg. In a small bowl, mix 1 tablespoon of golden flaxseed meal with 3 tablespoons of water. Once it is mixed well, set it aside for about 10 minutes. The flax egg will turn into a gooey texture. If you are not making vegan cookies, just whisk a large egg.
  • In a medium-sized bowl, mix the brown rice flour, green tea matcha powder, baking powder, and salt together.
  • In a large bowl, mix the sugar, butter spread, applesauce, and flax egg until well incorporated. Gradually add the flour mixture with the wet ingredients. I usually add the flour in three batches, mixing the ingredients in between batches.
  • Fold in the semi-sweet chocolate chips.
  • Freeze the cookie dough for 30 minutes so that it is easier to handle and shape on top of the baking sheets.
  • Shape a heaping tablespoon of dough into a ball, and flatten it into a circular shape on the baking sheet. Repeat for the rest of the dough.
  • Bake the cookies for about 14-16 minutes or until the bottom of the cookies start to brown.
  • Let the cookies cool for a few minutes before eating.
  • Store the cookies in an air-tight container. If there are still any leftovers after two days, I suggest microwaving the cookies for about 10 to 15 seconds before eating. This softens the cookie and melts the chocolate chips again.
