Linguine With Scallops and Shrimp in Thai Green Curry Sauce image

A delicious Thai dish from Gourmet, December 2000. The sauce is a little thin so I like to thicken the sauce at the end of preparation with a cornstarch/water mixture.

2 1/2 tablespoons vegetable oil
1 hot red chili pepper, thinly sliced crosswise
3 green onions, thinly sliced, white and green parts divided
1 lb sea scallops
3/4 lb large shrimp, shelled and deveined
14 ounces unsweetened coconut milk
1 tablespoon green curry paste, Thai
1/4 cup chicken broth
1 tablespoon light brown sugar, packed
1 1/2 tablespoons fish sauce, Asian
1 tablespoon fresh lime juice
12 ounces linguine
1/2 cup fresh cilantro, chopped

Steps:

  • Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté chile and white parts of scallions, stirring occasionally, until lightly browned.
  • Transfer with a slotted spoon to paper towels to drain.
  • Pat scallops and shrimp dry separately and season with salt.
  • Heat remaining 1 1/2 tablespoons oil in same skillet over moderately high heat until hot but not smoking, then cook scallops until browned, 2 to 3 minutes on each side (scallops will be almost cooked through).
  • Transfer scallops to a bowl with slotted spoon and sauté shrimp in same skillet, stirring occasionally, until almost cooked through, about 3 minutes.
  • Add shrimp to scallops.
  • Add coconut milk, curry paste, broth, brown sugar, fish sauce, and lime juice to skillet, then simmer, stirring occasionally, 5 minutes.
  • Meanwhile, cook linguine in a 6- to 8-quart pot of boiling salted water until al dente, then drain in a colander.
  • Stir scallops and shrimp with any liquid in bowl into sauce in skillet and heat to boiling.
  • Reduce heat and simmer until scallops and shrimp are just cooked through, about 2 minutes.
  • Transfer seafood to a clean bowl with slotted spoon and add linguine and cilantro to sauce in skillet, tossing to coat.
  • Divide pasta and sauce among 4 bowls.
  • Top with seafood and sprinkle with scallion greens and chile mixture.

My wife Sarah introduced me to Thai curry before we were married, and now I like to make it for her! Starting with store-bought Thai green curry paste-which contains a blend of lemongrass, ginger or galangal, herbs and aromatics-makes it quick enough for even a weeknight meal.

4 tablespoons peanut oil
1 pound 16/20-count shrimp, deveined and shells removed
1 small yellow onion, sliced thin
1 jalapeno, sliced thin
Kosher salt
2 to 3 tablespoons Thai green curry paste
1/2 cup chicken stock
One 15-ounce can coconut milk
2 teaspoons fish sauce
1 tablespoon palm sugar or light brown sugar
1 tablespoon fresh basil leaves, sliced thin
1 tablespoon fresh mint leaves, sliced thin
1/4 cup roasted salted peanuts, roughly chopped
Steamed rice, for serving

Steps:

  • Add 2 tablespoons oil to a large nonstick skillet over medium-high heat. Add the shrimp and par-cook by searing each side for about 1 minute, making sure to not crowd the skillet. Remove the shrimp to a plate and set aside. Return the skillet to the heat and add the remaining 2 tablespoons peanut oil along with the onions, jalapenos and a pinch of salt and cook until they start to brown, 5 to 6 minutes.
  • Add the green curry paste and stir to combine; cook until fragrant, about 30 seconds. Add the chicken stock to deglaze the skillet, stirring. Add the coconut milk, fish sauce and sugar and mix well. Bring to a simmer and continue to cook until it thickens, about 10 minutes.
  • Add the shrimp to the curry and cook until cooked through, 1 to 2 minutes. Ladle the curry into a serving bowl and garnish with the basil, mint and peanuts. Serve with steamed rice-a perfect combination.

1 (14-oz) can unsweetened coconut milk
1 tablespoon Thai green curry paste
1/4 cup chicken broth or water
1 tablespoon packed light brown sugar
1 1/2 tablespoons Asian fish sauce
1 tablespoon fresh lime juice
12 oz dried thin linguine
1/2 cup chopped fresh cilantro

Steps:

We all love seafood at our house, especially scallops. I hope you enjoy this very special dish...these are my favourite seafood kebabs.

12 large shrimp
20 large sea scallops
1 green pepper
1 large Spanish onion
16 medium mushrooms, whole
4 tablespoons fresh ginger, minced
2 garlic cloves, minced
1/4 cup lemon juice (to taste)
1/2 teaspoon sea salt
1/4 teaspoon black pepper, freshly ground
3/4 cup olive oil
1/4 lb butter, melted
4 tablespoons honey, clover or 4 tablespoons orange liquid honey

Steps:

  • Mix all marinade ingredients together.
  • Pour 1/3 of marinade into bowl with seafood and chill in fridge for 2 hours.
  • Marinate the vegetables in 1/4 of the reserved marinade for about 30 minutes.
  • Thread the seafood and vegetables alternately on skewers.
  • Baste the kebabs with the remaining reserved marinade frequently while grilling on bbq.
  • This is wonderful served with a simple noodle dish, steamed rice or a green salad.

8 lime wedges, garnish
2 tablespoons vegetable oil
2 cups diced eggplant (1/2-inch dice)
1/2 cup chopped white onions
1 cup thinly sliced green bell peppers
2 teaspoons minced garlic
2 to 4 tablespoons Thai green curry paste, depending on desired degree of heat
6 Kaffir lime leaves, or 1 tablespoon finely grated lime zest
2 tablespoons nam pla (Thai fish sauce)
1 (14-ounce) can unsweetened coconut milk
1 cup shrimp stock, fish stock or bottled clam juice
1 1/2 pounds medium shrimp, peeled and deveined
1/2 cup chopped Thai basil (if unavailable use 1/2 Italian basil, 1/2 mint)
1/4 teaspoon salt
Steamed white rice, accompaniment

Steps:

  • In a wok or large saute pan, heat the oil over medium-high heat. Add the eggplant, onions and bell pepper and cook until softened, 3 to 5 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Add the curry paste, lime leaves, and fish sauce, and cook, stirring, for 15 seconds. Add the coconut milk and shrimp stock and bring to a boil. Lower the heat and simmer until thickened, 3 minutes. Add the shrimp and cook until pink, about 2 minutes. Stir in 1/4 cup of Thai basil and remove from heat.
  • Season to taste with salt. Garnish with remaining 1/4 cup Thai basil. Serve with rice and lime wedges.

1 tablespoon butter
2 tablespoons minced peeled fresh ginger
4 large garlic cloves, minced
1 tablespoon curry powder
1 1/2 pounds uncooked large shrimp, peeled, deveined
1 pound sea scallops
6 green onions, chopped
1 cup whipping cream
1 teaspoon grated lemon peel
1 1/2 cups long-grain white rice, freshly cooked
1/2 cup chopped fresh cilantro

Steps:

  • Melt butter in heavy large skillet over medium-high heat. Add ginger and garlic and sauté until fragrant, about 2 minutes. Add curry powder; stir 1 minute. Add shrimp, scallops and green onions. Sauté just until shrimp turn pink, about 4 minutes. Add cream and lemon peel. Simmer until shrimp and scallops are just opaque in center and sauce thickens slightly, about 5 minutes. Season with salt and pepper. Mound rice in large shallow bowl. Top with seafood curry, then cilantro.

36 medium shrimp, peeled and devined (shells reserved)
2 green onions, minced
2 cloves garlic, minced
2 teaspoons curry powder
3 cups heavy cream
1 cup white wine
1 lb scallops
salt and pepper
1 tablespoon butter
1 tablespoon chopped fresh parsley

Steps:

  • Combine shells, green onion, garlic and curry powder in medium skillet over med.
  • high heat and cook for 1 minute.
  • Blend in cream and wine.
  • Increase heat to high and cook, stirring constantly for 5 minutes.
  • Remove from heat.
  • Discard shells.
  • Set sauce aside.
  • Season shrimp and scallops with salt, pepper and curry powder.
  • Heat butter in saucepan over med.
  • high heat.
  • Add shrimp and scallops in batches and cook for 2 minutes.
  • Remove shrimp and scallops from pan and set aside.
  • Add cream sauce to pan and cook until sauce is thick about 3 minutes.
  • Return shrimp and scallops to saucepan.
  • Blend in parsley.

28 uncooked large shrimp (1-1/2 pounds), peeled and deveined
28 sea scallops (about 1/2 pound)
1/2 cup butter, cubed
7 tablespoons lemon juice
5 tablespoons Worcestershire sauce
1 to 2 teaspoons garlic powder
1 teaspoon paprika

Steps:

  • Place shrimp and scallops in a large resealable plastic bag; set aside. , In a microwave-safe bowl, combine the butter, lemon juice, Worcestershire sauce, garlic powder and paprika. Microwave at 50% power for 1 minute or until butter is melted. Stir to blend; set aside 1/3 cup for basting. Pour remaining marinade over shrimp ans scallops. Seal bag and turn to coat; refrigerate for 1 hour, turning occasionally., Drain and discard marinade. Alternately thread shrimp and scallops on metal or soaked wooden skewers.
