Green-Pea Pesto Toasts with Soft-Cooked Eggs image

Toss leftover pesto with pasta, spread it on sandwiches, or serve it as a dip for crudites.

4 large eggs
2 cups shelled green peas (from 2 pounds in pods), or 2 cups frozen peas, thawed
Coarse salt and freshly ground pepper
1 clove garlic, coarsely chopped
2 tablespoons pine nuts, lightly toasted
1/2 cup packed fresh basil leaves, plus more for serving
1/4 cup finely grated Parmesan
1/3 cup extra-virgin olive oil
4 slices rustic bread, toasted

Steps:

  • Bring a medium pot of water to a boil. Gently lower eggs into water. Turn off heat and cover; let eggs stand until whites are just set but yolks are still runny, about 6 minutes. Transfer to an ice-water bath and let cool completely.
  • Meanwhile, blanch fresh peas in a medium pot of salted boiling water until bright green and just tender, 3 to 4 minutes. Transfer to another ice-water bath and let cool completely. Drain. (If using frozen peas, skip this step.)
  • In a food processor, pulse peas, garlic, pine nuts, basil, and Parmesan until a paste forms. With machine running, slowly add oil, processing until combined. Season with salt and pepper.
  • Spread each piece of toast with 2 tablespoons pea pesto. Peel eggs and slice in half; divide among toasts. Season with salt and pepper, top with basil leaves, and serve.

½ cup fresh basil
1 cup peas, fresh or frozen (thawed)
1 clove garlic, smashed
1 teaspoon salt
½ teaspoon ground black pepper
½ cup extra virgin olive oil
4 Eggland's Best Eggs, large
4 slices toasted bread

Steps:

  • In a food processor, combine basil, peas, garlic, salt, pepper, and extra virgin olive oil. Process until smooth and blended.
  • Toast bread in oven (350 degrees F) or toaster for about 3-4 minutes.
  • In a small non-stick saute pan, over medium heat, break Eggland's Best egg onto surface, carefully.
  • Fry until transparent membrane turns to white, and yolk is cooked.
  • Remove and repeat for each egg.
  • Spread about one tablespoon of pesto atop each piece of toast.
  • Gently lay each egg atop the pesto.
  • Sprinkle with extra salt, pepper, and extra virgin olive oil (optional).

2 tablespoons pesto
1 teaspoon crushed red pepper flakes
2 large eggs
1 slice sourdough bread
2 tablespoons store-bought garlic mayonnaise
3 slices Gouda
2 to 3 thin slices heirloom tomato
Fresh basil leaves, for topping
Flaked sea salt and freshly ground black pepper

Steps:

  • Turn the oven to its broiler setting and position a rack in the middle of the oven.
  • Add the pesto and red pepper flakes to a nonstick skillet over medium heat. Allow to heat for 1 minute. Crack the eggs into the pesto and cook to your liking, 4 to 7 minutes.
  • Meanwhile, spread the sourdough with the garlic mayonnaise. Top with the cheese, then broil until toasted and the cheese has melted, 1 to 2 minutes.
  • Top the toasted bread with the sliced tomato and basil leaves. Top with the eggs, then sprinkle with salt and pepper.
