Here's a delicious stuffed pepper recipe that's easy to make. Each green bell pepper contains ground beef, onion, tomatoes, rice and cheese, and is cooked in tomato soup.

6 green bell peppers
salt to taste
1 pound ground beef
⅓ cup chopped onion
salt and pepper to taste
1 (14.5 ounce) can whole peeled tomatoes, chopped
1 teaspoon Worcestershire sauce
½ cup uncooked rice
½ cup water
1 cup shredded Cheddar cheese
2 (10.75 ounce) cans condensed tomato soup
water as needed

Steps:

  • Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set aside.
  • In a large skillet, saute beef and onions for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper. Stir in the tomatoes, rice, 1/2 cup water and Worcestershire sauce. Cover, and simmer for 15 minutes, or until rice is tender. Remove from heat, and stir in the cheese.
  • Preheat the oven to 350 degrees F. (175 degrees C). Stuff each pepper with the beef and rice mixture, and place peppers open side up in a baking dish. In a medium bowl, combine tomato soup with just enough water to make the soup a gravy consistency. Pour over the peppers.
  • Bake covered for 25 to 35 minutes, until heated through and cheese is melted and bubbly.

Preparation time does not include chilling time. This can be made ahead and chilled overnight, which leaves you time on the day of the party to prepare your hot hors d'oeuvres.

1 tablespoon unsalted butter
4 red bell peppers, roasted, peeled, seeded, cut into 1-inch strips (about 1-3/4 lbs.)
1 garlic clove, crushed
1/2 teaspoon dried basil
1 (1/4 ounce) envelope unflavored gelatin
1/2 cup cold water
1 tablespoon white wine vinegar
1 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1 cup heavy cream
fresh basil (to garnish)

Steps:

  • Melt butter in skillet over low heat. Add bell peppers and garlic; cook covered until tender, about 10 minutes. Process with basil in food processor until smooth.
  • Sprinkle gelatin over the water in small saucepan; let soften 5 minutes. Cook over low heat, stirring constantly, until completely dissolved.
  • Combine bell pepper puree, gelatin, vinegar, sugar, salt, and pepper in large bowl; let cool to room temperature. Whip cream until stiff. Gently fold into bell pepper mixture.
  • Spoon into lightly oiled 4-cup mold. Cover with plastic wrap; chill until firm, 4 hours or overnight.
  • Uncover mousse; invert onto serving platter. Gently lift off mold. Garnish with fresh basil. Serve cold with crackers.

6 green peppers, about two pounds, seeded and chopped
1/2 cup chopped celery or fennel
2 tablespoons butter
1 small onion, sliced
1 envelope unflavored gelatin
2 tablespoons fresh lemon juice
1/4 cup boiling water
3 tablespoons minced fresh dill
3/4 cup mayonnaise, preferably homemade
1/4 cup plain yogurt
Salt and freshly-ground pepper
Fresh tomatoes, imported black olives and dill sprigs for garnish

Steps:

  • Saute peppers and celery or fennel in butter until tender, but not brown, about 15 minutes.
  • Place onion, gelatin, lemon juice and boiling water in a blender or food processor and process for about 10 seconds (results will be smoother if you use a blender). Add cooked peppers, celery or fennel and dill and blend until the mixture is uniformly pureed.
  • Add the mayonnaise and blend until the mixture is smooth. Stir in the yogurt. Season to taste with salt and pepper.
  • Pour into a four-cup mold and chill at least six hours.
  • Unmold and serve garnished with fresh tomatoes, olives and sprigs of dill, or make a sauce by pureeing seeded, chopped fresh tomatoes. Season the sauce with salt and pepper and a few drops of lemon juice.

2 tablespoons vegetable oil
3/4 cup minced onions
1 garlic clove, minced fine
3 red peppers, cut into small dice
1 cup chicken stock
Pinch saffron threads, crushed
2 tablespoons tomato paste
Salt
Freshly ground white pepper
1 tablespoon powdered gelatin
1/4 cup white wine
3/4 cup heavy cream, whipped
30 endive spears
Red pepper, slivered, for garnish

Steps:

  • Saute the onions and garlic in the oil until golden. Add the diced peppers, stock, saffron, tomato paste, salt and pepper, to taste. Simmer until all ingredients are tender and liquid is reduced by half. Bloom the gelatin in the wine.
  • Puree the red pepper mixture in a blender. Add the bloomed gelatin while the red pepper mixture is still hot and blend to combine all ingredients well. Cool the mixture over an ice bath until it mounds when dropped from a spoon. Fold the whipped cream into the mixture. Transfer the mousse to a pastry bag fitted with a round tip. Pipe the mousse into the endive spears and garnish with a sliver of red pepper.

2 tablespoons olive oil
2 cloves garlic, minced
2 onions, diced
4 roasted red peppers, peeled, seeded and finely chopped
2 cups/250 ml chicken or vegetable stock
2 tablespoons tomato paste
Salt and freshly ground black pepper
Pinch piment d'espelette or cayenne pepper
4 teaspoons unflavored gelatin
Squirt of lemon juice
1 cup/250 ml heavy cream

Steps:

  • Heat the oil in a saute pan and gently cook the garlic and onions until soft. Add the red peppers, 2/3 cup/150 ml of the stock and the tomato paste. Season with salt, black pepper and piment d'espelette. Simmer until the vegetables are tender and the liquid has completely evaporated. Puree with an immersion blender and transfer to a metal or glass bowl.
  • Stir the gelatin into the remaining stock in a small saucepan and heat, stirring to dissolve. Mix it well into the puree. Set the mixture on a bed of ice and cool until the mixture mounds when dropped from a spoon. Check the seasonings, adding lemon for acidity if needed. (The mixture should be highly seasoned because the cream, once added, will dilute the taste a bit.)
  • Whip the cream and gently fold it in. Pour the mixture into a mold, cover and chill until serving, at least 4 hours.

VEGAN CHOCOLATE CHILLI PEPPER MOUSSE



Vegan Chocolate Chilli Pepper Mousse image

This vegan chocolate mousse is a beacon of hope for even the most self respecting 1000 calorie mousse devotee. Everything comes to the party to create the perfect blend of sweet and spicy. The tofu gives you some protein, and that lovely creamy texture that gets better when set. The cocoa adds that vital decadence that is a prerequisite in any great chocolate mousse, and the nut butter and vanilla give it an added dimension that stops it from being flat. Just a touch of agave to sweeten the deal, and some chilli for a final kick. I am not really a peanut butter fan for many reasons and do not use it very often. But I can't deny the flavor it brings to this. I prefer to use raw almond butter as a healthier option. Hazelnut butter works well too. It is all a matter or personal preference. You can also make this mousse without the chili. It still tastes wonderful, but I find that the heat lifts the heaviness of the cocoa and just gives the whole taste sensation an extra burst.

12 ounces of organic firm silken tofu (1 packet/300gm)
1/3 cup green and black's organic fairtrade cocoa
1/3-1/2 cup agave nectar, depending on your taste
2 teaspoons natural vanilla extract
2 tablespoons raw peanut butter or 2 tablespoons raw almond butter
1/4 teaspoon chili pepper flakes

Steps:

  • Throw all ingredients in your blender and puree until smooth and well combined.
  • You might have to stop and scrape the sides of your blender to make sure it is all mixed through.
  • Spoon mixture into martini glasses or serving bowls, and chill in the fridge for a couple of hours to yield the best results. The mixture will thicken slightly and the flavor of the chilli will strengthen. However, I have scoffed this after half an hour and been more than satisfied.
  • Like I always say, people take the first bite with their eyes. I like to serve this in gorgeous clear shallow cocktail glasses to elevate this into my "simple but special" file.
  • Serve with fresh raspberries, a dollop of soy cream, and some crushed raw almonds.
  • The different textures and flavours make this a winner on every level.
  • **Please note - For those of you with severe wheat, gluten, and dairy allergies - The Green and Black's cocoa (and a lot of others) is produced in a factory that also works with wheat, milk, hazelnuts, almonds, cashews, pistachios and brazil nuts. It is not in contact with peanuts.

2 large red bell peppers, seeded, deveined and cut into large dice
1 small clove garlic, peeled and bruised
1 teaspoon fresh thyme leaves
1/2 teaspoon salt, plus more to taste
1 teaspoon freshly ground pepper, plus more to taste
2 teaspoons white-wine vinegar
2 cups yogurt cheese

Steps:

  • Put the peppers, garlic, thyme, salt and pepper in a nonstick skillet. Sprinkle with the vinegar, partly cover and cook over medium-low heat until the peppers are tender but not soft, about 25 minutes.
  • Puree the mixture in a food processor or blender until smooth. Strain through a sieve lined with cheesecloth. Fold in the yogurt cheese. Season with salt and pepper to taste. This mousse can be stored in the refrigerator in a closed container for up to 3 days. Serve with grilled bread or as a base for pasta salad.
