GREEN TEA AND RASPBERRY CAKE
A men's tea party seemed like a fantasy. But as the snow melted, these boys were happy to gather at Nightwood's woodworking studio near the Brooklyn Navy Yard for strong, earthy teas and late-afternoon snacks.

- Preheat the oven to 350 degrees. In a medium bowl, mix the flour, yeast, salt and matcha powder. In a small pot, melt the butter. Add the crème fraîche to the butter and whisk; remove from heat.
- Using electric beaters or a food processor, whip the eggs, yolks and sugar until the mixture is white and thick. With a spatula, gradually fold in the dry ingredients. Then add the crème fraîche/butter mixture. (If the result is very thick, don't hesitate to reheat it a tad.) Pour half of the mixture into a buttered cake pan. Distribute half of the raspberries into the batter. Pour the rest of the mixture into the pan, then the second half of the raspberries, using your finger to press them just below the surface.
- Bake until lightly golden and a knife inserted comes out clean, 40 to 50 minutes.

HONEY-RASPBERRY TEA CAKE
Make the most of summer's berry bounty with an old-fashioned tea cake. With a quick prep time of just 10 minutes, it's easy to bake and enjoy any time.

- Heat oven to 350°F. Grease bottom and side of 8-inch round pan with butter; lightly flour.
- In large bowl, beat oil, honey and granulated sugar with electric mixer on medium speed about 3 minutes or until a paste forms. Add eggs; beat about 1 minute or until well combined. Beat in vanilla. On low speed, beat in flour, baking powder and salt just until combined. Add milk; beat about 2 minutes or until smooth. With spoon, fold in raspberries. Pour batter into pan.
- Bake 50 to 60 minutes or until toothpick inserted in center comes out clean and cake is a caramel color. Cool 15 to 20 minutes in pan. Carefully loosen edge of cake with knife; turn out onto cooling rack. Flip cake onto serving plate. Sprinkle with powdered sugar. Cake can be served immediately.

MARINATED RASPBERRY AND GREEN-TEA INFUSION

- In 3-quart saucepan, dissolve sugar in 2 tablespoons water, and cook over high heat until sugar is very lightly caramelized. Remove from heat, and add orange juice, standing back because it may spatter. Reheat, and stir with wooden spoon until caramel is dissolved. Add tea leaves, and cover. Allow to cool about 10 minutes, and then strain, reserving about 1 tablespoon of tea leaves.
- Add raspberries to orange juice mixture, and refrigerate for 2 hours. Using slotted spoon, scoop raspberries into four soup plates, pour sauce over, and garnish with a few reserved tea leaves.

Soft and spongy green tea cake - full of flavor, and not too sweet. This recipe has been widely enjoyed by family and friends, and I reap the side benefit of having the whole kitchen filled with the blissful aroma of green tea every time I make this. This can also be made into 12 cupcakes.

- Beat eggs together in a bowl using an electric mixer on medium speed until volume doubles or triples, about 7 minutes. - In a large bowl, combine the flour, sugars, baking powder and salt. In another bowl, whisk the egg white, milk and butter; stir into dry ingredients just until moistened. - For cake:
- Preheat oven to 325°F. Press cookie crumbs firmly onto bottom (not sides) of 8-inch-diameter springform pan. Wrap outside of pan tightly with 3 layers of heavy-duty foil. Using electric mixer, beat cream cheese, fromage blanc, and sugar in large bowl until smooth. Add eggs 1 at a time, beating until incorporated after each addition. Beat in green tea powder until smooth. Pour batter over prepared crust in pan. Place cakein roasting pan; add enough hot water to roasting pan to come halfway up sides of springform pan.
- Bake cake until set but center moves very slightly when pan is gently shaken, about 1 hour. Remove cake from roasting pan; cool 1 hour at room temperature. Refrigerate uncovered overnight. (Can be prepared 2 days ahead. Cover and keep refrigerated.)
- For tisane:
- Place 5 raspberries (mix of red and golden) and 3 mint leaves in each of 8 heatproof glasses. Fill glasses with boiling water; let steep 5 minutes.
- Cut around pan sides to loosen cake; remove sides. Place cake on platter. Garnish cake with some raspberries. Cut cake into wedges. Serve each piece with a few raspberries and a glass of tisane.
- *Fromage blanc is available at some supermarkets, cheese stores, and specialty foods stores.
- **Green tea powder is available at Japanese markets.
