A HEARTY GREEN BEAN AND SAUSAGE CASSEROLE
A hearty variation on the traditional green bean casserole that can be used as a main dish or a side.

Steps:
- Crumble the pork sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain grease, and set aside.
- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with nonstick cooking spray.
- In a large bowl, stir together the cream of mushroom soup, milk, soy sauce, garlic, and pepper. Mix in the sausage, then add the green beans, and stir until evenly coated. Pour half of the mixture into the prepared baking dish. Top with half of the fried onions. Spread remaining green bean mixture over the onions.
- Bake for 30 minutes in the preheated oven. Remove from the oven, and sprinkle the rest of the fried onions over the top. Return to the oven for 5 to 10 more minutes, or until the onions are toasty, and green beans are cooked to your desired doneness. Let rest 5 minutes before serving.

I love the tangy taste of fried green tomatoes, but they are, well...fried! And messy to make. I developed this recipe to help assuage my hunger for fried green tomatoes, and yes, it does the job quite well. Without all the grease and batter, the tangy taste of the tomato can really shine through!

- Preheat oven to 350 degrees F (175 degrees C).
- Mix green tomatoes, celery, green onions, and cilantro together in a 2-quart casserole dish. Whisk soy sauce, olive oil, brown sugar, vinegar, black pepper, salt, and red pepper flakes together in a bowl; pour over vegetable mixture. Toss to coat.
- Bake in the preheated oven until vegetables are tender, about 45 minutes; stir about 20 minutes into cooking to redistribute sauce.

- In a 6-qt. stockpot, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles. Remove with a slotted spoon; drain on paper towels. Add garlic, basil and oregano to skillet; cook and stir 30 seconds. Add chardonnay, stirring to loosen browned bits from pan. Cook until liquid is almost evaporated, 1-2 minutes., Stir in tomatoes, carrot, tomato paste, bay leaf, salt, garlic powder, paprika and sausage. Bring to a boil. Reduce heat; simmer, covered, 20 minutes. Cool. Discard bay leaf., Preheat oven to 350°. Stir peas into sausage mixture. In a small bowl, combine rice, green onions and parsley. In a greased 13x9-in. baking dish, layer half the rice mixture, 1/2 cup Parmesan cheese, 1/4 cup Romano cheese, sausage mixture, 1/2 cup Parmesan cheese and 1/4 cup Romano cheese. Top with remaining rice and cheeses. , Unroll phyllo dough. Layer 5 sheets of phyllo on top of filling, brushing each with oil. Brush remaining 5 phyllo sheets with oil, crumple gently and place on top of casserole. , Bake until golden and crisp, 35-40 minutes. Let stand 5 minutes before serving. To Make Ahead: Recipe may be made a day in advance. After assembling casserole, cover and refrigerate. Remove from the refrigerator 30 minutes before baking. Bake as directed.

RICE - TOMATO CASSEROLE
This is like Spanish Rice, but includes cheese and makes for more protein. kids love it. There is another version with chicken. Just saute about a pound of boneless, chopped chicken breasts, then proceed with the recipe. At the end, instead of baking, leave everything in the saute pan, add the rest of the sauce and the cheese. Then cover the pan and let it sit until the cheese melts.

- Saute onion, garlic, green pepper and rice in the butter until lightly brown.
- Add all but 1/2 cup of tomato sauce.
- Then add boiling water, salt& pepper.
- Simmer, covered, until liquid is absorbed (about 20 minutes.).

- Preheat oven to 400° and spray a 9x13 baking dish with a non stick spray.
- Wash creamer potatoes, cut in half and add to a sealable gallon size baggie.
- Add oil, seasonings, pepper and red pepper flakes to baggie. Shake to coat.
- In a large frying pan, add sausage and water and cook over medium high heat until sausages have browned and most of water has evaporated.
- Remove sausage from pan and when cool enough add to baggie.
- Melt butter in frying pan and add onions and garlic, cook until onions are translucent.
- Let cool for a few minutes and then when cool enough, add to baggie and shake to mix.
- Lastly, add green beans to baggie, shake to mix and then empty contents into prepared baking dish.
- Cover with foil and place in the oven. Bake for 40 minutes or until potatoes are tender.
- Carefully remove from oven and enjoy!

- Saute onion, green tomato, chilies, carrot and garlic in oil or butter for a few minutes.
- Transfer to a 2 1/2 quart casserole sprayed with no-stick spray or lightly buttered.
- Stir in rice, sausage and parsley.
- Heat broth to boiling and add to casserole.
- Cover tightly and bake at 350 F for about 40-45 minutes or till rice is done and liquid is absorbed.
- Check after about 30 minutes and add a little additional broth or water if it seems to dry.
