BLACKSTONE PORK FRIED RICE
Blackstone Pork Fried Rice is hibachi style fried rice all made on the griddle with marinated pork, veggies, and served with yum yum sauce

Steps:
- Cut the pork into bite size pieces and place them in a gallon size plastic bag.
- Add the soy sauce, garlic, and ginger. Massage the bag until evenly combined. Marinate in the fridge several hours or overnight.
- Add the mayo, ketchup, sugar, paprika, and garlic powder in a bowl and whisk until evenly mixed.
- Preheat the griddle to medium high heat for at least 4 minutes.
- Add some oil and spread with hibachi spatula, add the rice, onion, and eggs. Cook 2 to 3 minutes, mixing together with hibachi spatulas.
- Add the peas and carrots and cook 1 minute, mixing those together with the rice.
- Add the soy sauce, butter, ginger, garlic, sesame seeds, and a small amount of kosher salt and pepper. Mix together and cook for 5 to 6 minutes, flipping the rice over occasionally.
- During the last 2 minutes of the rice cooking, move the rice to the side to make room for the pork. Add more oil and the pork. Cook 4 to 5 minutes, flipping a few times and mix the chicken together with the rice.Note: Spreading the rice in a thin layer and pressing slightly with the spatula creates a nice, crispy rice.
- Serve the pork fried rice with yum yum sauce drizzled over top and sriracha if desired.

GRIDDLE PORK FRIED RICE

Steps:
- Preheat your griddle to medium-high or high heat (basically you just don't want to light the oil on fire), and place about a tablespoon of oil down.
- Dump on the onions and bbq pork, and stir fry for about 2 minutes.
- Add in the frozen peas and carrots and stir fry until heated through and the edges get a little crispy.
- Move the pork and the vegetables over to the side of the griddle that is NOT a hot spot (if your griddle has multiple heat zones, turn one down).
- Put down some more oil on the griddle, and let it heat up. Add on the cold rice and break it apart with your spatula. Continue moving it around the griddle, evenly coating with oil and letting it get toasty. Add more oil as needed.
- Combine the meat, vegetables, and rice together and stir and toss until they are evenly combined. Drizzle the soy sauce and sesame oil on top and continue to stir and cook until it is evenly distributed.
- Make a hole in the middle of the rice and add a little more oil. Crack the eggs inside, stir with the spatula, and toss to combine with the rice.
