GRILLED AVOCADOS WITH GINGER MISO
Grilled avocado halves served with our punchy marinade are surprisingly meaty and wonderfully tender and rich. They make a great vegetarian main dish or a change-of-pace stand-in for guacamole.

Steps:
- Whisk together the shallots, vegetable oil, vinegar, ginger, miso, sesame oil and sugar in a small bowl; set the marinade aside.
- Halve the avocados lengthwise, remove the pits and score the interior of each half in a 1/2-inch crosshatch pattern. Set the halves, cut-side up, on a rimmed baking sheet, and sprinkle with some salt and pepper. Spoon the marinade into the avocado cups, dividing evenly (about 1 tablespoon per avocado half), and let stand for 5 minutes while it soaks in. Spread the marinade (with a pastry brush or the back of a spoon) over the entire cut surface of the avocados and gently into the crosshatch cuts.
- Meanwhile, heat a grill or a grill pan to medium-high. Lightly oil the grill grates or grill pan. Grill the marinated avocado halves, cut-side down, for 2 minutes, gently loosen with a spatula, then continue grilling until the avocados show grill marks and the marinade is fragrant and caramelized, about 2 minutes more. Flip the avocados to their skin side, sprinkle with some salt and pepper and grill for 1 minute. Transfer to individual serving plates, and garnish each with some of the basil and a lemon wedge.
GRILLED LOBSTER AND AVOCADO COCKTAIL
Steps:
- Heat grill to medium. Place lobsters on the grill, cut side down, and cook until slightly charred and just cooked through. Remove meat and coarsely chop.
- Whisk together lime juice, honey, horseradish, Worcestershire, hot sauce, tarragon, and olive oil in a medium bowl. Season with salt and pepper, to taste. Add the grilled lobster meat, avocado, and watercress. Serve in martini glasses and garnish with a lime wedge.
GRILLED AVOCADO TACOS
Grilled avocados on a warm corn tortilla topped with a fresh salsa made from grilled corn, black beans, jalapeño, cilantro and lime juice from Dan Seidman of The Chef Dan.

- Preheat grill to medium-high heat.
- Brush corn with olive oil and individually wrap with Reynolds Wrap® Aluminum Foil. Place on the grill, turning frequently for 20 minutes. Allow to cool slightly before handling.
- Cut corn off the cob and combine with black beans, jalapeno, cilantro and the juice of 1 lime. Season to taste with salt and pepper and set aside.
- Slice avocados in half and remove the seeds but do not remove the skin yet. Squeeze the juice of the remaining lime over the avocados and lightly brush them with olive oil.
- Grill flesh side down for 2 to 3 minutes and then remove. Quarter each avocado half and then carefully peel off the skin.
- Wrap tortillas in foil and place on the grill while the avocados are cooking.
- Build tacos by placing avocado slices on tortillas and then top with the corn and salsa.
- Serve with your favorite hot sauce and additional lime wedges.

- Stir together olive oil and lime juice. Brush avocados all over with olive oil mixture. Sprinkle cut sides of avocados with salt.
- For charcoal grill, grill avocado halves, cut side down, on the rack of an uncovered grill directly over medium coals for 5 minutes or until browned. Turn avocado halves, cut side up. Fill centers of avocado halves with the 1/4 cup picante sauce and shredded cheese. Cover grill and grill about 5 minutes more or until cheese begins to melt. (For a gas grill, preheat grill. Reduce heat to medium. Place avocado halves on grill rack over heat. Cover and grill as above).
- Remove avocados from grill. Sprinkle tops of avocado halves with snipped cilantro. If desired, serve on a bed of salad greens with additional picate sauce and sour cream.

GRILLED AVOCADOS
Had some ripe avocados left over. They were extras from guacamole the previous weekend. So I gave this quick and extremely easy recipe a shot on the grill, and the wife and kids loved it. Fresh ones are good too. Use paprika instead of the chipotle and chili powder for less spicy. Canola oil can be substituted for olive oil if desired.

- Whisk olive oil, ground chipotle pepper, and chili powder together in a bowl; brush over the entire surface of the cut-side of each avocado.

- Gather the ingredients. Clean the grates . Prepare a medium-high (400 F to 425 F) indirect gas or charcoal grill fire.
- Slice the avocados in half lengthwise. Remove the pit, and immediately cover the flesh with fresh lime juice.
- Brush a small amount of olive oil onto the surface of each avocado and sprinkle with salt.
- Oil the grates and place the avocados cut side down over indirect heat on the grill.
- Grill with the lid open for 4 to 6 minutes until the avocado becomes slightly tender when gently squeezed with tongs. The skin should be crisp and the flesh will have grill marks.
- Remove from the grill. Serve with a more lime juice and salt, if desired.

- Place the butter in a small prep bowl. Use a fork to whip it soft until creamy.
- Add the lime juice (and lemon juice), tequila if using, lavender, and salt. Beat until all the liquid is incorporated. Refrigerate until firm.
- Preheat a grill to medium-high. We used our stove top grill to prepare this recipe.
- Cut the avocados in half and remove the pits. DO NOT peel the avocados.
- Place the avocados on the heated grill, flesh side DOWN and leave for about 4 minutes to make grill marks on the flesh. Tip: on our stove top grill with my hand I [lightly] added pressure to the avocados to speed up the grill mark process thus avoiding overcooking the avocados and turning soft too quickly.
- Turn the avocado halves over and place a scant tablespoon of the butter-citrus mixture in the hollow of each avocado.
- Grill for an additional 10 minutes approximately or until the butter melts and the avocado is soft but not mushy. *The cooking time depends on the ripeness of the avocado.* The avocado should bubble around the skin but not be overcooked. For testing this recipe, this step took me about 4 minutes on the stove top grill.
- The avocados halves were served with a light garnish of lime zest, our main dish of simple roasted chicken; Recipe #478129, and Recipe #175034.
