Open-Faced Bratwurst Sandwiches with Beer Gravy image

A nod to both my German heritage and classic diner fare, this bratwurst sandwich recipe comes together in a snap and can be made all in one skillet! I serve it with a green vegetable and french fries or mashed potatoes on the side. Cook sausages in lager or stout beer for a deeper flavor profile. —Allison Ochoa, Hays, Kansas

1/4 cup butter, divided
1 package uncooked bratwurst links (20 ounces)
1 medium onion, thinly sliced
1 bottle (12 ounces) beer or nonalcoholic beer
2 tablespoons all-purpose flour
1/8 teaspoon dill weed
1/8 teaspoon pepper
5 slices thick bread

Steps:

  • In a Dutch oven, heat 2 tablespoons butter over medium-high heat. Add bratwurst and onion; cook and stir until bratwurst starts to brown and onion softens. Stir in beer. Bring to a boil. Reduce heat; simmer, covered, turning occasionally, until a thermometer inserted in bratwurst reads 165° and brats are no longer pink, 12-14 minutes., Remove brats and onions; keep warm. Add remaining butter to pan; whisk in flour, dill weed and pepper. Bring to a boil, stirring constantly until thickened, 3-5 minutes. To serve, place 1 brat on each slice of bread; top evenly with onions and gravy.

4 bratwurst
4 pretzel sandwich rolls (6 inch), partially split
4 tsp. GREY POUPON Harvest Coarse Ground Mustard
4 KRAFT Singles

Steps:

  • Heat grill to medium heat.
  • Cook and stir onions in hot oil in large skillet on medium-high heat 5 min. or until onions are golden brown; cover. Simmer on low heat 10 min., stirring occasionally.
  • Meanwhile, bring beer to boil in medium saucepan. Add bratwurst; cook 5 min. Drain. Grill 4 to 5 min. or until done (160ºF), turning occasionally.
  • Spread cut sides of rolls with mustard; fill with bratwurst, Singles and onions.

1/4 cup beer
3 tablespoons coarse-grained Dijon mustard
1 tablespoon vegetable oil
1 tablespoon chopped fresh thyme or 1 teaspoon dried
3 1/2-inch-thick red onion slices
4 links fully cooked bratwurst (about 10 ounces), halved lengthwise
2 slices caraway rye bread (each about 3x5 inches)

Steps:

  • Prepare barbecue (medium heat). Whisk beer, mustard, oil and thyme in small bowl to blend. Brush both sides of onion slices with some of mustard dressing, being careful to keep slices intact.
  • Grill onion and bratwurst until onion is tender and slightly charred at edges and bratwurst is golden brown, turning twice, about 10 minutes for onion and 6 minutes for bratwurst. Grill bread until lightly toasted, about 1 minute per side.
  • Place toasted bread on plates. Brush with some of mustard dressing. Top bread with bratwurst; separate onion slices into rings and arrange over bratwurst. Drizzle remaining mustard dressing over onions and serve.

Oil, for grates
1 tablespoon butter, plus more for rolls (optional)
1 small red onion, halved and thinly sliced
1 can (14 ounces) sauerkraut, well drained
1 teaspoon sugar
1/2 teaspoon caraway seeds
Coarse salt and ground pepper
4 precooked bratwurst sausages (3 ounces each)
4 hard rolls, halved horizontally
1/4 cup spicy brown mustard
1/2 cup bread-and-butter pickles
Potato chips, for serving

Steps:

  • Heat grill to medium-low; lightly oil grates. In a medium saucepan, heat butter over medium. Add onion, and cook, stirring occasionally, until soft, 4 to 5 minutes. Add sauerkraut, sugar, caraway seeds, and 1/2 cup water; season with salt and pepper. Simmer until sauerkraut is heated through, 3 to 5 minutes; set aside.
  • Grill sausages, turning frequently, until golden brown and warmed through, 10 to 12 minutes.
  • Grill rolls, cut side down, until warm, 1 to 2 minutes. Spread lightly with butter, if using, and mustard. Halve sausages lengthwise; fill each roll with 2 halves and pickles. Serve with sauerkraut and potato chips.

This is my traditional way of making Brats. We use wild game meet brats that is put together by our butcher. I get it ground in packages, and then I make patties out of it. You can also use linked brats jsut the same! We love this with gravy, rice/spaetzle and red cabbage... It is definitely one of our monthly must haves!

1 lb bratwurst
1 large onion, sliced thick
1 tablespoon minced garlic clove
1 tablespoon butter
20 ounces beer (we prefer Budlight)
1 teaspoon salt
1 teaspoon pepper

Steps:

  • In a skillet over medium heat Saute the garlic and butter for approx one minute.
  • Add in the onions, salt, pepper, and enough beer to cover the bottom of the pan.
  • Cook the onions over medium heat until tender and caremelized.
  • Remove the onions from the pan and place the bratwurst in the pan. Brown the bratwurst and cook.
  • Once the bratwurst are cooked add the onions and remaining beer to the pan. Cook over medium heat until the beer has reduced to a thicker sauce with the onions.
