CARAMELIZED BANANAS



Caramelized Bananas image

The faint flavor of smoke and caramelized brown sugar do exquisite things to a banana. A drizzling of rum or liqueur gives this simple dessert "gourmet" status. Tips for success: Choose firm, just-ripe bananas so they don't fall apart, cut the bananas as instructed for ease of handling, and use a clean grill rack or a fresh piece of heavy-duty aluminum foil to cover the grill.

2 tablespoons butter, melted
2 tablespoons brown sugar
4 firm, ripe bananas
1 to 2 tablespoons rum or liqueur (such as Frangelico, Kalúa, Cointreau, or kir; optional)

Steps:

  • 1. Prepare a medium fire in the grill.
  • 2. Combine the butter and brown sugar in a shallow dish. Peel the bananas, cut in half lengthwise, and then again crosswise. Add the bananas to the butter mixture and toss very gently to coat.
  • 3. Grill the bananas, turning once, until a crispy brown coating of caramelized sugar forms on the surface, about 5 minutes per side. Watch carefully; don't allow the sugar to char.
  • 4. Remove from the grill and, if desired, drizzle the rum or liqueur on top. Serve hot.

4 tablespoons butter
1/2 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
4 medium ripe bananas
Oil, for grill pan
1 pint vanilla ice cream

Steps:

  • Preheat a grill pan or grill grate over medium heat.
  • Melt butter in a small saucepan over medium heat. Add the brown sugar, salt, and pumpkin pie spice. Bring to a boil, stirring until the sugar has completely dissolved. Simmer until mixture thickens about 5 minutes. Remove from heat, stir in the vanilla and set aside.
  • Cut each banana lengthwise, leaving the skin on and brush with butter and brown sugar sauce. Oil the grill pan and arrange the bananas, cut side down, on the pan. Grill until caramelized, about 4 minutes. Turn the bananas and grill until the skins are blackened bananas are soft and warmed through, about 5 minutes more. Baste frequently with the sauce during the cooking process.
  • Remove from grill to a serving platter and serve with a scoop of vanilla ice-cream, drizzled with remaining sauce.

  • Preheat grill for medium heat.
  • Place banana, coffee-flavored liqueur, butter, brown sugar, and ground cinnamon on a large section of heavy aluminum foil. Bring up 2 sides of foil to touch and fold down twice to seal. Double fold ends of packet to securely seal.
  • Place packet on preheated grill and cook until heated through, about 5 minutes.

4 banana, peeled and halved lengthwise
1 tablespoon brown sugar
2 teaspoons lemon juice

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Arrange bananas onto the prepared baking sheet. Sprinkle brown sugar, lemon juice, honey, and orange juice over the bananas; cover with aluminum foil.

2 bananas (not too ripe)
2 tablespoons sugar
2 tablespoons ground cinnamon
2 tablespoons honey
Vanilla ice cream, for serving
Bourbon or other liqueur, for drizzling, optional

Steps:

  • Build a charcoal fire or preheat a gas grill.
  • Slice the bananas, in their skins, in half crosswise and then lengthwise so each banana yields 4 pieces. Set aside on a clean platter. In a small bowl, combine the sugar and cinnamon. Drizzle the honey on the cut sides of the bananas and sprinkle them with the cinnamon sugar. Let the bananas sit for 5 minutes.
  • Place the bananas, cut side down, on the center of grill. Grill for 2 minutes or until grill marks appear. Using a pair of tongs, turn them over and cook for 5 more minutes, or until the skin pulls away from the bananas. Remove the bananas from the grill and serve them immediately, on top of vanilla ice cream and drizzled with bourbon or liqueur, if desired.

Medium ripe bananas
Brown sugar
Large marshmallows
Peanut butter or chocolate spread
Graham cracker squares

Steps:

  • Heat a grill to medium (350 degrees F). Leave bananas in their skins and make 1 slit down the length of each banana. Pack the slits with brown sugar.
  • Put the banana(s) on the grill and grill until soft and charred, about 5 minutes. Remove them to a cutting board and set aside to cool slightly. Peel the skins from the bananas and cut into 1/2-inch thick slices. Meanwhile, put the marshmallows on skewers and toast over the grill until brown and melty, about 2 minutes. You can also brown the marshmallows using a hand-held torch.
  • To assemble, spread some peanut butter on graham crackers and top with bananas and marshmallows. Cover with another cracker and serve. Enjoy!

1 tbsp butter, melted
1 tbsp brown sugar (maple syrup or honey)
1/2 tsp cinnamon

Steps:

  • Preheat the grill to medium high heat. Stir together the melted butter, brown sugar, and cinnamon.
  • Slice the bananas in half, leaving the peel on the bananas. This will hold the bananas together and ensure they don't fall apart on the grill. Brush the exposed banana halves with the butter, sugar, and cinnamon mixture. Let rest for 10 minutes. This helps the sugar dissolve.
  • Start grilling the banana with the flesh side down. Grill for 2-3 minutes until grill marks form and banana slightly softened. Turn over to peel side and grill for about 1 minute. You know it's done when the banana begins to pull away from the peel.

1 cup white sugar
2 teaspoon Saigon cinnamon
1 teaspoon ground allspice
4 bananas
1/2 cup vanilla sugar
1/2 cup water
1/2 teaspoon Saigon cinnamon
1/4 teaspoon allspice
1 1/2 cups walnuts

Steps:

  • Preheat the grill to medium high.
  • In a medium size bowl, mix the sugar, cinnamon and allspice until thoroughly blended. Next, slice the bananas in half length wise. Do not remove the peel. Lay the bananas skin side down and the generously sprinkle the flesh side of the bananas with the spiced sugar. Repeat until all bananas are coated. Place the bananas on the grill, skin side down, and cook until the sugar caramelizes and the skin falls away from the banana.
  • Spray a sheet tray with foil and spray with non stick spray
  • Add vanilla sugar, water, cinnamon, and allspice to a large saucepan over medium high heat. Bring to a boil, then simmer until reduced by half, about 5 minutes. The mixture will start looking dark and thick.
  • Quickly stir in the walnuts to the simmering syrup. Cook in the syrup while stirring until it begins to bubble and thicken. Spread the candy in a single layer to the prepared sheet tray- breaking up large clusters with a wooden spoon. Let cool completely, about 5-10 minutes until the candied harden and the syrup dries. Break apart and enjoy.
