Steps:
- In a small bowl, mash avocado with lime juice and season with salt and pepper.
- Heat pan to medium heat. Spread butter on the outside of each slice of bread, then spread avocado on the non-buttered side of one slice. Top with cheese and close sandwich.
- Place sandwich in pan, then cover and cook until golden brown, 3 to 4 minutes . Flip and cook other side until cheese is melty and bread is golden brown, 2 minutes more.
- Slice in half and serve.

Stir in mozzarella. With a butter knife, spread butter on one side of each slice of bread. Place 4 slices, buttered side down, on work surface. Divide avocado mixture evenly on all slices. Top with remaining slices, buttered side up. Heat a large skillet over low heat. - Prepare the avocado slices by fanning each avocado half out on a cutting board and sprinkling them with salt and pepper. Set aside for later.
- Spread the butter out on each side of the sourdough bread.
- Heat a large skillet over medium heat and spray with nonstick cooking spray. Then, add the sourdough bread to the pan.
- Let the bread toast for 2-3 minutes or until golden brown.
- Flip the pieces of bread around so the toasted side is facing upward and place two half pieces of provolone cheese on top of two of the pieces of toasted bread.
