JUICY GRILLED CHICKEN THIGHS

Juicy Grilled Chicken Thighs image

The best and juiciest grilled chicken thighs you'll ever make, with a marinade of homemade dry rub and liquid smoke. The chicken thighs are so moist and delicious!

Provided by Rasa Malaysia

Categories     American Recipes

Time 20m

Number Of Ingredients 5

1 1/2 lbs (0.6 kg) bone in chicken thighs (5 small thighs)
2 1/2 tablespoons homemade dry rub
1/2 tablespoon liquid smoke
1 tablespoon olive oil, for grilling
1 tablespoon olive oil, for grilling

Steps:

  • Score the bottom part of the chicken thighs lengthwise with a few slits. This will make sure that the marinade ingredients get inside the chicken meat.
  • Marinate the chicken thighs with homemade dry rub and liquid smoke. Stir to combine well.
  • Grill the chicken thighs on direct heat at 300°F (150°C), about 2 minutes on each side, with the skin side down first. Turn the chicken thighs a couple of times to avoid burning. Baste the chicken with olive oil while grilling.
  • Move the chicken thighs to the side of the grill without direct heat and barbeque the chicken. Cover the gas grill and continue to barbeque the chicken thighs for about 6-8 minutes. The hot air in the grill will BBQ and cook the chicken and will retain the juice. The grilling time depends on the size of the thighs, but the internal temperature should be 165°F (75°C) when it's completely cooked through. Serve hot with your favorite hot sauce.

Grilled Chicken Thighs with Ginger-Scallion Noodles image

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 12

5 tablespoons oyster sauce
6 tablespoons vegetable oil, plus more for the grill
1/2 teaspoon five-spice powder
Kosher salt and freshly ground pepper
1 1/2 pounds skinless, boneless chicken thighs (4 to 6 pieces)
8 ounces thin Chinese stir-fry noodles or ramen noodles
2 carrots, thinly sliced on the diagonal (about 1 cup)
4 ounces snow peas, halved
2 bunches scallions, roughly chopped
1 2-inch piece fresh ginger, roughly chopped
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar

Steps:

  • Preheat a grill to medium high. Combine 2 tablespoons oyster sauce, 1 tablespoon vegetable oil, the five-spice powder, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Add the chicken and toss to coat.
  • Oil the grill grates. Grill the chicken until lightly charred and cooked through, 5 to 6 minutes per side. Transfer to a cutting board and let rest.
  • Meanwhile, bring a medium saucepan of salted water to a boil. Add the noodles and cook as the label directs, adding the carrots and snow peas during the last minute of cooking. Drain the noodles and vegetables and transfer to a large bowl. Wipe out the saucepan and reserve. Snip the noodles into shorter pieces with kitchen shears.
  • Finely chop the scallions and ginger in a food processor. Heat the remaining 5 tablespoons vegetable oil in the reserved saucepan over medium-high heat. Add the scallion-ginger mixture and cook, stirring, until softened, about 2 minutes. Remove from the heat and stir in the soy sauce and vinegar. Add to the noodle mixture, season with salt and pepper and toss. Divide among plates; drizzle with the remaining 3 tablespoons oyster sauce.
  • Slice the chicken and serve over the noodles.

BBQ GRILLED CHICKEN THIGHS

BBQ Grilled Chicken Thighs image

These are truly the best grilled chicken thighs on the internet. They are made with double the flavor thanks to a dry rub and bbq sauce and have perfectly crispy skin with super juicy meat.

Provided by Linley Richter

Categories     Chicken

Time 1h

Yield 4

Number Of Ingredients 8

1 lb. bone-in chicken thighs
2 teaspoons garlic powder
1/4 teaspoon chipotle powder
1/4 teaspoon chili powder
1/8 teaspoon paprika
1/8 teaspoon ground black pepper
1/4 teaspoon salt
1/4 - 1/3 cup bbq sauce (your favorite kind)

Steps:

  • Begin by taking out the chicken thighs and pat each one with a paper towel to remove excess moisture.
  • Next, add the garlic powder, chipotle powder, chili powder, paprika, black pepper, and salt into a small bowl and mix all the spices together.
  • Pour the spices over the chicken thighs and massage the thighs with the spices and be sure that each chicken thigh is covered with spices.
  • Let the chicken thighs sit for at least 30 minutes in the spices (longer is always better). This will help get the juices get flowing and flavor the meat.
  • While the chicken is sitting, preheat the grill to 400ºF and make sure there is indirect and direct grilling space on the grill.
  • When the chicken is ready, place the chicken on the grill skin side down over direct heat for 4-5 minutes to crisp up the chicken skin.
  • Flip the chicken and cook the chicken for another 4-5 minutes.
  • Lastly, flip the chicken one more time (skin up) and move it to indirect heat.
  • Add a tablespoon or so of BBQ sauce to each chicken thigh and spread out the sauce evenly over the thighs.
  • Close the grill and let the BBQ sauce caramelize for 2-3 more minutes and then remove the thighs from the grill.
  • Let the chicken rest for 5 minutes and then enjoy with more BBQ sauce.

LEMON AND HERB MARINATED GRILLED CHICKEN THIGHS

Lemon and Herb Marinated Grilled Chicken Thighs image

Provided by Anne Burrell

Categories     main-dish

Time 1h25m

Yield 4 servings

Number Of Ingredients 8

Juice and zest of 4 lemons, plus 2 whole lemons
5 sprigs fresh rosemary, finely chopped
5 sprigs fresh sage, finely chopped
3 cloves garlic, smashed and finely chopped
1/2 teaspoon crushed red pepper
Extra-virgin olive oil
8 chicken thighs, trimmed of excess fat
Kosher salt

Steps:

  • In a small bowl combine the lemon juice and zest, chopped herbs, garlic, crushed red pepper, and 1/2 cup of olive oil. Whisk to combine.
  • Place the chicken thighs in a wide flat dish so they are in a single layer. Add the herb mixture. Massage the thighs to coat with the herb mixture. Cover and refrigerate overnight. Note: If doing a quick marinade, leave the chicken out of the fridge for up to 1 hour.
  • Preheat grill. Brush and oil the grill to clean.
  • Remove the chicken from the marinade and brush off any excess herbs and oil. Season the chicken generously with salt and drizzle with a little bit of fresh olive oil.
  • Cut the 2 whole lemons in half and cut the tips off the ends; this will allow the lemons to stand up without rolling around. Place the chicken, skin side down, on the preheated grill. Place the lemons, flesh side down, on the preheated grill. Grill the chicken for 3 to 4 minutes and then rotate the chicken 90 degrees to create the lovely crosshatch pattern. Grill the chicken for another 3 to 4 minutes. Turn the chicken over and grill for another 4 to 5 minutes. Check for doneness (the chicken should be well cooked). Check the lemon halves to see if they are beautifully caramelized. Turn over to grill on the bottom for 2 to 3 minutes.
  • Serve the chicken with grilled lemon.

GRILLED CHICKEN THIGHS WITH SAUCE AU CHIEN

Grilled Chicken Thighs with Sauce Au Chien image

Once in martinique I ate at a restaurant that was so simple that almost all of the food-chicken, tuna, quail, pork, and veal kidneys-was grilled. Not only that; it was all served with the same thin, powerful sauce, made of lime, scallion, chile, and garlic, with loads of allspice. It was the allspice that made the sauce unusual, but there was more to it than that: the garlic and scallion looked uncooked but had lost their harshness and become easily digestible. Furthermore, the base of the sauce was not oil, but water. With the help of a friend who was born on Martinique, I was able to duplicate the sauce at home. It's called sauce au chien, which means "dog sauce" (a fact I chose not to research too aggressively). And it's great with almost anything grilled.

Yield makes 4 servings

Number Of Ingredients 8

1 tablespoon slivered or minced garlic
6 scallions, trimmed and minced
1 jalapeño, habanero, or scotch bonnet chile, seeded, stemmed, and minced, or chile paste (see Notes) or hot red pepper flakes to taste (start with about 1/2 teaspoon)
Salt and freshly ground black pepper
1/2 teaspoon ground allspice, or to taste (see Notes)
1 tablespoon peanut, grapeseed, corn, or other neutral oil
8 chicken thighs (about 2 pounds)
Juice of 1 lime

Steps:

  • Start a grill or preheat the broiler. Meanwhile, prepare the sauce: Combine the garlic, scallions, chile, 1/2 teaspoon each of salt and pepper, the allspice, and oil in a small bowl. Add 1/2 cup of boiling water; stir and let sit.
  • Sprinkle the chicken with salt and pepper and grill or broil it, turning 2 or 3 times, until it is cooked through, about 15 minutes. Taste the sauce and add more chile, salt, pepper, or allspice if needed. Stir in the lime juice (which must be added at the last moment to retain its freshness). Serve the chicken hot or at room temperature, passing the sauce at the table.
  • Serve the sauce with grilled fish or shellfish, especially shrimp; grilled ribs (or in fact grilled pork of any kind); or any grilled poultry.
  • Add some chopped capers to the finished sauce to vary the flavor.
  • Scotch bonnet pepper, with its fierce heat and distinctive flavor, makes this sauce more authentic. But a small amount of Asian chile paste is fine, as is any other source of heat.
  • If you have the patience to mince or grind allspice berries, the sauce will taste brighter; preground allspice will do the trick as long as it is reasonably fresh.
