Grilled Cheese-Stuffed Roasted Red Peppers image

3 large red bell peppers
1/8 teaspoon salt
6 slices (1/4 inch thick) fresh mozzarella cheese (about 6 oz)
2 teaspoons extra-virgin olive oil
1 tablespoon chopped fresh basil leaves

Steps:

  • Heat gas or charcoal grill. Place bell peppers on grill. Cover grill; cook over medium-high heat 10 to 13 minutes, turning every 3 to 4 minutes, until all sides are blistered and charred.
  • Place peppers in brown paper bag; fold down top. Let stand 5 minutes.
  • Carefully peel as much skin from peppers as possible. Cut in half lengthwise; remove stems, seeds and ribs. Sprinkle with salt.
  • Place 1 slice of cheese in each pepper half; drizzle with oil. Return pepper halves to grill; cook about 5 minutes longer or until cheese is melted. Sprinkle with basil. Cut each pepper half in half again.

1 pound of sweet mini peppers (about a dozen)
1/4 pound (115 g) smoked mozzarella cheese, cut into 1/4-inch thick and 2 inch long batons
12 basil leaves (as many basil leaves as peppers)
2 teaspoons extra virgin olive oil
2 teaspoons balsamic vinegar
Salt to taste

Steps:

  • Stuff mini peppers with smoked mozzarella and basil: Working one pepper at a time, place flat side down in a way that is most stable for the pepper. With a small sharp knife, cut a 2 1/2 inch slit down the middle on the top of the pepper. If there is a seed pod, scoop it out with a spoon. Stuff the pepper with a basil leaf wrapped mozzarella stick. When you have stuffed all the peppers, brush them on all sides with olive oil. Drizzle balsamic vinegar in the cut openings.
  • Cook on grill, in oven, or under broiler: Preheat grill, oven, or broiler for high direct heat (if oven, set to 400°F). If grilling, grill covered, cut side up on high direct heat until you have grill marks, then lower the heat to medium until the cheese is melted and the peppers have begun to soften, about 5 to 10 minutes. If broiling or baking, place on a roasting pan and cook until the cheese is melted and peppers have browned and softened, about 5 to 10 minutes. Sprinkle with salt to taste. Let rest for a few minutes before serving.

3 tablespoons olive oil
3 medium sweet red peppers
1 cup fresh mozzarella cheese, cut into small cubes
1 1/2 teaspoons dried basil
1 garlic clove, finely chopped
1 tablespoon olive oil
kosher salt
fresh ground black pepper

Steps:

  • Thinly slice bread, remove crusts and cut into enough 1/2" croutons to make 1 cup.
  • In a skillet, warm the olive oil, add the croutons, and saute until golden; drain on paper towles.
  • Cut tops off peppers about 1/2" from top, and reserve tops. Carefully remove seeds and membranes.
  • In a bowl combine croutons, mozzarella, basil, garlic, and oil. Mix well, adding salt and pepper to taste. Stuff peppers with mixture, replace tops and secure with toothpicks.
  • Grill peppers, top sides up, overf indirect medium heat until peppers are soft but still hold their shape, 12 to 15 minutes.
  • Remove tops and cut in half lengthwise.

1 bunch scallions, including the firm greens, thinly sliced

  • Preheat the oven to 375 degrees F. Lightly butter a baking dish just large enough to hold the peppers.
  • If the red peppers won't stand upright, slice them lengthwise in half, leaving the stem end intact. Steam them for 5 minutes and set aside.
  • Melt the butter in a large skillet. Add the scallions, corn, and tomatoes and cook for 3 minutes over medium heat. Turn off the heat and stir in the cheese, basil, and half the bread crumbs. Fresh basil leaves, for garnish
3 tablespoons red wine vinegar

Steps:

  • Heat your grill to high. Brush bell peppers with 2 tablespoons of the oil and season with 1/2 teaspoon of salt and 1/2 teaspoon of pepper; grill the peppers until charred on all sides. Remove from the grill, place in a bowl, cover with plastic wrap, and let sit for 10 minutes. Steps:

  • Spoon 6 tablespoons oil into each of 3 small bowls. Add chopped mint to first bowl. Add basil and half of garlic to second bowl, and add dried crushed red pepper and remaining garlic to third bowl. Season each oil with salt and pepper.

1 teaspoon flour (or cornstarch)

Steps:

  • Cook rice according to package directions (instant rice usually calls for 1 cup water boiled, rice added and allowed to sit for 5 minutes).

1 large tomato, peeled, seeded and chopped
1 cup shredded part-skim mozzarella cheese

Additional shredded part-skim mozzarella cheese

Steps:

4 medium green bell peppers, tops removed, seeded
1 ¼ cups water, divided
3 tablespoons taco seasoning, divided
2 (5 ounce) skinless, boneless chicken breast halves
½ cup brown rice, rinsed well
1 medium red bell pepper, cut into thick slices
1 tablespoon olive oil
¼ cup chopped onion
2 teaspoons minced garlic
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 cup shredded Mexican-blend cheese, divided
½ teaspoon garlic salt, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place green peppers in a baking dish with 1/8 cup water in the bottom.
  • Bake in the preheated oven until peppers are slightly browned around the edges, 20 to 25 minutes.
  • While the peppers are baking, whisk 1/4 cup water and 2 tablespoons taco seasoning together in a small bowl. Add chicken and toss to coat. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 15 minutes.
  • Combine remaining 1 cup water and rice in a pot over high heat; bring to a boil. Cover, reduce heat to low, and cook for 15 minutes. Remove from the heat. Stir in remaining taco seasoning and let sit, covered, until tender, about 15 minutes more. Remove the lid, drain any remaining liquid, and set aside.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove chicken from the refrigerator and place on the preheated grill with the pepper slices. Cook chicken until no longer pink in the center and the juices run clear, about 5 to 7 minutes per side. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C). Grill peppers until tender, about 2 to 3 minutes per side.
  • Remove chicken and peppers from the grill and allow to cool. Shred chicken and dice peppers.
  • Heat oil in a large skillet over medium heat. Add onions and garlic; saute until soft, 5 to 7 minutes. Add cooked rice, shredded chicken, diced peppers, diced tomatoes and green chiles, 1/2 of the cheese, and garlic salt; stir until well blended. Cook over medium heat, stirring occasionally, until hot, about 5 minutes.
  • Spoon rice mixture into the green peppers. Top with remaining cheese.
  • Return to the oven until cheese is melted, about 5 minutes.
