These grilled shrimp skewers are so quick and easy to make and wonderfully flavored with a lemon and herb marinade.

Steps:
- Place the olive oil, lemon juice, salt, pepper, oregano, paprika and garlic powder in a large bowl; whisk to combine.
- Add the shrimp to the bowl and toss gently to coat evenly with the marinade. Marinate for at least 15 minutes or up to 2 hours max.
- Skewer 4-6 shrimp on each soaked skewer and place on a plate while skewering the remaining shrimp.
- Heat a grill or grill pan over medium high heat and cook the shrimp for 2-3 minutes on each side until the color is pink and shrimp is opaque.
- Serve warm with fresh parsley and lemon slices, if desired.

- In a large resealable plastic bag, combine the first eight ingredients; add the shrimp. Seal bag and turn to coat; refrigerate for 30 minutes. Drain and discard marinade., On two metal or soaked wooden skewers, thread shrimp. Grill, covered, over medium heat for 4-5 minutes on each side or until shrimp turn pink, turning once.

GRILLED SHRIMP SKEWERS
Steps:
- Put the olive oil, garlic and chile flakes in a small skillet. Turn the heat to low and let the mixture heat for about 10 minutes; the oil should just barely simmer around the garlic in the last few minutes. Remove from the heat and cool slightly. Transfer to a blender, add the 1 tablespoon oregano and some salt and pepper, and blend until the garlic and oregano are finely chopped. Set aside half of the chile-garlic oil for serving.
- Heat the grill to high. Thread the shrimp onto skewers, about 4 or 5 shrimp per skewer, threading so that the skewers goes through the tail and thick end of each shrimp. Brush the shrimp with some of the chile-garlic oil and season with salt and pepper. Grill until lightly golden brown on both sides and opaque, 1 to 1 1/2 minutes per side. Transfer the skewers to a platter and immediately drizzle with some of the reserved chile-garlic oil (not the oil you used for brushing the raw shrimp). Garnish with oregano, and serve with more of the reserved oil.

- Soak 4-inch wooden skewers in cold water for 1 hour. Thread 1 shrimp onto each skewer so that the shrimp lie flat.

- Make the marinade: combine all the marinade ingredients in a bowl; mix well.
- Add the shrimp; stir to coat evenly; let stand for 10 minutes.
- Put stir-fry pan over high heat until hot.

- Combine brown sugar, lemon juice, molasses, basil, vegetable oil, mustard, honey, clove, ranch dressing, chili powder, and garlic in a large bowl. Toss in shrimp to coat, cover, and refrigerate for 2 hours. Meanwhile, soak wooden skewers in hot water to prevent burning on the grill.
- Preheat an outdoor grill for high heat and lightly oil grate.

- Preheat a grill to medium high. Lightly oil the grill grates. Combine the shallot and vinegar in a small bowl; let sit 5 minutes. Add the cilantro, cumin, oregano, red pepper flakes, 1/2 teaspoon salt and a few grinds of pepper and stir to dissolve the salt. Stir in 3 tablespoons olive oil.

- Soak 16 wooden skewers in water.
- Wash shrimp and pat dry on paper towels. Peel shells and discard. De-vein each shrimp if you have time (use a toothpick to pull out the long black "vein" that runs along the back of each shrimp - if the fact that the "vein" is actually a poop chute doesn't bother you, feel free to skip this step).
- Wash, de-seed and chop the peppers into 1" square sections.
- Mince the garlic with salt. Mix the garlic-salt with lemon juice, olive oil, cayenne pepper, and paprika in a large bowl. Add the shrimp and peppers and toss well to coat.
- Get the grill started if you're using a charcoal grill (gas grills don't need to pre-heat), or if you're doing this indoors, preheat the broiler.
- Thread the skewers with the shrimp and bell pepper. Place the skewers on a large baking sheet and pour the remaining marinade over the top.
- Grill or broil the kebabs 2-3 minutes on each side. Serve with coconut rice or plain rice.

GRILLED SHRIMP SKEWERS WITH SUGAR SNAP PEAS
Most recently I was able to purchase at a market some really fresh sugar snap peas and was thinking about what I wanted to make with these delicious peas and came up with this. I thought shrimp would go really well with the snap peas and it worked. It was funny as I was preparing this dish my youngest nephew was over and tasted these peas (which he told me he hated peas) and to his surprise he loved them! I explained just how different they were from canned peas. Well, he couldn't stop eating them and my 3 cups of sugar snap peas ended up almost completly disappearing. He was drizzling honey over them and eating them raw. It was too cute and I was so excited he was eating them I really did't say too much. Well, I hope I was able to make the "Sugar Snap Peas" stand out and hold their own to the shrimp. They were so sweet and crunchy I loved even having them on the skewer too. Hope you enjoy. Kim

- Gather your marinade ingredients
- Prepare your marinade and place in a bowl or in a ziplock baggie. Clean your shrimp and add to marinade. Refrigerate for 1 to 2 hours.
- Clean your fresh sugar snap peas. You can steam your peas for 5 minutes or so and just place your shrimp skewers on top of the peas or you can add them to the skewer as well. They cook nicely with the shrimp and still have a nice crunch to them even after grilling. If cooking add your oil, salt, pepper and toasted black sesame seeds after you steam them.
- Take your shrimp out of marinade and place on skewers alternating the sugar snap peas or just the shrimp themselves. Now, add your sprinkle of tumeric, salt & pepper to taste and toasted black sesame seeds. After placing them on the skewer grill accordingly to the size of shrimp you use. I had a medium shrimp so it was 3 to 4 minutes on each side.
- Once shrimp is done remove from grill and plate over the peas and then squeeze fresh lime juice over them right before serving.

- Prepare a hot charcoal grill. Lay peppers directly on the grill and let them blister, turning frequently until blackened all over, about 8 minutes. Set aside on a plate until cool enough to handle. (Alternatively, roast peppers on the stovetop, directly on the flames of a gas burner.)
- Cut peppers in half lengthwise. Cut off stems, scrape away skins and seeds, and discard. Do not rinse; a bit of char is OK. Chop the peppers into 2-inch chunks.
- With a food processor or blender, whirl together peppers, almonds, pimentón, cayenne and garlic to form a rough paste. Season with salt and pepper. Slowly add olive oil to achieve the consistency of a thick milkshake. Taste, adjust seasoning and transfer to a serving bowl.
- In a medium saucepan, boil potatoes in well-salted water until just done, about 10 minutes. Drain.
- Place onion pieces on the grill skin-side down. Salt lightly. Cover with lid and cook until onions are soft, about 15 minutes. Set aside and keep warm.
- Place boiled potatoes on grill and cook until slightly charred, 8 to 10 minutes. Set aside and keep warm.
- Meanwhile, thread shrimp onto skewers, 4 or 5 shrimp per skewer, without crowding. (If using bamboo skewers, soak them in water to prevent burning.) Brush lightly with olive oil and sprinkle with salt.
- Lay skewers on grill over hot coals. Cook for about 3 minutes, then flip and cook until shrimp turn pink and are a bit charred, 3 minutes more
- Arrange shrimp, potatoes and onions on a large platter. Serve with the red pepper sauce and lemon wedges.
