To keep shrimp tender, don't let them sit in the marinade for too long before grilling. The acid in the citrus will start to firm up and cook the flesh.

6 garlic cloves, smashed
2 habanero chiles, seeds removed, chopped
1 (3") piece ginger, peeled, thinly sliced
1/3 cup fresh lime juice
1/3 cup fresh orange juice
1 Tbsp. sugar
2 tsp. unseasoned rice vinegar
1/2 tsp. ground turmeric
1/3 cup vegetable oil, plus more for grill
Kosher salt
1 1/2 lb. large shrimp, peeled, deveined
Cooked short-grain white rice (for serving; optional)
Flaky sea salt

Steps:

  • Prepare a grill for medium-high heat. Pulse garlic, chiles, ginger, lime juice, orange juice, sugar, vinegar, and turmeric in a food processor until combined and almost smooth. With the motor running, gradually stream in 1/3 cup oil and process until emulsified.
  • Pour half of the sauce into a small bowl; season with kosher salt. Set aside for serving. Transfer remaining sauce to a medium bowl and add shrimp. Season with kosher salt and toss to coat.
  • Clean and oil grate, then immediately arrange shrimp on grill. Grill until bright pink and lightly charred, about 1 minute per side. Divide shrimp among bowls. Spoon reserved sauce over; sprinkle with sea salt. Serve with rice if desired.

2 lb shrimp, deveined & tails removed
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon dried oregano
1 teaspoon cumin
½ teaspoon red pepper flakes
½ teaspoon salt
24 skewers, bamboo or metal
4 tablespoons olive oil
24 corn tortillas
1 cup sour cream
3 tablespoons fresh cilantro, minced
1 teaspoon lime zest
¼ teaspoon salt
2 tablespoons lime juice
1 ½ cups green cabbage
1 ½ cups red cabbage
1 tablespoon jalapeño, minced
lime wedge
fresh cilantro

Steps:

  • In a large bowl, season shrimp with paprika, garlic powder, oregano, cumin, red pepper flakes, and salt. Toss gently to combine.
  • Using 2 bamboo or metal skewers, poke through the top and bottom of the shrimp and push down to the bottom of the skewer.
  • Add 3 more shrimp to the same skewer and repeat until all of the shrimp are used.
  • Right before you put the shrimp on the grill, brush each skewer with a generous amount of olive oil, to prevent sticking.
  • Grill over high heat for 3 minutes, brush the top side with more olive oil, flip, and let cook for an additional 3 minutes.
  • Remove from skewers & set aside for taco assembly.
  • In a bowl, combine all creamy cilantro sauce ingredients. Stir well to combine.
  • In a large bowl, combine green cabbage, red cabbage, and minced jalapeño. Pour half of the sour cream mixture over the cabbage, saving the other half for extra sauce to put on the tacos.
  • Assemble the tacos on corn tortillas. Add the cabbage mixture, followed by the shrimp. Top with the creamy cilantro sauce, cilantro, and a squeeze of lime juice.

  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high for gas); see Grilling Procedure.
  • Meanwhile, brush shrimp with vegetable oil and sprinkle evenly with salt.

¼ cup herb-infused extra-virgin olive oil
½ lemon, juiced
salt and ground black pepper to taste
1 pound fresh shrimp, peeled and deveined
1 (8 ounce) package angel hair pasta
2 teaspoons herb-infused extra-virgin olive oil
½ red onion, thinly sliced
2 Roma tomatoes, diced
3 cloves garlic, minced
¼ teaspoon crushed red pepper flakes
½ cup dry white wine
¼ cup heavy cream
1 tablespoon chopped fresh parsley

Steps:

  • Combine 1/4 cup olive oil, lemon juice, salt, and pepper in a large resealable plastic bag. Gently squeeze ingredients in the bag to combine. Add shrimp. Remove as much air as possible, seal, and move shrimp around in the bag to coat in the marinade. Place in a tray or plate so shrimp are in a single layer. Marinate in the refrigerator for 30 to 45 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain.
  • Preheat an outdoor grill for medium-high heat. Place a heat-proof skillet on one side of the grill to heat with the grill. Thread shrimp onto metal skewers.
  • Place shrimp skewers onto the hot grate and grill until the shrimp turn white and opaque, 2 to 3 minutes per side. Remove from the grill.
  • Meanwhile, pour 2 teaspoons olive oil into the hot skillet and cook onion, stirring frequently, until softened, 2 to 3 minutes. Add tomatoes, garlic, and red pepper flakes; cook and stir for 1 to 2 minutes. Pour in wine and allow to reduce, about 4 minutes. Stir in cream. Cook and stir for 1 minute. To say this marinade is fantastic is an under statement --- the amounts listed enough for up to 4 pounds of shrimp and this also works well with lobster tails too --- if you are threading the shrimp on wooden skewers make certain to soak them for a minimum of 30 minutes in cold water before using, do not marinade the shrimp for more than 1 hour or the vinegar will start "cook" the shrimp, the hot sauce is only optional add in for extra heat.

4 tablespoons red wine vinegar

2 ripe Roma tomatoes
1/2 large yellow onion, cut into three or four 1/2-inch rounds
1 lemon, halved

  • Prepare a grill or large grill pan for high heat.

Transfer the shrimp to a large platter and serve with the reserved grilled tomato cocktail sauce. Cut the remaining grilled lemon into wedges and serve on the side.

1/2 cup extra virgin olive oil
2 large garlic cloves, thinly sliced
4 fresh rosemary sprigs
3 slices firm white bread
2 cups pine nuts
1/2 cup fresh lemon juice
1/3 cup water
2 garlic cloves
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • In a large bowl, toss shrimp with olive oil and garlic slices.
  • Crush rosemary slightly with fingers and tuck down into shrimp.
