These onions are so delicious, we prepare them all year long-on the grill in summer, or in an oven preheated to 350° for the same amount of time in winter. A small salad, a slice of bread, these grilled onions, and you've got a great light meal. -Mary Bilke, Eagle River, Wisconsin

4 large sweet onions
4 teaspoons beef bouillon granules
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
4 tablespoons butter
4 teaspoons white wine or beef broth, optional

Steps:

  • Prepare grill for indirect heat. Peel onions, leaving root ends intact. Cut a thin slice from the top of each, then carefully cut a 1-in. hole in the center. Cut each onion into quarters, cutting to within 1/2 in. of bottom. Place each onion on a double thickness of heavy-duty foil (about 12 in. square)., Sprinkle bouillon, thyme, salt and pepper into centers; top with butter. If desired, drizzle with wine. Fold foil around onions, sealing tightly., Grill onions, covered, over indirect medium heat until tender, 35-40 minutes. Open foil carefully to allow steam to escape.

I made these last night to go with our grilled steak and just loved them. So easy and tasty and the best part, no pots or pans to clean. I found this recipe in TOH magazine.

4 large sweet onions, quartered
4 garlic cloves, crushed
1/4 cup butter
1 teaspoon seasoning salt

Steps:

  • Place four onion wedges and a garlic clove on a double thickness of heavy-duty foil (about 12 inches square). Dot with 1 tablespoons butter and sprinkle with 1/4 teaspoons of seasoned salt. Repeat for other 3 onions.
  • Fold foil around onion mixture and seal tightly. Grill, covered, over medium heat for 30-35 minutes or until onions are tender. Open foil carefully to allow steam to escape.

3 -4 garlic cloves
1 teaspoon Dijon mustard
1 teaspoon honey
4 fresh basil leaves, chopped
2 tablespoons extra virgin olive oil

Steps:

  • In a small bowl wisk together dijon mustard, honey,basil leaves and extra virgin olive oil. Slice vadalia onions and garlic cloves and place in aluminum foil. Pour dijon mustard mixture on top of sliced onions & garlic. Wrap up and seal aluminum foil place on grill and cook aprox 5-10 minutes on each side. Place on top of burgers or steak and enjoy.

4 large onions
½ cup butter
4 cubes chicken bouillon

Steps:

  • Preheat grill for medium heat.
  • Peel outer layer off onions. Slice a small section off of one end of each onion, and make a small hole in the center. Fill the center of each onion with a bouillon cube and 2 tablespoons butter or margarine. Replace the top of the onion, and wrap in aluminum foil.
  • Place onions on grill over indirect heat, and close the lid. Cook for 1 hour, or until tender. Remove the tops, and cut into bite size chunks. Place in a serving dish with all the juices from the foil.
