GRILLED ZESTY LEMON SPARERIBS
Mmm Mmm--grilled lip-smackin' lemony ribs made with meat, frozen lemonade and a favorite barbecue sauce!

Steps:
- Place pork in 4-quart Dutch oven. Add enough water to cover pork. Heat to boiling; reduce heat to low. Cover and simmer about 1 hour 30 minutes or until tender.
- Meanwhile, in 2-quart saucepan, heat ketchup, chili sauce, brown sugar, vinegar, lemon juice and liquid smoke to boiling; reduce heat. Simmer uncovered 10 minutes, stirring occasionally. Remove from heat; stir in lemonade concentrate. Set aside.
- Remove pork to rectangular baking dish, 13x9x2 inches, or resealable food-storage plastic bag. Pour marinade over pork; turn pork to coat. Cover dish or seal bag and refrigerate, turning pork occasionally, at least 4 hours but no longer than 24 hours.
- Heat coals or gas grill for direct heat. Remove pork from marinade; reserve marinade. Grill pork, meaty sides up, uncovered and 4 inches from medium heat about 30 minutes, turning and brushing frequently with marinade, until glazed and heated through. Discard any remaining marinade.

GRILLED MANGO-MARINATED SHORT RIBS

- For the ribs: Combine the Seagram's Escapes® Mango Italian Ice, pineapple juice, lemon juice, oyster sauce, soy sauce, brown sugar, sriracha and garlic in a medium bowl and whisk until smooth. Add the short ribs and completely submerge them in the marinade. Refrigerate for at least 1 hour or better yet, overnight.
- Preheat the oven to 450 degrees F. Dampen a paper towel with oil and rub it all over a grill pan to season it, then place the pan over high heat. Line a baking sheet with foil and coat lightly with oil.
- Remove the ribs from the marinade and sprinkle lightly with salt and pepper. Grill the ribs until nice grill marks form, about 1 minute per side. Place on the prepared baking sheet, transfer to the oven and roast until tender and cooked through, about 8 minutes.
- For the pickled cabbage slaw: Add the vinegar, sriracha, fish sauce, red pepper flakes and granulated sugar to a medium bowl and whisk to combine. Add the cabbage, cucumbers, mango and red onion and toss until coated.
- Serve the ribs with the slaw and rice and garnish with the scallions.

- In a large resealable plastic bag, combine the first five ingredients. Set aside 1/2 cup for basting and refrigerate. Add pork to remaining marinade and turn to coat. - About one hour before smoking, make the dry rub. Combine sugar, salt, white pepper, onion powder, cayenne pepper, lemon peel and apple pie spice in small bowl; mix well. Coat both sides of ribs with a little vegetable oil and sprinkle with lemon pepper rub. Set aside at room temperature for 1 hour.
- Heat charcoal or gas grill for indirect cooking at 230 to 250 degrees F. Add drained wood chips, if using.
- Place the ribs, meaty side down, over a drip pan and cook for 2 hours. If desired, spray both sides of ribs with apple juice. Add about 12 coals to a charcoal grill every 45 minutes or so to maintain the heat.
- Remove ribs from grill. Double-wrap each rack in heavy-duty aluminum foil. Return wrapped ribs to the grill and cook for 1 1/2 to 2 hours more over indirect heat, until very tender. Add more coals as needed to maintain temperature for a charcoal grill.

- Place the ribs in two shallow roasting pans; add water. Cover and bake at 325° for 2 hours., For sauce, in a blender, combine the lemon juice, corn syrup, garlic and seasonings; cover and process until blended. While processing, gradually add oil in a steady stream., Drain ribs. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. - Heat a cooker to medium to medium-high.
- Combine all the ingredients for the rub in a small bowl and blend. Rub all over the ribs.
- Oil the grate and place the ribs on it bone side down over direct heat. Cover and cook for 2 1/2 to 3 1/2 hours, or until pull-apart tender, turning and spraying with apple juice every 10 to 15 minutes.
- Transfer the ribs to a cutting board and let them rest, covered loosely with aluminum foil, for 10 to 15 minutes. Cut the ribs into individual pieces and serve with barbecue sauce.

- In a small skillet, toast the coriander seeds over moderately high heat, shaking the pan, until fragrant, 1 to 2 minutes. Transfer to a spice grinder and let cool, then grind to a powder; transfer to a small bowl. Add the garlic salt, oregano, smoked paprika, black pepper and kosher salt and mix well. Rub both racks of spareribs all over with the lemon juice, then rub them all over with the spice mix. Place the pork spareribs on a rack set over a large rimmed baking sheet and refrigerate overnight and up to 1 day.
- Preheat the oven to 350°. Roast the ribs for 30 minutes, then turn them over and roast for 30 minutes longer.
- In a small bowl, whisk the honey with the vinegar, garlic and onion. Transfer each rack of ribs to a large sheet of heavy-duty foil and brush with the honey glaze. - Light a grill. Grill the halved lemons cut side down over medium-high heat until charred, 2 to 3 minutes. Unwrap the ribs and grill until nicely charred and crisp in spots, about 3 minutes per side (alternatively, broil the ribs 6 inches from the heat). Transfer the ribs to a work surface and cut in between the bones. Arrange the ribs on a serving platter, drizzle with the olive oil and sprinkle with the oregano and sea salt. Serve with the grilled lemons.
