FRIED ZUCCHINI RINGS
My neighbor gave me a very large zucchini. So I made this, I think the sauce complements the zucchini very well. I hope people like this.

Steps:
- Zucchini:.
- Slice the zucchini about a 1/4 inch thick, using a mandolin, or a knife.
- In a plate place the flour, in another put the breadcrumbs and in a bowl whisk the eggs and the milk together.
- Then dip a slice of zucchini in the flour, then in the egg mixture, then in the breadcrumbs.
- While you are breading the zucchini, heat enough oil to coat the skillet.
- Fry the zucchini on medium low until a deep brown on each side. Place on a plate and keep warm.
- Sauce:.
- Combine the shortening and the flour on medium heat till shortening is melted.
- Simmer 1 minute.
- Then in the food processor or blender add the zucchini till pureed.
- Then add the broth, and pulse.
- Pour the mixture through a cheesecloth, then slowly whisk the broth mixture into the shortening/flour mixture.
- Heat till thickened.
- Serve over the zucchini.

- Preheat the oven to 425˚F (220˚C). Grease a baking sheet with nonstick spray or line with parchment paper.
- Cut each zucchini crosswise into ½-inch (1 cm) slices. Use a 1-inch (2 cm) round cookie cutter to punch out the center of each zucchini slice.
- In a large bowl, combine the bread crumbs, Parmesan, garlic powder, paprika, oregano, basil, salt, and pepper. Add the eggs to a separate bowl and whisk. Add the flour to a third bowl.
- Dredge the zucchini rings in the flour, then the eggs, then finally in the bread crumb mixture, making sure to coat all sides.
- Arrange the zucchini rings on the baking sheet.
- Bake for 10-15 minutes, flipping halfway through, until golden brown on both sides.
- Serve with your favorite dipping sauce.

CHEESY-GARLIC GRILLED ZUCCHINI

- Cut the Zucchini in half lengthwise (you can also use yellow summer squash).
- Spread butter or margarine on one half of the squash.
- Sprinkle the garlic, cheese's and spices on the other half.
- (Use as much or as little as you like) Place the buttered half on top of the half with the cheese and spices.
- Slice in half or if squash is real big, cut in thirds or fourths.
- Wrap each portion in aluminum foil and place on grill.
- Grill for about 10 to 15 minutes turning often.

GRILLED ZUCCHINI RIBBONS
Zucchini is the summer vegetable grillers love to hate. We love it for its summery flavor and sheer abundance. We love it less for its unfortunate tendency to become soggy when grilled. Russ Faulk, chief designer at Kalamazoo Outdoor Gourmet and author of "Food + Fire," has come up with an ingenious method of keeping zucchini crisp during grilling: He slices it thin on a mandolin, then accordions the strips on skewers to grill over a screaming hot fire. The edges char and crisp, giving you the vegetable equivalent of meaty ribs' burnt ends. I've taken the burnt end idea one step further by seasoning the zucchini with a classic barbecue rub - use your favorite - and basting it with spiced butter.

- Set up your grill for direct grilling and heat to high (450 to 600 degrees). Brush or scrape the grill grate clean and oil it with a tightly folded paper towel dipped in vegetable oil and drawn across the bars of the grate with tongs. If using bamboo skewers, soak in cold water.
- Meanwhile, melt the butter in a small saucepan over medium-low heat. Add the garlic, 1 tablespoon barbecue rub and lemon zest, and cook, stirring frequently, until the garlic is softened and fragrant, about 3 minutes. Remove the pan from the heat and let cool.
- Cut off and discard the ends of the zucchini. Using a mandolin outfitted with a finger guard, thinly slice one zucchini lengthwise into slices scant 1/8-inch thick. You can also use a chef's knife to cut slices lengthwise just shy of 1/8-inch thick. (Try folding your first or second strip. If it breaks at the fold, it means it's too thick.) Lay the slices flat on a sheet pan. Lightly brush the tops with enough barbecue butter to lightly coat and lightly sprinkle with some of the remaining 2 tablespoons barbecue rub.
- Fold a zucchini slice into an accordion shape (like multiple Ws or ribbon candy) and thread it onto a metal or soaked bamboo skewer. Continue threading until all the slices from the zucchini are on the skewer. Slice, brush, season and skewer the remaining zucchini the same way. You should wind up with 6 skewers.
- Arrange the zucchini kebabs, skin sides down, on the grate. Grill (covered if using a gas grill), basting with any remaining barbecue butter and turning to evenly brown, until singed at some of the edges, 1 to 2 minutes per side (4 to 8 minutes in all). Season with salt if needed and serve.
GRILLED ZUCCHINI RINGS
This is a great way to use up those really huge zucchinis that people give you from their garden! Just peel them and slice into thick rings. But don't forget to cut out the huge seeds from the center of each slice! The marinade in this recipe is great because after the zucchini is grilled you can taste a sweetness mixed with a hint of garlic. Its a great side dish or served with other grilled veggies in a sandwich.

- Mix last 4 ingredients in a medium sized microwaveable dish.Microwave on high for about 30-40 seconds or til boiling.
- Remove from microwave and dip both sides of each ring into garlic oil mixture.
- Place in a deep dish and pour any remaining garlic oil over top.
- Cover and refridgerate for 4 hours or over night.Grill on medium heat til well browned and tender.
- Serve warm.
