Steps:
- Heat a grill to medium-high and spray with nonstick cooking spray. Cut the vegetables into similar sized chunks and thread onto 4 metal skewers. Drizzle with olive oil and season with salt and pepper.
- Grill the skewers for 8 minutes per side or until the vegetables are tender and lightly charred. Remove from the grill, season to taste, and serve with desired sauce or dressing.
GRILLADES AND GRITS

Steps:
- In a mixing bowl, combine the beef and veal together. Season the meat with Essence. Add the flour and toss the meat completely. Turn the meat out onto a floured surface and with meat mallet, lightly pound the meat. Turn the meat over and lightly pound the meat again. In a large cast-iron pot, heat the oil. When the oil is hot, add the meat. Brown the meat evenly on both sides for 5 to 6 minutes. Add the onions, bell peppers, and celery. Season with salt and cayenne. Continue stirring, scraping the bottom and sides of the pot to loosen any browned particles. Cook for 5 to 6 minutes, or until the vegetables are wilted. Add the tomatoes and garlic. Cook, stirring often and scraping the bottom and sides of the pot for 3 to 4 minutes. Add the bay leaves, thyme, oregano, basil, broth and wine. Season with salt, cayenne, and black pepper. Bring the liquid to a simmer, partially covered, stirring occasionally, and cook for about 1 1/2 hours or until the meat is very tender. Remove the bay leaves and serve with baked cheese grits.

GRILLED ASPARAGUS
Steps:
- Clean asparagus and chop off ends. Combine olive oil and garlic for a marinade. Add asparagus and let marinate while you preheat the grill.
- Grill asparagus for a couple minutes on each side; watch carefully as they will cook quickly. Serve.
GRILLED PALOMA
The Paloma is Mexico's most popular cocktail. This version is made with grilled grapefruit and grilled lime to give the drink a slightly smoky edge.

- Light a grill and arrange it for direct heat or preheat a grill pan. Grill the grapefruit and the limes over high heat until well browned on the bottoms, 4 to 5 minutes. Let cool slightly.
- Arrange some salt on a small plate. Moisten the rims of 2 high ball glasses and coat with salt.
- For each cocktail: Fill a shaker with ice and add 2 ounces of squeezed grapefruit juice, 1 ounce of squeezed lime juice, 2 ounces tequila and ½ ounce agave nectar. Close the shaker and shake well. Fill one of the prepared glasses with ice and strain the drink into the glasses. Top with 1 ounce of club soda and serve. Fill the shaker with clean ice to make the second cocktail.
GARLIC PARMESAN GRILLED VEGGIES RECIPE BY TASTY
This simple side dish gets a huge flavor boost from one simple ingredient: a garlic and Parmesan cheese seasoning packet. We're using potatoes and string beans but feel free to mix it up with whatever veggies you love!

- Preheat the grill to medium heat, about 375°F (190°C).
- Cut the potatoes into thin wedges. Add to a large bowl.
- Add the green beans to a separate large bowl.
- Season the potatoes and green beans with salt, pepper, the garlic Parmesan seasoning, and olive oil. Toss well to coat.
- Add the potato wedges to the grill and cook for 5 to 7 minutes per side, until tender and grill marks appear
- Add the green beans and cook for about 5 minutes, turning occasionally, until grill marks appear.
- Transfer the potatoes and green beans from the grill to a serving bowl and squeeze lemon juice on top. Garnish with more lemon wedges.

GRILLED LEMON PARMESAN ASPARAGUS
A quick way to dazzle up your asparagus for grilling. It offers great flavoring with inexpensive items usually found in the home.

- Preheat an outdoor grill on medium heat, and lightly oil the grate.
- Place asparagus in a large shallow bowl. Drizzle with olive oil and lemon juice, going from bottom to top of stalks. Season with salt and ground black pepper.
- Sprinkle grated Parmesan cheese over asparagus. Lightly toss to coat each spear.
- Transfer coated asparagus to the preheated grill with tongs.
- Grill to desired tenderness, 3 to 7 minutes. Before serving, sprinkle asparagus with additional Parmesan cheese.

GRILLED STEAK WITH ARUGULA AND SHAVED PARMESAN

- Blend garlic, 2 teaspoons oil and black pepper in small food processor (or mash on plate with back of fork) to form paste. Pat steaks dry with paper towels. Rub garlic paste over both sides of steaks. Let stand at room temperature 30 minutes or refrigerate up to 8 hours. Prepare barbecue (medium-high heat). Grill steaks to desired doneness, about 9 minutes per side for medium-rare. Transfer steaks to cutting board. Let stand 5 minutes. Cut steaks on slight angle into 1/4-inch-thick slices.
- Arrange arugula on platter. Top with steak slices. Pour any accumulated juices over steaks; sprinkle with salt. Drizzle 1 tablespoon oil over steaks. Using vegetable peeler, shave Parmesan into strips over steaks. Serve with lemon wedges.

- Place asparagus on hot grill.
- Liberally season asparagus with salt and pepper (some washing occurs when dousing with lemon juice).
- Grill asparagus until lightly charred and tender-crisp.
- Remove from grill and squeeze lemon juice onto asparagus.
