Grilled Potatoes in Foil (potato packets) image

Foil packets are a quick and easy way to prepare potatoes for the grill, oven or even the campfire!

3 lbs potatoes (cut ¼" slices)
1 small onion (thinly)
3 tablespoons butter
salt & pepper (to taste)
mushrooms
real bacon bits
cheese

Steps:

  • Place foil packets on the counter and spray with cooking spray.
  • Wash and slice potatoes (and onions/mushrooms if using).
  • Place potato slices (approx 1 potato per packet) and any optional toppings on each foil piece. Top with a generous pat of butter and salt/pepper to taste. Fold each packet closed.
  • Grill over medium heat for 30 minutes or until soft.

8 slices bacon, cut in half
2 potatoes, cubed
2 tablespoons butter
2 teaspoons seasoned salt

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Place 4 large sheets aluminum foil on a flat work surface. Place 4 pieces bacon in the middle of each sheet of aluminum foil; pile 1/4 of the potatoes on top. Drizzle 1 1/2 teaspoon butter and 1/2 teaspoon seasoned salt over potatoes. Wrap aluminum foil around potatoes to create a pouch.
  • Place aluminum foil pouches on the preheated grill; cook until potatoes are tender and bacon is crispy, 10 to 15 minutes. Open pouches carefully.

aluminum foil
1 ½ tablespoons butter
6 medium unpeeled potatoes, washed and cut into thick slices
1 onion, sliced
1 green bell pepper, cut into long strips
2 teaspoons garlic powder
salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for high heat; close cover. Lay out three 18-inch long pieces of aluminum foil on a work surface, dull side facing up.
  • Smear 1/2 tablespoon butter in the middle of the first piece of foil. Add 1/3 of the potato slices, onion, and bell pepper. Sprinkle with 1/3 of the garlic powder; season with salt and pepper. Fold up the edges of the foil over the vegetables to create an almost leak-proof packet, making sure to seal the edges. Repeat with last 2 pieces of foil and the remaining ingredients to make 2 more packets.
  • Reduce the heat of the grill to medium. Place foil packets on the grate; cook until potatoes are tender, 20 to 30 minutes.

Steps:

  • Make one per person, leave out onion for kiddies who are picky eaters.
  • Russet potatoes work best.
  • get a piece of foil about 12 inches square.
  • Cut potato into 3 equal parts.
  • place a slice of onion and a slice of butter between the slices of potato.
  • roll in foil and seal the ends.
  • place on grill or charcoal for about 45 minutes or until soft, turning once.
  • serve with butter and sour cream.

5 medium potatoes
1/4 cup chopped green onion
2 tablespoons grated parmesan cheese
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
3 slices bacon, crisp-cooked, drained and crumbled
2 tablespoons snipped fresh parsley or 1 teaspoon dried parsley
2 tablespoons snipped fresh dill or 1 teaspoon dried dill
2 tablespoons snipped fresh chives or 2 tablespoons dried chives

Steps:

  • Grease a 24 x 18 inch piece of heavy duty foil with 1 tablespoon of the butter.
  • Scrub and thinly slice unpeeled potatoes onto the center of the foil.
  • Sprinkle with the onions, cheese, salt, paprika and pepper.
  • Dot with remaining butter.
  • Enclose the potatoes in the foil and seal with a double fold enclosing the potatoes completely leaving head space for the steam to build.
  • Grill potato packet for 30 to 40 minutes, turning every 10 minutes or until potatoes are tender.
  • Before serving sprinkle potatoes with bacon, parsley, dill and chives.
