GROUPER BAKED IN PARCHMENT PAPER

4oz fillet of Grouper fish
1/2 tsp. olive oil
1 cup frozen green beans (vegetables)
1 tbsp capers
1/2 tomato (sliced)
1/8 onion (sliced)
1/4 lemon (sliced)
1 tbsp. white wine
1 tbsp. parsley (chopped)
salt & ground pepper

Steps:

  • Preheat the oven 400F.
  • Drizzle olive oil on top of perchment paper.
  • In the middle of the parchment put the following ingredients one by one on top of each other: green beans, fish fillet, salt and ground pepper, capers, thin slices of lemon, deced onion, diced tomato and parsley. Puor the white wine on top of it.
  • Fold parchment on the edges like an envelope. Place on baking sheet. Bake at 400 degrees for about 20-25 minutes.
  • Cut top of paper open and serve in paper.

1 large tomato, chopped
1 T chopped fresh basil
1 T chopped fresh chives
2 T lemon juice, freshly squeezed
1 T extra virgin olive oil
salt and pepper to taste

Steps:

  • Prepare parchment paper, brushing lightly with olive oil Place fish on paper, season with salt and pepper Divide herbs and tomatoes among the four pieces of fish Combiine lemon juice and olive oil and divide among 4 pieces of fish. I place lemon slice on top of each Seal and place on hot baking pan in preheated 450 degree oven. Bake until paper is lightly golden Serve immediately

½ cup butter, melted
2 tablespoons lemon juice
¼ teaspoon garlic salt
½ teaspoon dried parsley
⅛ teaspoon paprika
¼ teaspoon ground white pepper
2 pounds grouper fillets
2 tablespoons mayonnaise
⅛ teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Combine melted butter and lemon juice in a small bowl. Brush 2 tablespoons of this mixture on a piece of foil placed on the broiler pan.
  • Mix together garlic salt, parsley, paprika and white pepper. Sprinkle spice mixture on both sides of fillets.
  • Bake fillets until meat flakes, about 10 minutes. Brush fillets again with lemon butter and spread with mayonnaise. Sprinkle with paprika before serving.
