Steps:
- In saucepan gradually mix broth into flour, powder and pepper until smooth.
- Over med.
- heat, cook until mixture boils and thickens, stirring constantly.
- Remove from heat.
- Stir in yogurt.
- Toss w/pasta and 4 tbsp cheese.
- Sprinkle with chopped fresh parsley (optional) and remaining cheese.
GUILT-FREE ALFREDO SAUCE
For a reduced fat sauce this is pretty darn good! Add in some cooked broccoli or peas if desired, serve this over cooked pasta, fettuccine work well with this! .

Steps:
- In a small skillet heat oil over medium heat; add in onion and saute for about 10 minutes or until lightly browned; add in the garlic and chili flakes the last 2 minutes of cooking (the onions must be lightly browned!).
- In a heavy-bottomed saucepan whisk/stir together milk, chicken broth, flour and black pepper over low heat until smooth, thickened and heated though.
- Add the the onion/garlic mixture to the prepared sauce; mix until heated through.
- Add/mix in Parmesan cheese and season with salt if desired.
- Serve over cooked pasta.

- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package directions, 9 to 11 minutes; drain.
- While the pasta is cooking, melt the butter in a large nonstick saute pan over medium heat. Add the garlic and cook until it is fragrant, about 2 minutes.
- Meanwhile, combine the cornstarch and nutmeg in a small bowl. Whisk in the chicken broth until smooth. Pour the mixture into the saute pan, raise the heat, and bring the sauce to a simmer, whisking occasionally. Whisk in ½ cup of the cheese until it has melted. Remove the saute pan from the heat and whisk in the yogurt until the sauce is smooth.
- In a large bowl, toss the cooked fettuccine with the Alfredo sauce. Season with salt and pepper to taste, if desired. Top the pasta with the remaining ¼ cup cheese, and serve.
