MOROCCAN MINT TEA
You can barely take a step in the markets of Marrakech without tripping over fresh mint, or at least without being offered a glass of hot, sweet mint tea. Be sure to lift the teapot high above the cup while pouring; Moroccans appreciate the way this aerates the tea (and they always pour with great panache).

Steps:
- Put tea in teapot and pour in 1 cup boiling water, then swirl gently to warm pot and rinse tea. Strain out and discard water, reserving tea leaves in pot.
- Add remaining 4 cups boiling water to tea and let steep 2 minutes. Stir in sugar (to taste) and mint sprigs and steep 3 to 4 minutes more. Serve in small heatproof glasses.
GUNPOWDER-MINT TEA
The delicate taste of of green tea is given a light, minty aftertaste in this deliciousdrink, which is a traditional favorite in Morocco.

- Place the tea, mint extract or mint leaves, and sugar, if desired, in a teapot. heat the water to a boil and pour the water into the teapot. Let the tea brew for 3 to 5 minutes, depending on your taste. Strain or pour the tea into a cup. Garnish with a fresh mint sprig.
- NOTE: You can also mix fresh or dried mint leaves with the Gunpowder tea before brewing--1/2 teaspoon of each works best. Then omit the mint extract from the recipe.
CHOCOLATE MINT TEA
I drink this tasty yumminess at work in the winter whenever I need a mental and physical pick-me-up. The only difference is that I (have to) use hot water and coffee creamer instead of the milk (for convenience's sake) and I use sugar-free cocoa mix.

- In a saucepan, heat the milk with tea bags until not quite boiling.
- Remove from heat, cover, and steep for about three minutes.
- Strain out the tea bags.
- Pour out into 6 mugs and then stir in one tablespoon of chocolate powder into each mug.
