HALIBUT FISH CHEEKS

Halibut Fish Cheeks image

Fish cheeks? The first time I heard this we were living in Hong Kong. The Chinese love fish and the prized part is the cheek. Why? A taste test and you'll soon know why. The cheeks are the tastiest and sweetest part of the fish...I kid you not! Tender chunks of flesh that smell like the ocean and are opaque.

Categories     fish

Time 15m

Yield 2

Number Of Ingredients 7

1 lb. halibut fish cheeks
1 or 2 lemon wedges
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon capers, rinsed
splash of white wine or sherry
2 tablespoons parsley, chopped

Steps:

  • Pat the halibut cheeks dry with paper towel. Lightly flour each cheek and gently tap any excess flour. If you like, season the flour with sea salt and freshly ground black pepper.
  • In a sauté pan over medium-high heat, melt the butter and add olive oil. Swirl around until the butter and oil are mixed and bubbly. Place cheeks into the bubbly butter and brown until cooked, just a minute or two each side. Time will vary depending on the size of the pieces but no longer than 5 minutes in total.
  • When you flip the fish over, add capers, wine, and squeeze one lemon wedge over the cheeks. Add another tablespoon of butter and allow to melt. Give the pan a shake and remove from heat. Sprinkle with parsley and serve right away.

Time 35m

Yield 4

Number Of Ingredients 11

1 lb Sizzlefish Halibut Cheeks
4 TBSP Olive Oil, divided (more may be needed for sautéing)
2 Medium Shallots, about ½ cup finely diced
2 Garlic Cloves, thinly sliced
½ tsp Herbs de Provence
The juice of one lemon, about ½ cup
1 cup White Wine, we used Chardonnay
1 Pint Cherry Tomatoes
Salt, to taste
Pepper, to taste
Zest of one lemon

Steps:

  • Lay the halibut cheeks out in a single layer and pat dry with a dry paper towel. Season them with salt and pepper to taste.
  • In a large sauté pan, heat 2 tablespoons olive oil on medium heat.
  • Add a few halibut cheeks at a time (working in batches to not overcrowd the pan) to the heated oil and cook until they are browned on one side, then flip and continue to cook on the second side until browned. This will take between 3 - 4 minutes per side.
  • While the halibut cheeks cook, heat 1 tablespoon olive oil on medium heat in a small saucepan. Add the finely diced shallots and sliced garlic to the pan. Cook for 2 minutes or until the shallots and garlic begin to soften.
  • Next, add the herbs de Provence to the shallot mixture and cook for about 1 minute stirring. Add the lemon juice and wine to the shallot mixture and cook until the sauce reduces to about half.
  • Once reduced, add the sliced cherry tomatoes and cook just until they soften.
  • Season with salt and pepper to taste.
  • Remove the sauce from the heat and serve with the halibut cheeks.
  • Garnish with fresh lemon zest.

PANKO FRIED HALIBUT CHEEKS

Panko Fried Halibut Cheeks image

Halibut cheeks are truly tender, flavorful morsels. I don't like to use too many herbs or spices with them just let the natural flavor come through. You could add some garlic to the pan or mix in some fresh dill - it's up to you. This is how I enjoy them served with some Tartar sauce & an additional wedge of lemon. You may substitute regular bread crumbs but Panko are better

HALIBUT CHEEK FRITTERS WITH SALAD AND CHIPS

Halibut Cheek Fritters with Salad and Chips image

Provided by Food Network

Categories     main-dish

Time 3h

Yield 4 Servings

Number Of Ingredients 22

2 cups all-purpose flour
2 tablespoons chopped chives
1/8 teaspoon kosher salt
4 egg yolks
1 cup milk
1 cup pale ale
3 quarts vegetable oil
2 large Yukon gold potatoes
2 small taro roots
2 lotus roots
1 sweet potato
1 yam
2 plantains
Kosher salt
4 egg whites
1/8 teaspoon white vinegar or lemon juice
8 (8-ounce) halibut cheeks (or grey cod), de-boned
12 ounces mesclun or micro greens
1/2 cup lobster oil (or walnut oil)
3 tablespoons malt vinegar
Salt and pepper
1 lemon, cut in wedges, for garnish

Steps:

  • Beer Batter:
  • Combine flour and chives with salt in a large bowl. Make a hole in the middle. Put egg yolks in the hole and beat into the flour with a whisk. Add milk and mix. Slowly pour in the beer, mixing constantly. Cover and refrigerate for 2 hours.
  • Halibut and Chips:
  • Heat oil in a deep-fryer or large, heavy Dutch oven to 300 degrees F. Peel potatoes, taro and lotus roots, sweet potato, yam, and plantains, then slice thinly using a madoline to make chips. Rinse slices in a colander under running water to remove the starch. Drain on paper towels. Place 1 handful of slices at a time in the deep-fryer, stirring well with the skimmer, and cook for about 2 minutes until soft. Drain on paper towels and season with salt. When all the slices are cooked, turn up the heat of the deep-fryer to 350 degrees F.
  • In a bowl, whip the egg whites until firm. Add vinegar, then whip a few minutes more. Fold into the beer batter and mix well. Dip halibut cheeks into the batter 1 at a time. Deep-fry for 4 to 6 minutes, until the batter tuns golden. When all the halibut cheeks are cooked, turn up the heat of the deep-fryer to 375 degrees F.
  • Add chips and deep-fry for a second time for about 3 minutes, until golden and crispy. Drain on paper towels.
  • Salad:
  • Place mesclun in a salad bowl with lobster oil (or walnut oil) and malt vinegar. Toss gently and season, to taste, with salt and pepper.
  • To serve, add chips to salad and toss gently to avoid breaking the chips. Place the cooked fish in a plastic basket or individual martini glasses lined with parchment paper. Serve with lemon wedges in a bowl on the side.

BREADED HALIBUT CHEEKS

Breaded Halibut Cheeks image

Categories     Bread     Bake     Halibut     Summer     Kosher

Yield serves 4

Number Of Ingredients 12

2 cups fresh bread crumbs
4 ounces Parmesan or other hard cheese (page 23), shredded (1 cup)
1 tablespoon chopped fresh flat-leaf parsley
3/4 teaspoon garlic powder
1/4 teaspoon chili powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil
3/4 cup all-purpose flour
2 large eggs, beaten
1/3 cup milk
8 to 12 halibut cheeks or 2 pounds skinless halibut fillets, cut on the bias into 8 pieces

Steps:

  • Preheat the oven to 450˚F.
  • Put the bread crumbs, cheese, parsley, garlic powder, chili powder, salt, and pepper in a food processor. With the processor running, drizzle in the olive oil. Process until the bread crumbs are coated in the oil, about 15 seconds.
  • In three separate bowls, place the bread crumb mixture, flour, and eggs. Add the milk to the eggs and whisk to combine.
  • Put a baking sheet in the oven for 5 minutes. Dredge 1 halibut cheek in the flour and shake off any excess. Then dip the cheek in the eggs and then in the bread crumbs, pressing the bread crumbs lightly to coat the flesh evenly. Repeat the process with each piece of fish. Remove the pan from the oven and place the pieces on the hot baking sheet.
  • Bake the cheeks for 8 to 10 minutes, or until the bread crumb coating is golden brown and a meat thermometer inserted in the thickest part of the halibut reads 140˚F. If additional cooking time is needed, continue to bake the fish, checking the temperature at 2-minute intervals. If you have a convection oven, turn it on for this recipe, as it makes the cheeks a beautiful brown color, but reduce the cooking time to 5 or 6 minutes total.
  • Serve immediately.
