This spicy meat sauce is equally delicious served over rice, mashed potatoes or pasta. It's quick and easy, and reheats well. I got the original recipe from another website and made several changes to it to suit our family.

Steps:
- Brown and drain ground beef, onion and garlic.
- Add liquid from canned tomatoes [reserve tomatoes].
- Add green pepper, celery, paprika, salt and cayenne.
- Heat to boil, then cover and simmer until vegetables are tender, about 20 minutes.
- Blend flour with 1/4 cup cold water. Add to meat mixture gradually. Cook and stir until slightly thickened.
- Add reserved tomatoes and heat through.
- Serve over pasta, rice or potatoes.
- Note -- this reheats well. It thickens with standing.

- In a Dutch oven, layer half each of the meat, potatoes and onion. Sprinkle with half each of the salt and pepper. Repeat layers. Dissolve bouillon in water; pour over all. Top with tomatoes. Cover and cook over medium heat until potatoes are tender, 45-50 minutes. If desired, garnish with parsley.

- Preheat oven to 250 degrees F (120 degrees C).
- In a large skillet over medium heat, combine the ground beef, onion and celery and saute for 10 minutes, or until the meat is browned and the onion is tender. Drain the fat and set aside.
- In a separate saucepan, cook noodles according to package directions. When cooked, drain the water and stir in the meat mixture, chili, tomatoes, corn, taco sauce, and taco seasoning mix. Mix well and place entire mixture into a 10x15-inch baking dish.

- Preheat oven to 350 degrees F (175 degrees C).
- Place potatoes, celery, and carrot in a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer to a 2-quart baking dish.
- Melt 3 tablespoons butter in a large skillet over medium heat; cook and stir ham, green bell pepper, and onion until vegetables are tender, about 5 minutes. Transfer ham mixture to baking dish and mix with potatoes.
- Melt remaining 1/4 cup butter in a clean skillet; cook and stir flour in melted butter until smooth, about 3 minutes. Gradually stir in milk and season with salt and black pepper. - Add flour, milk, eggs, and melted butter to a blender and process until smooth, 1 to 2 minutes. Set batter aside for at least 20 minutes.
- Heat 1 teaspoon butter in a skillet over medium heat. Cook onions, stirring occasionally, until they start to turn golden brown, about 5 minutes. Set aside.
- Coat a crepe pan or nonstick skillet over medium heat with about 1 teaspoon of the melted butter. Ladle about 1/4 cup batter into the pan, swirling the pan to thinly coat the entire bottom. Cook until small brown spots appear on the bottom of the crepe, about 2 minutes.
- Loosen crepe carefully from the pan using a spatula and gently flip to brown the other side, 1 to 2 minutes more. Slide crepe onto a plate. Repeat with remaining batter, buttering the pan as needed and stacking crepes between pieces of parchment or waxed paper.

HAMBURG CASSEROLE
That is the name someone gave it, but it is not really a casserole. It is a topping for mashed potato, or a baked potato, or even rice. It is very simple but very tasty. As far as I know, Campbells is the only one who makes this soup and I can't find it everywhere. I know that Wal-Mart has it (at least here in this area). When I find it I always buy about 8 cans so I will have it when I want it.
