HARLEM MEATLOAF

I came across this recipe while surfing the net (don't remember exactly where) and love it!The write-up accompanying the recipe is as follows: "This meatloaf recipe is straight from Harlem! Submitted by Carolina, she enjoyed it as a child while living with her family in Harlem. It definitely falls under the "tastes even better...

3/4 c catsup
worcestershire sauce, 1 tablespoon plus 2 teaspoons
3 tabasco sauce
1 lb ground beef
8 oz sweet italian sausage, casing removed
1 medium yellow onion, grated on large holes of box grater, excess liquid removed
1 slice bread, torn into pieces, about 1/2 cup
1/2 c chopped fresh parsley, italian preferred
1/4 c dill pickle relish
1 large egg, lightly beaten
3 clove garlic, minced
1/2 tsp salt, kosher preferred

Steps:

  • 1. Pre-heat oven to 350° and arrange a rack in the middle. Line a rimmed baking sheet with aluminum foil and set it aside.
  • 2. Whisk 1/4 cup of the ketchup, 2 teaspoons of the Worcestershire, and 1 teaspoon of the Tabasco in a small bowl until smooth; set aside.
  • 3. Whisk the remaining 1/2 cup of ketchup, 1 tablespoon of Worcestershire, and 2 teaspoons of Tabasco in a large bowl until smooth. Add the remaining ingredients. Using clean hands, mix until everything is just combined (don't squeeze or overwork the mixture).
  • 4. Transfer the mixture to the center of the prepared baking sheet. Using your hands, form it into a 7-by-4-inch loaf. Bake until the meatloaf is just starting to brown, about 35 minutes. Remove from oven.
  • 5. Evenly spread all of the reserved ketchup mixture over the top and sides of the meatloaf. Continue baking until the glaze darkens slightly, about 20 to 25 minutes more. Transfer the baking sheet to a wire rack and let the meatloaf cool for 10 minutes before slicing.

This is an excellent marinade and basting sauce for chicken, either on the grill or baked in the oven. I have perfected this over the years since I first happened upon a slightly different recipe from the US South - versions of the same are popular in the New York area, hence the name "Harlem Sauce". It's good soul food! I'd love to know what you think of my version, and what your own tweaks are to this, if any.

1/4 cup unsalted margarine (half-stick)
1 tablespoon olive oil
4 tablespoons ketchup
2 tablespoons tomato sauce
4 tablespoons lemon juice
4 tablespoons white vinegar
2 teaspoons yellow mustard
2 teaspoons hot sauce
1 teaspoon cayenne powder
1 teaspoon minced garlic
1 1/2 tablespoons dried parsley
1 teaspoon onion powder
1/2 cup water

Steps:

  • In a medium sauce pot, gently melt butter and olive oil over medium heat.
  • Add ketchup, tomato sauce, lemon juice, vinegar, mustard, and hot sauce - stir or whisk to combine.
  • Add cayenne powder, garlic, parsley, onion powder, and water - stir or whisk to combine.
  • Raise heat to Medium-High and cook until boiling. Boil for about a minute or two.
  • Turn down heat to Medium and cook for 5 minutes, stirring often.
  • Take sauce pot off heat and let cool for 1 hour.
  • Use as a marinade for 6-8 boneless chicken breasts. Poke chicken all over with a fork, and marinate in a large, resealable plastic bag or container for 4-24 hours in the refrigerator.
  • Grill for 10-12 minutes each side, or bake uncovered at 400 degrees for 20 minutes. Let rest for 5 minutes after cooking. (Double cooking time if using bone-in chicken).
  • Important! --> Boil remaining marinade for 5 minutes, if extra sauce is desired - brush on while grilling.

1 tablespoon pineapple juice
1 slice pineapple, coarsely chopped
1/4 teaspoon maraschino
3 or 4 ice cubes

Steps:

  • Combine all ingredients in a mixing glass and stir well. Strain into a cocktail glass.
