1-1/2 pounds lamb stew meat
2 tablespoons olive oil, divided
3 large onions, quartered
3 medium carrots, cut into 1-inch pieces
4 small potatoes, peeled and cubed
1 can (14-1/2 ounces) beef broth
3/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
1 tablespoon all-purpose flour
1-1/2 teaspoons minced fresh parsley
1-1/2 teaspoons minced chives
1/2 teaspoon minced fresh thyme

Steps:

  • In a Dutch oven, brown meat in 1 tablespoon oil over medium heat until meat is no longer pink. Remove with a slotted spoon; set aside. Add the onions, carrots and remaining oil to pan. Cook for 5 minutes or until onions are tender, stirring occasionally. Add the potatoes, broth, salt, pepper and lamb; bring to a boil. , Remove from the heat. Cover and bake at 350° for 50-60 minutes or until meat and vegetables are tender., With a slotted spoon, remove meat and vegetables to a large bowl; set aside and keep warm. Pour pan juices into another bowl; set aside. , In the Dutch oven, melt butter over medium heat. Stir in flour until smooth. Gradually whisk in pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the parsley, chives, thyme, and meat and vegetables; heat through.

Toasted Cauliflower Crumbs:
1/2 medium head of cauliflower
3 Tbsp. extra-virgin olive oil
Kosher salt, freshly ground pepper
Lemony Mint Yogurt:
1 cup plain whole-milk Greek yogurt
3 Tbsp. finely chopped mint
1 Tbsp. fresh lemon juice
Kosher salt, freshly ground pepper
Stew and assembly:
5 lb. lamb shanks (about 6), patted dry
Kosher salt, freshly ground pepper
1/4 cup extra-virgin olive oil
2 large red onions, cut into 1" wedges
2 heads of garlic, halved crosswise
1 (3") stick cinnamon or 1/2 tsp. ground cinnamon
1 1/2 tsp. coriander seeds, crushed
3 Tbsp. harissa paste
Torn pitted Castelvetrano olives, mint leaves, and/or finely chopped preserved lemon (for serving; optional)

Steps:

  • Toasted Cauliflower Crumbs:
  • Coarsely chop cauliflower and pulse in a food processor until about the size of grains of rice (or, you can very finely chop with a knife instead). You should have about 2 cups.
  • Heat oil in a large skillet, preferably cast iron, over medium-high. Cook cauliflower, stirring often, until golden brown all over and charred in spots, 6-8 minutes. Remove from heat; season with salt and pepper. Let cool in skillet.
  • Lemony Mint Yogurt:
  • Mix yogurt, mint, and lemon juice in a medium bowl; season with salt and pepper.
  • Stew and assembly:
  • Season lamb shanks very generously all over with salt and pepper. Heat oil in a large Dutch oven or other heavy pot over medium-high. Working in 2 batches, cook lamb shanks in a single layer, turning occasionally, until browned all over, 8-12 minutes per batch. As the shanks finish cooking, transfer to a large plate.
  • Reduce heat to medium; add onions and garlic, cut side down, to the same pot and cook, tossing onions occasionally, until onions are browned in spots and garlic is golden brown, about 5 minutes. Add cinnamon and crushed coriander and cook, stirring constantly, until spices are very fragrant, about 1 minute. Add harissa paste and cook, stirring often and scraping bottom of pot, until vegetables are coated and paste is slightly darkened in color, about 2 minutes. Add 7 cups water, stirring to release any bits stuck on bottom of pot. Season generously with salt and pepper and bring to a simmer. Return lamb shanks to pot and bring stew back up to a simmer. Cover with a lid, leaving slightly askew so steam can escape, and cook, adjusting heat to maintain a very gentle simmer and skimming foam from surface as needed, until meat is tender and easily pulls away from bones, 1 1/2-2 hours.
  • Transfer lamb shanks to a cutting board and let cool 10-15 minutes; keep liquid at a simmer. Pull meat from bones and tear into bite-size pieces. Add bones back to pot as you go. Transfer meat to a medium bowl and cover with plastic wrap.
  • Simmer bones in broth, uncovered, until liquid is thick and very flavorful, 25-30 minutes. Remove from heat; add meat back to pot and let cool uncovered (bones and all) until no longer steaming. Cover pot and chill stew at least 12 hours (you can skip this step, but it will dramatically improve the flavor).
  • Uncover stew and spoon off half to three-quarters of fat on the surface; discard. Gently reheat stew until barely simmering. Pluck out and discard bones. Taste and season with more salt and pepper if needed. Ladle stew into bowls and serve with Toasted Cauliflower Crumbs, Mint Yogurt, harissa, and olives, mint leaves, and/or preserved lemon as desired.
  • Do Ahead
  • Yogurt can be made 1 day ahead. Cover and chill. Stew can be made 3 days ahead. Keep chilled.

2 1/2 #'s lamb stew meat
1 1/2 teaspoons salt
1/4 teaspoon fresh ground pepper
1/4 cup AP Flour
4 teaspoons olive oil
1 6oz. can tomato paste
1 14.5 oz can of beef broth
1 cup red wine
1 cup chopped celery
1 cup chopped onion
1 cup chopped carrot
3 garlic cloves chrushed and chopped
1 small butternut squash peeled, seeded and chopped into 1" square chunks

Steps:

  • 1. Rinse lamb and pat dry. Sprinkle with salt and pepper and dredge in flour. 2. Cook lamb in 2 tbs olive oil over medium high heat in a Dutch Oven. Repeat with rest of lamb chunks. Stir in tomato paste and broth and wine. 3. Stir in celery, carrots, onions and garlic. Stir lightly to blend and distribute. Top with butternut squash chunks. 4. Braise in a 300 degree oven for 4 hours. Serve over creamy mashed potatoes. Garnish with chopped parsley.

1 boneless leg of lamb (about 6 pounds), cubed into 1 1/2-inch pieces
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1 large onion, chopped
6 large carrots, unpeeled and cut into 2-inch pieces
6 cloves garlic, peeled and left whole
2 tablespoons tomato paste
2/3 cup red wine
2 cups beef stock
3 sprigs fresh rosemary
3 sprigs fresh thyme
2 bay leaves
1/4 cup chopped fresh parsley

Steps:

  • Preheat the oven to 300 degrees F.
  • Generously sprinkle the leg of lamb with salt and pepper.
  • Heat the oil in a large pot or Dutch oven over a medium-high heat. In two batches, brown the lamb all over and remove to a plate, 4 to 6 minutes per batch.
  • Add the onions, carrots and garlic. Season with a pinch of salt and pepper, then cook for a minute or two. Add the tomato paste and stir. Deglaze with the red wine and beef stock, scraping the bottom of the pot. Stir in the rosemary, thyme and bay leaves. Return the lamb to the pot and bring to a simmer.
  • Place the lid on the pot and roast until the meat is very tender, 2 to 2 1/2 hours. Sprinkle over the parsley and serve.

1/2 pound chorizo sausage, cut into 1/2-inch chunks
1 large onion, chopped fine, about 1 1/2 cups
1 1/2 cups fresh shelled beans -- limas, cranberries or pintos, about 1 pound in the shell
8 ounces flat beer
1/2 cup diced deveined jalapeno peppers, a few seeds left in, in 1/4-inch pieces
1 cup chopped tomatillos or full-grown but still green tomatoes
2 1/2 cups corn kernels and their liquid, 3 to 6 ears depending on size
2 large bell peppers, 1 green and 1 red, cored, seeded and cut in 1/2-inch square pieces, about 2 cups
3/4 cup light cream, or 1/2 cup heavy cream and 1/4 cup half-and-half
1/4 cup of half-and-half
1 tablespoon minced fresh oregano, or 1 teaspoon dried
1/2 teaspoon ground cumin
Pinch ground cloves
1/2 cup chopped fresh coriander
1 large clove garlic, minced fine
Salt to taste
3 or 4 leaves romaine or other crisp lettuce, shredded fine, for garnish

Steps:

  • Put the sausage in a large nonreactive saucepan or small kettle over low heat and cook until a bit of fat is released. Raise the heat slightly and cook, stirring, until the sausage is browned and most of the fat is rendered. Remove and reserve the sausage; pour off all but a thin film of the fat.
  • Add the onion and cook, stirring often, until it is golden brown. Stir in the beans and beer, lower the heat, and simmer for 20 minutes or until the beans are almost tender.
  • Stir in the jalapenos and tomatillos, turn up the heat to medium, and cook, stirring often, until the liquid just peeks through the vegetables. Add the corn, sweet peppers, 1/2 cup of the cream, oregano, cumin, cloves, and reserved cooked sausage. Stir well, lower the heat to simmer, cover the panand let everything get acquainted for about 20 minutes.
  • Uncover the pan, add the remaining cream, the coriander and the garlic. Simmer just long enough to take the raw edge off the garlic, then add salt and serve at once, topped with the shredded lettuce.

3 pounds boneless lamb, cut into 3-inch pieces
2 tablespoons canola oil
1 can (28 ounces) diced tomatoes, undrained
1 medium onion, cut into eighths
1 tablespoon dried parsley flakes
2 teaspoons dried rosemary, crushed
1/4 teaspoon garlic powder
4 large carrots, cut into 1/2-inch pieces
4 medium potatoes, peeled and cut into 1-inch pieces
1 package (10 ounces) frozen peas
1 can (4 ounces) mushroom stems and pieces, drained

Steps:

  • In a large resealable plastic bag, combine flour, salt and pepper; add lamb, a few pieces at a time, and shake to coat. In a Dutch oven, brown the lamb in oil; drain. 4 tablespoons bacon drippings
¼ cup flour
Salt and pepper to taste
2 ½ pounds beef stew meat, cut into 1 inch cubes
5 tablespoons olive oil
1 onion, thinly sliced
6 cloves garlic, thinly sliced
1 pound carrots, peeled and sliced
1 pound celery, sliced
¼ cup rice vinegar
2 tablespoons brown sugar
4 cups beef broth
2 (12 fluid ounce) cans or bottles ale
1 parsnip, peeled and sliced
1 turnip, peeled and chopped
1 pound baby red potatoes, washed
¾ cup parsley, chopped
4 whole bay leaves

Steps:

  • Heat bacon grease in a large pot over medium heat.
  • Combine flour with salt and pepper. Coat beef cubes.
  • Brown meat in the bacon grease until nicely browned. Remove to a paper towel, and set aside.
  • Heat olive oil in the same pot. Cook onions, garlic, carrots, and celery over low heat. Add the vinegar and sugar. Pour in the broth and bring to a boil. Deglaze the pan by scraping off the food stuck on the bottom of the pot.
  • Return meat to pot. Pour in beer, then stir in parsnips, turnips, red potatoes, parsley, and bay leaves. Reduce heat to medium low. Cover and simmer for 90 minutes, stirring occasionally.

This recipe will feed 3-4 people, it can easily be doubled, and is best if prepared a day ahead, refrigerated and warmed the following day. I have made this stew many times, it is wonderful! Serve with hot cooked egg noodles. I like to add in some frozen peas also.

2 lbs lamb stew meat, cut into 1-inch pieces
1/3 cup flour
1 1/2 teaspoons seasoning salt (can use white salt)
1 teaspoon black pepper
4 -6 tablespoons olive oil
1 large onion, chopped
2 small red bell peppers, seeded and chopped
3 tablespoons fresh minced garlic (or to taste)
2 teaspoons dried red pepper flakes (or to taste)
3 tablespoons tomato paste
2 bay leaves
2 cups chicken broth
1/3 cup port wine (or use dry red wine, can use more)
4 large thick carrots, peeled and cut into large chunks
1 lb button mushroom (can use more or less)
salt and pepper

Steps:

  • Heat oil in a large heavy pot over medium-high heat.
  • Mix the flour with seasoning salt and pepper in a large bowl.
  • Toss the lamb in the flour to coat, shaking off any excess flour.
  • Add in half of the floured lamb, and brown well on all sides, repeat the the remaining lamb; transfer to a plate or bowl.
  • Add in more olive oil if necessary to the pot; add in onions, red bell peppers, red pepper flakes and bay leaves; saute for about 5 minutes.
  • Add in garlic and tomato paste; saute for 2 minute more stirring with a wooden spoon.
  • Return the lamb back to the pot.
  • Add in broth, port or red wine and mushrooms; bring to a boil stirring with wooden spoon, scraping up any browned bits.
  • Reduce heat to medium-low; cover and simmer about 45-50 minutes.
  • After 45 minutes, add in the carrots, simmer UNCOVERED for another 25-30 minutes, or until the carrots are fork-tender and the sauce has thickened slightly, season with more salt and pepper if desired.
  • Remove the bay leaves, ladle into bowls.
