Yield 2 servings

Number Of Ingredients 9

1 1/4 cups daikon radish (cut into ½" thick slices, (7 oz per 1.25 cups))
2 cups red radishes (cut into ½" thick slices, (14 oz per 2 cups) )
2 tsp lemon juice
2 tsp lemon zest
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
2 tbsp thinly sliced fresh chives (optional garnish)
2 sprays Coconut Oil Spray (-AP)

Steps:

  • Preheat the oven to 375°F. Spray a large baking sheet with a bit of coconut oil cooking spray, or use parchment paper if not using oil.
  • Toss the sliced radishes with the lemon juice, lemon zest, salt, pepper, and garlic powder.
  • Spread the radishes in an even layer onto the prepared baking sheet.
  • Bake for 30-35 minutes, until tender and golden brown.
  • Remove from the oven and garnish with fresh chives.
