HEALTHY POTATO AND EGG SCAMBLE



Healthy Potato and Egg Scamble image

After a good morning workout, try this healthy but hearty meal! Low in fat, high in protein, and it fills you up.

Number Of Ingredients 10

3 egg whites
1 whole egg
1 tablespoon skim milk
1/2 cup diced potato
2 tablespoons diced onions
2 tablespoons diced green peppers
2 tablespoons olive oil
2 slices lean ham, diced
2 tablespoons shredded low-fat cheddar cheese
1 slice whole wheat bread

Steps:

  • In medium skillet heat oil on medium heat.
  • Add diced potatoes, peppers, and onions, salt and pepper to taste. cook until golden brown.
  • While potatoes are cooking, add eggs and milk in small bowl and whisk well.
  • When potatoes are almost done, add ham. cook for 2 minutes, then add eggs. Scramble well until eggs are cooked. place bread in toaster.
  • Move to serving plate and top with the cheese. Serve with the toast.

  • Briefly preheat oil in a nonstick skillet over medium heat. Add potatoes, corn, onion, and peppers, and cook until lightly browned, about 12-15 minutes. Stir occasionally, but you want the vegetables to develop some nicely browned areas, so don't stir so frequently that you prevent that from happening.
  • Pour egg mixture into pan with potato mixture and add cheese and bacon. Continue cooking, stirring to scramble, until eggs are done.

  • Combine the potatoes, water, oil and salt in a 10-inch skillet. The author suggested a non-stick skillet but in my opinion there’s nothing a well-seasoned cast iron skillet can’t do.
  • Cover and bring to a boil over high heat. Cook for about five minutes, until the water has evaporated and the potatoes start to sauté.
  • Uncover the potatoes and loosen them from the bottom of the skillet with a wooden spoon until lightly browned, about five minutes later. If you’re using dried spices or herbs, add them now.
  • In a bowl, scramble the eggs with a dash of milk. Pour the eggs into the skillet, toss in the scallions and scramble until the eggs are just set. Remove the skillet from heat.
