1-3/4 cups chopped baby portobello mushrooms
1 medium onion, finely chopped
1/2 cup chopped sun-dried tomatoes (not packed in oil)
2 tablespoons olive oil
2 garlic cloves, minced
1 package (12 ounces) frozen vegetarian meat crumbles
2 cans (16 ounces each) chili beans, undrained
2 cans (14-1/2 ounces each) no-salt-added diced tomatoes
1/2 cup water
1/2 cup vegetable broth
4-1/2 teaspoons chili powder
2 teaspoons brown sugar
1/2 teaspoon celery salt
1/2 teaspoon ground cumin
1 medium ripe avocado, peeled and finely chopped
Reduced-fat sour cream, optional

Steps:

  • In a Dutch oven, saute the mushrooms, onion and sun-dried tomatoes in oil until tender. Add garlic; cook 1 minute longer. Add meat crumbles; heat through., Stir in the chili beans, tomatoes, water, broth, chili powder, brown sugar, celery salt and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Ladle chili into bowls. Top each with avocado and, if desired, sour cream.

10 plum tomatoes, halved lengthwise
1 jalapeno chile, halved (seeded if desired)
1 white onion, peeled and halved
4 garlic cloves, peeled
2 tablespoons extra-virgin olive oil
2 pounds boneless, skinless chicken thighs, cut into 1/2-inch cubes
1/4 cup chili powder
Salt
2 canned chipotle chiles in adobo sauce, finely chopped
1 3/4 cups homemade or store-bought low-sodium chicken stock
1 can (15 ounces) kidney beans, drained

Steps:

  • Preheat broiler, with rack 3 inches from heat source. Arrange tomatoes, jalapeno, onion, and garlic, cut side down, on a rimmed baking sheet. Broil until starting to char, about 5 minutes. Pulse tomatoes and jalapeno in a blender or a food processor until chunky. Chop onion and mince garlic.
  • Heat a large heavy skillet (preferably enamel cast-iron) over medium-high heat. Add oil. Working in batches, brown chicken in a single layer, allowing to sear before stirring, 5 to 6 minutes; transfer to a plate.
  • Reduce heat to medium. Add onion and garlic to skillet. Cook until soft and golden, about 8 minutes. Add chili powder and 2 teaspoons salt. Cook, stirring, for 1 minute. Stir in chipotles, and add chicken. Raise heat to high. Add tomato-jalapeno mixture. Cook, scraping up browned bits, until fully incorporated, 3 to 5 minutes. Stir in stock; simmer for 20 minutes. Add beans; simmer for 10 minutes. Serve with desired toppings.

15 oz chickpeas, 1 can
1 tablespoon olive oil
¼ teaspoon chili powder
¼ teaspoon garlic powder
¼ teaspoon kosher salt

Steps:

  • Preheat the oven to 375°F (190°C). Grease a baking sheet with nonstick spray.
  • Drain, rinse, and dry the chickpeas. Spread on the prepared baking sheet in a single layer.
  • Bake the chickpeas for 40-45 minutes, until golden and slightly dry. Remove from the oven and carefully transfer to a medium bowl. Keep the oven on.
  • Add the olive oil, chili powder, garlic powder, and salt. Toss until the chickpeas are well coated.
  • Return the chickpeas to the baking sheet and bake for another 10-15 minutes, until golden brown and crunchy.

1 ½ tablespoons olive oil
1 pound ground turkey
1 onion, chopped
2 green bell peppers, seeded and chopped
5 carrots, peeled and sliced into rounds
1 tablespoon chili powder
1 ½ teaspoons ground cumin
1 teaspoon ground black pepper
2 (14.5 ounce) cans canned diced tomatoes with their juice
1 cup frozen corn
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can garbanzo beans, drained and rinsed
1 ½ cups chicken broth

Steps:

  • If using turkey, heat oil in a large saucepan over medium-high heat, and cook and stir the ground turkey for about 10 minutes, breaking it up with a spoon as it cooks, until the meat is no longer pink. Remove the turkey meat and set aside, leaving oil in the pan.
  • Place the onion, green peppers, and carrots into the saucepan, and cook and stir for about 10 minutes, until the onion is translucent and the vegetables are tender. Stir in the chili powder, cumin, and black pepper, and pour in the diced tomatoes, frozen corn, black beans, garbanzo beans, and chicken broth. Bring the mixture to a boil.
  • Place about 1 1/2 cups of the chili mixture into a food processor, and puree for about 1 minute until smooth. Pour the puree back into the rest of the chili to thicken. Add the cooked turkey meat, and bring the chili back to a simmer over medium-low heat.

1 ½ pounds ground beef
1 small onion, chopped

1 (15.5 ounce) can black beans, drained

Steps:

1 broiler/fryer chicken (3-1/2 pounds), skin removed and cut up
2 celery ribs, cut into chunks
1 small onion, quartered
1 teaspoon whole peppercorns
3/4 teaspoon salt
6 cups water
CHILI:
8 corn tortillas (6 inches), cut into 1/4-inch strips
4 teaspoons canola oil, divided
3 celery ribs, chopped
2 medium onions, chopped
2 garlic cloves, minced
1/4 cup all-purpose flour
1 tablespoon ground cumin
1 tablespoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 cans (15-1/2 ounces each) navy beans, rinsed and drained
2 medium tomatoes, chopped
1/2 cup reduced-fat sour cream
4 green onions, chopped
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • Place the first six ingredients in a Dutch oven. Bring to a boil. Reduce heat; simmer, covered, 1 hour or until chicken is tender. Remove chicken; cool slightly. Strain broth, discarding vegetables and peppercorns; skim fat from broth. Set broth aside., Preheat oven to 400°. Remove meat from bones; cut into bite-size pieces and set aside. Discard bones., In a bowl, toss tortilla strips with 1 teaspoon oil. Arrange strips on a baking sheet coated with cooking spray. Bake 8-12 minutes or until crisp, stirring once., In a large saucepan, heat remaining oil over medium-high heat. Add celery, onions and garlic; cook and stir 6-8 minutes or until tender. Stir in flour and seasonings until blended. Gradually add 4 cups chicken broth (save remaining broth for another use)., Bring to a boil; cook and stir 1-2 minutes or until slightly thickened. 6 slices bacon, chopped
1 onion, chopped
1 carrot, chopped
1 celery stalk, chopped
1 poblano chile, stemmed, seeded and chopped
3 garlic cloves, chopped
Kosher salt and freshly ground black pepper
1 teaspoon ground cumin
1 teaspoon ground coriander
One 28-ounce can whole peeled tomatoes
2 cups chicken stock or low-sodium broth
1 to 2 chipotle chiles in adobo sauce, seeded and minced
1 small rotisserie chicken
One 15-ounce can chickpeas, rinsed and drained
Shredded Monterey Jack cheese, for serving

Steps:

  • Heat the oil in a large saucepan over medium-high heat until shimmering. Add the bacon and cook, stirring occasionally, until rendered but not crisp, 3 to 5 minutes. Add the onion, carrot, celery, poblano, garlic and a generous pinch each of salt and pepper. Cook, stirring occasionally, until the vegetables soften and just start to brown, about 8 minutes. Stir in the cumin and coriander and cook, stirring, until fragrant, about 30 seconds.
  • Meanwhile, transfer the tomatoes and their juices to a medium bowl. Using your hands, gently crushed the tomatoes into chunks. Add the tomatoes, stock and chipotles to the pan and bring to a simmer.
  • Remove and discard the skin and bones from the chicken. Coarsely chop or shred the meat. Stir the chicken and chickpeas into the pan.
