1-1/2 pounds ground beef
1 medium onion, chopped
1 garlic clove, minced
3 tablespoons olive oil
1 can (28 ounces) Italian diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 teaspoon dried oregano
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
2 carrots, halved
2 celery ribs, halved
12 ounces lasagna noodles
1 carton (15 ounces) ricotta cheese
2 cups shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese

Steps:

  • In a large skillet, cook beef, onion and garlic in oil until meat is browned and onion is tender; drain. Stir in tomatoes, tomato sauce, tomato paste, oregano, sugar, salt and pepper. Place carrots and celery in sauce. Simmer, uncovered, for 1-1/2 hours, stirring occasionally. , Meanwhile, cook lasagna noodles according to package directions. Drain; rinse in cold water. Remove and discard carrots and celery. , In a greased 13x9-in. baking dish, layer one-third of the noodles, one-third of the meat sauce, one-third of the ricotta, one-third of the mozzarella and one-third of the Parmesan. Repeat layers once. Top with remaining noodles and meat sauce. , Cut a heart out of aluminum foil and center on top of sauce. Dollop and spread remaining ricotta around heart. Sprinkle with remaining mozzarella and Parmesan. Bake, uncovered, at 350° for 45 minutes. Remove and discard foil heart. Let stand 10-15 minutes before cutting.

1 tablespoon olive oil
1 ounce pancetta, cut into small pieces
6 ounces meatball mix
Kosher salt and freshly ground black pepper
1 small carrot, peeled and grated
1 small onion, finely chopped
1 celery stalk, grated
2 medium cloves garlic, chopped
1 cup milk
One 15-ounce can crushed tomatoes
Pinch allspice
1 tablespoon unsalted butter
2 tablespoons all-purpose flour
1 cup milk
1/3 cup grated Parmesan
Pinch nutmeg
Kosher salt and freshly ground black pepper
8 no-boil lasagna noodles, broken in half

Steps:

  • Preheat the oven to 425 degrees F.
  • For the Bolognese: Heat the oil in a medium skillet over medium heat. Add the pancetta and cook, stirring occasionally, until softened and browned, 2 to 3 minutes. Add the meatball mix with a teaspoon of salt and some pepper. Cook until the meat is no longer pink and has started to crisp up, about 5 minutes. Add the carrots, onions, celery, garlic, 1 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until the vegetables just start to soften, 3 to 4 minutes. Add the milk, increase the heat to cook down the milk a bit, then add the allspice and tomatoes and stir to combine. Reduce the heat to a simmer and cook until creamy and thickened, 10 to 15 minutes.
  • Meanwhile, for the Mornay sauce: Melt the butter in a small saucepan over medium-low heat. Add the flour and whisk until a wet sand consistency is formed and smells lightly toasted. Pour in the milk, whisking constantly until thickened and there is no longer a flour taste, about 5 minutes. Add the Parmesan, nutmeg and a few grinds of pepper and whisk until melted and smooth. Season with salt. Remove from the heat until ready to use. (If a film forms on top, whisk vigorously to incorporate it back into the sauce.)
  • To build the lasagna: Add about 1/4 cup of the Bolognese sauce to a 6-inch oven-safe skillet. Layer 3 lasagna noodle halves on the bottom of the skillet and top with about 1/2 cup of sauce. Repeat until all the noodles have been used. Spoon a final layer sauce on top, then pour over the Mornay sauce being sure to leave a border around the edges. Place the pan on a baking sheet and bake until the noodles are softened and the Mornay sauce is slightly puffed and turning a golden brown, about 15 minutes.
  • Let cool for 10 minutes before serving.

  • Preheat the oven to 350 degrees F (180 degrees C). Heat oil in a large saucepan or Dutch oven set over medium heat. Add onion, green pepper, garlic and dried herbs; cook for 5 to 10 minutes or until vegetables soften.

1 (14 1/2 ounce) can diced tomatoes, drained and 1/4 c juice reserved
1/4 cup tomato juice, drained from can as above (included for calorie count)
1 (8 ounce) can tomato sauce
ground black pepper, to taste
1/4 lb whole milk ricotta cheese (about 1/2 cup) or 1/4 lb part-skim ricotta cheese (about 1/2 cup)
1 ounce parmesan cheese, grated (about 1/2 cup)
2 tablespoons chopped fresh basil
1 large egg, lightly beaten
1/8 teaspoon table salt or 1/4 teaspoon kosher salt

Steps:

  • Preheat oven to 400°F.
  • In a large skillet over medium heat, heat oil until shimmering. Add onion and 1/8 tsp table salt (or 1/4 tsp kosher salt). Cook until soft, 3-5 minutes. Add garlic and stir until fragrant, 30-60 seconds. Add meat and cook, breaking up with the edge of a spoon, until no longer pink, 2-3 minutes.
  • Add cream, bring to a simmer and cook until dry, about 2 minutes. Add drained tomatoes, reserved juice, and tomato sauce. Bring to a simmer and cook until flavors are blended, 3-5 minute Add salt and pepper to taste.
  • In a bowl, stir together ricotta, 1 oz (1/2 c) grated Parmesan, basil, egg, salt and pepper.
  • Spread 1/2 c sauce in the bottom of a 9x5 loaf pan (try not to get large chunks of meat in this layer). Place 1 noodle in pan. Cover noodle with one-third of the cheese mixture. Sprinkle with 1/4 c mozzarella shreds, then another 1/2 c sauce.
  • Repeat the process, starting with another noodle, twice more. Place the fourth noodle on top, cover with the last 1 c sauce and the remaining 1/4 c mozzarella. Sprinkle with the remaining 2 T Parmesan.
  • Spray a piece of foil with non-stick spray and cover pan tightly. Place on a cookie sheet and bake until bubbling around edges, 25-30 minutes. Remove foil and bake until cheese begins to brown, another 10 minutes, or so. Let cool at room temperature 20 minutes before slicing and serving.

1 pound fresh mushrooms, sliced
¾ cup chopped green bell pepper
¾ cup chopped onion
3 cloves garlic, minced

2 (26 ounce) jars pasta sauce
1 teaspoon dried basil
1 (15 ounce) container part-skim ricotta cheese
4 cups shredded mozzarella cheese
2 eggs
½ cup grated Parmesan cheese

Steps:

  • Cook the lasagna noodles in a large pot of boiling water for 10 minutes, or until al dente. Rinse with cold water, and drain.
  • In a large saucepan, cook and stir mushrooms, green peppers, onion, and garlic in oil. Stir in pasta sauce and basil; bring to a boil. Reduce heat, and simmer 15 minutes.
  • Mix together ricotta, 2 cups mozzarella cheese, and eggs.

3/4 pound(s) ground beef
1/2 pound(s) ground turkey sausage, or sweet sausage
1/2 cup(s) chopped onion
2 clove(s) smashed garlic with peel off
1 can(s) crushed tomatoes (28oz)
1 can(s) tomato paste (12oz)
1 can(s) tomato sauce (15oz)
1/2 cup(s) water
2 tablespoon(s) sugar
1 1/2 teaspoon(s) dried basil leaves
1/2 teaspoon(s) fennel seeds
1 teaspoon(s) italian seasoning
3/4 tablespoon(s) salt
1/4 teaspoon(s) pepper
1 teaspoon(s) dried parsley
CHEESE MIX
8 ounce(s) ricotta cheese
1 large egg
1/4 teaspoon(s) salt

6 - lasagna noodles, rinsed with warm water

Steps:

  • In Crock pot, cook meat, onion and garlic on a high temp until meat starts to brown and onions and garlic have sweated, but not burned. Stir in crushed tomatoes, paste, sauce and water. Season with sugar, basil, fennel seeds, Italian seasoning, 3/4 tbsp salt, pepper and 1 tsp of dried parsley. Let this come up in temperature, cover and simmer for approx 2 1/2 hrs.
  • Prepare noodles by breaking noodles to fit an 8x8 baking pan. Set aside until ready to assemble after sauce has simmered. Once it has simmered long enough, turn off Crock pot rinse the noodles with warm water, no need to cook the noodles. Preheat oven to 375° F.
  • Prepare cheese mixture by adding ricotta cheese, egg, 1 tsp parsley and 1/4 tsp salt. Add 1 tbsp of the Parmesan cheese and mix to combine.
  • To Assemble: With a 1/2 c measuring cup, or ladle, place one or 1 1/2 scoops of sauce on the bottom of the 8x8 pan. Place one layer of your pre-measured noodles on the sauce. Spread or dollop the ricotta mixture on top of the noodles and try to spread it best you can. Sprinkle or place the Mozzarella/Provolone cheese mixture on top of that. Next, another layer of the sauce, then sprinkle the Parmesan cheese over that. You repeat this (starting with another layer of noodles) until all of the ricotta is gone. I did two good layers with about 1-1 1/2 cups sauce in each layer, and 2 hand fulls of the shredded cheese mix, to give you an idea. Once you have completed the last layer with Parmesan, I sprinkle a little extra, if any, of the shredded cheese on there too. Cover this tight with foil. PLACE ON BAKING SHEET, this probably will bubble over slightly. Into the 375° oven for 25 minutes. Very carefully, remove the foil at this point, and continue to bake for an additional 25 minutes or so. Remove from oven and let lasagna cool for 15 minutes or so. Meanwhile, you can store the remaining sauce in a freezer container, make an additional lasagna (8x8 pretty aluminum pan, just be careful as it will be heavy, may want to use a baking sheet until the freezer sets it up) and freeze it for a later day or keep in the fridge for spaghetti, pizza, bread stick dipping sauce or whatever you want to use this for.

This is our family's favorite recipe for lasagna. It is a hearty dish and does not have ricotta cheese in the recipe and features lots of yummy mozzarella. I use Recipe #68017 for the Italian Seasoning in this recipe. We serve it with salad topped with Recipe #18840 and garlic bread.

2 lbs ground beef
1 cup onion, chopped
2 teaspoons garlic, minced

1 tablespoon sugar
salt and pepper, to taste

  • Make lasagna noodles according to package directions (you need to have 9 total for this recipe).
  • Rinse and drain pasta.
  • Brown ground beef with chopped onions and garlic and drain.
  • Add diced tomatoes, tomato sauce, tomato paste, sugar, Italian seasoning and salt and pepper.
  • Simmer 30 minutes.
  • Put a little of the sauce on the bottom of a 9 X 13 pan.
  • Layer 3 lasagna noodles.
  • Layer 1/3 of the sauce.
  • Layer 1/3 of the sliced mozzarella.
  • Layer 1/3 of the shredded mozzarella.
  • Repeat 2 more times for a total of 3 layers.
  • Bake at 350f for 1 hour.
  • Let rest for 10 minutes before serving.

There have been so many nights when I craved lasagna but didn't want to get stuck with the usual leftovers. If you've felt the same way, this small-batch version solves all your problems! It's easy enough to throw together on a weeknight and is the perfect size for two (or three) servings.

1 tablespoon extra-virgin olive oil
1/2 small yellow onion, finely chopped (about 1/3 cup)
1 clove garlic, minced
Kosher salt and freshly ground black pepper
8 ounces ground beef
1/2 teaspoon dried oregano
One (12-ounce) jar marinara sauce
1 large egg
1 cup (8 ounces) ricotta
3 tablespoons chopped fresh parsley
3 tablespoons chopped fresh basil
1 cup shredded mozzarella
1/2 cup plus 2 tablespoons grated Parmesan
5 sheets no-boil lasagna noodles

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the olive oil in a medium saucepan over medium-high heat. Add the onion, garlic and 1/2 teaspoon salt and saute until the onion is translucent and softened, stirring occasionally, about 4 minutes. Add the ground beef and use a wooden spoon to break it into pieces. Cook, stirring occasionally, until no longer pink, 4 to 6 minutes. Add the oregano and cook 1 minute. Stir in the marinara and let simmer while you make the ricotta mixture.

3 cups shredded mozzarella cheese
2 large eggs eggs
1 pound ground beef
1 (48 ounce) jar Prego® Traditional Italian Sauce
12 each cooked lasagna noodles
½ cup grated Parmesan cheese

Steps:

  • Mix ricotta cheese, mozzarella cheese and eggs.
  • Cook beef in saucepan until browned. Pour off fat. Stir in pasta sauce.
  • Spread 1 cup beef mixture in each of 2 2-quart shallow baking dishes. Top each with 2 lasagna noodles and 1 cup ricotta cheese mixture. Repeat layers. Top each with 2 lasagna noodles, remaining beef mixture and Parmesan cheese.
  • Bake at 400 degrees F for 30 minutes or until hot. Let stand 10 minutes.

1 (28 ounce) jar any style spaghetti sauce
1 lb ground beef (I used1 1/2 lbs) or 1 lb ground chuck, cooked & drained (I used1 1/2 lbs)
1/4 cup water
6 lasagna noodles, uncooked
1 (15 ounce) container ricotta cheese
2 cups shredded mozzarella cheese

Steps:

  • Mix sauce, cooked meat and water.
  • Spread 1 cup of the sauce mixture onto bottom of 12 x 8 inch baking dish.
  • Top with 3 uncooked lasagna noodles, 1/2 of the ricotta cheese, 1/2 of the shredded cheese and 1/2 of the remaining sauce mixture.
  • Top with remaining 3 uncooked lasagna noodles, ricotta cheese, sauce mixture and shredded cheese.
  • Cover tightly with foil.
  • Bake at 350°F for 1 hour.
  • Let stand 5 to 10 minutes before serving.
