SLOW-COOKER HEARTY PORK STEW
Enjoy a rich stew of pork loin, carrots, parsnips and squash. Best of all your slow cooker does all the work.

Steps:
- Mix all ingredients except flour and butter in 3 1/2- to 6-quart slow cooker.
- Cover and cook on low heat setting 6 to 7 hours (or high heat setting 3 to 4 hours) or until pork is no longer pink and vegetables are tender.
- Mix flour and butter. Gently stir flour mixture, 1 spoonful at a time, into pork mixture until blended.
- Cover and cook on high heat setting 30 to 45 minutes, stirring occasionally, until thickened. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.

- In a 3-qt. slow cooker, combine the first 10 ingredients. Cover and cook on low for 8-10 hours or until meat is tender. , Combine cornstarch and water until smooth; gradually stir into slow cooker. Cover and cook on high for 30 minutes or until slightly thickened. Serve in bowls with noodles. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

CREAMY PORK STEW
This creamy pork stew is one of my favorite cold weather dishes of all time. You can add squash, Brussels sprouts, cabbage, mushrooms, root vegetables--it's quite versatile. And if pork isn't your thing, this would be lovely with veal, beef, or chicken thighs. Serve on steamed rice, mashed potatoes, or noodles.

- Season pork chunks generously with salt and pepper. Toss to distribute seasonings evenly.
- Heat vegetable oil in pot over high heat. Brown pork in batches so meat isn't crowded, about 7 minutes total time per batch. Transfer pork to a plate. Cook onions in same pot; cook and stir until they start to turn translucent and edges get brown, 3 or 4 minutes. Add garlic; cook 1 minute. Stir in apple cider and apple cider vinegar.
- Raise heat to high. Stir in mustard and horseradish. Transfer browned pork pieces back to pot, along with accumulated juices. Pour in cream and chicken broth to cover. Add sage, thyme, rosemary, and bay leaf. Season with a pinch of salt. Bring to a simmer; reduce heat, cover, and simmer on low for 30 minutes. Add celery, carrots, black pepper and cayenne.
- Simmer uncovered on low until meat is tender, about 1 hour. Add green peas. Simmer another 10 minutes. Optional: for a thicker sauce, raise heat and simmer until sauce is reduced, 5 to 8 minutes.
- Garnish individual servings with apple strips and chopped fresh chives.

- In a large, heavy pot, over medium heat, add the oil.
- Season the beef and pork with salt and pepper.
- Sear the meat, in batches, for 2 minutes on all sides.
- Add the red wine to deglaze (about 1 minute).
- Add the onions, garlic, and hot pepper.
- Cover with water (approx. 3-4 quarts).
- Bring to a boil, reduce heat to medium low, and simmer until tender (approx. 3 hours) Season the chicken with salt, pepper and essence.
- Add the chicken during the last 1 ½ hours of cooking.
- Remove the meat, chicken and vegetables, set aside to cool.
- Discard the vegetables.
- Add the remaining vegetables to the pot.
- Continue to cook for 1 hour.
- After the meat is cool, cube the beef and pork into 1" pieces.
- Remove the skin and bones from the chicken and cube into 1" pieces.
- Add the cubed meat to the vegetables.
- Continue to cook for 30 minutes.
- Re-season if necessary.
- Ladle into serving bowls.
- Serve with fresh bread or corn bread.
