Chili is easy, one-pot, comfort food that you can enjoy all year long. Let it simmer for the right amount of time so the flavours really blend. Serve this chili as written or with a variety of other toppings such as chopped green onions, whole cilantro leaves, diced avocado, reduced-fat shredded cheese or nonfat plain Greek yogurt (toppings are not included in the recipe's Points value).

6 medium Sweet red pepper(s) diced small
2 medium Uncooked red onion(s) finely diced
1 medium Jalapeño pepper(s) seeded, finely chopped
2 pound(s) Uncooked 99% fat-free ground turkey breast
2 tbsp(s) Chili powder or to taste
4 pinch Table salt or to taste
3 pinch Ground cumin or to taste
45 oz Canned diced tomatoes (fire-roasted with garlic recommended for heat)
15 oz Canned black beans rinsed and drained
15 oz Canned pinto beans rinsed and drained
15 oz Fat free no sugar canned refried beans
0.5 cup(s) Water
0.5 cup(s) Cilantro chopped

Steps:

  • In a large pot, heat oil over medium heat. Add red peppers, onions, and jalapeno; cook, stirring frequently, until onions are translucent and somewhat caramelized, about 10-15 minutes.
  • Add turkey, chili powder, salt, and cumin; cook, stirring and breaking apart turkey as it cooks, until meat is just browned, 2-3 minutes.
  • Stir in remaining ingredients, except cilantro, and bring to a boil over high heat, gently stirring to combine all ingredients and make sure nothing sticks to the bottom. Reduce heat to medium-low; simmer, stirring occasionally, until chili is sufficiently thickened, about 45 minutes. Serve garnished with cilantro.
  • Serving size: about 1 1/3 cup

1 tsp olive oil
1 onion, diced
1 cup carrots, diced (optional)
1 cup celery, diced (optional)
1 lb 99% lean ground turkey
4 garlic cloves, minced
2 tablespoons tomato paste
2.5 tbsp chili powder (more to taste)
2 tbsp ground cumin
1 tbsp garlic powder
2 tsp oregano
2 tsp salt
1 tsp ground black pepper
1/4 tsp cayenne pepper (optional, to taste)
2 cups low sodium beef broth
14 oz canned diced fire roasted tomatoes (with juice)
14 oz canned kidney beans, drained and rinsed
14 oz canned pinto beans, drained and rinsed
1 cup canned tomato sauce (no sugar added)

Steps:

  • Heat the olive oil over medium high heat in a heavy pan. Add the onions, carrots, and celery. Cook for 5-7 minutes, stirring as needed, until onions are tender.
  • Add the ground turkey, breaking it up with a wooden spoon. Cook for 5-7 minutes until cooked through.
  • Add the minced garlic, tomato paste, and all the spices.
  • Cook for 2-3 minutes until very fragrant.
  • Add the tomatoes, kidney beans, and pinto beans. Stir together.
  • Add the tomato sauce and beef broth. Stir together and bring to a simmer. Cook for at least 30 minutes, ideally about 45 minutes.
  • Slow Cooker Option: Heat the olive oil over medium high heat. Add the onions, carrots, and celery. Cook for 5-7 minutes until onions are tender. Add the turkey and brown for 5-7 minutes until cooked through. Add the garlic, tomato paste, and spices. Cook for 2-3 minutes until fragrant. Add to the slow cooker along with the tomatoes, beans, tomato sauce, and beef broth. Cook on low for 6-8 hours.

2 tablespoons extra-virgin olive oil
1 onion, finely diced
1 green bell pepper, seeded and diced
2 chipotle peppers in adobo, minced, plus 2 tsp. sauce
1 pound dark ground turkey meat
1 28-oz. can diced tomatoes
1 15-oz. can kidney beans, drained and rinsed
Coarse salt
1 avocado, peeled and sliced
1 lime, cut into wedges
1 small red onion, diced
1/2 cup grated sharp cheddar (1.5 oz.)
Fresh cilantro sprigs

Steps:

  • Heat oil in a medium pot over medium heat. Saute onion and bell pepper until tender, 6 to 8 minutes. Add chipotle and adobo sauce and cook for 1 minute. Add turkey, breaking it up with the back of a spoon, and cook until no longer pink, about 3 minutes. Add tomatoes with juices and beans.
  • Bring to a boil. Reduce heat and simmer, stirring occasionally, until slightly thickened, about 30 minutes (add water to adjust consistency). Season with salt and serve alongside garnish.

Steps:

  • Heat oil in Dutch oven over medium-high heat. Add turkey and salt and cook, breaking turkey apart with wooden spoon, until no longer pink, 2-3 minutes.
  • Add onion and bell pepper. Cook, covered, stirring occasionally, until vegetables are tender, 3-4 minutes. Add garlic, cumin, oregano, cinnamon, and cayenne and cook, stirring constantly, until fragrant, 30 seconds. Stir in beans, salsa, and broth and bring to boil. Reduce heat to low and simmer, covered, 10 minutes.
  • Ladle chili into 4 bowls, top with yogurt, and sprinkle with cilantro. Serve with lime wedges.
  • Serving size: 1½ cups chili and 1 Tbsp yogurt
