TURKEY CHILI BY CHEF ERIC GREENSPAN
Chili is easy, one-pot, comfort food that you can enjoy all year long. Let it simmer for the right amount of time so the flavours really blend. Serve this chili as written or with a variety of other toppings such as chopped green onions, whole cilantro leaves, diced avocado, reduced-fat shredded cheese or nonfat plain Greek yogurt (toppings are not included in the recipe's Points value).

Steps:
- In a large pot, heat oil over medium heat. Add red peppers, onions, and jalapeno; cook, stirring frequently, until onions are translucent and somewhat caramelized, about 10-15 minutes.
- Add turkey, chili powder, salt, and cumin; cook, stirring and breaking apart turkey as it cooks, until meat is just browned, 2-3 minutes.
- Stir in remaining ingredients, except cilantro, and bring to a boil over high heat, gently stirring to combine all ingredients and make sure nothing sticks to the bottom. Reduce heat to medium-low; simmer, stirring occasionally, until chili is sufficiently thickened, about 45 minutes. Serve garnished with cilantro.

HEARTY TURKEY CHILI
Ground turkey is a lower-fat alternative to beef chuck, and kidney beans-loaded with vitamin C and omega-3s-are an especially nutritious option. This one-pot dish has two other comfort-food essentials going for it: a warm temperature and a hearty makeup.

Double this chili recipe, let it come to room temperature, cover and refrigerate for up to four days. - Mix all of the dry spices in a bowl together. While you're at it, make sure you start this recipe by already having all of your vegetables diced, your beans are drained and rinsed, and you’ll be ready to go. This recipe makes 16 cups, so make sure your pot is big enough. After spices are mixed, season ground turkey/chicken with 1 tablespoon of the spice blend. Cover until you are ready to cook.
- Spray the pot with cooking spray, and heat on medium heat. Wait until the pot is hot, then add the onions. Salt with a pinch of salt (½ tablspoonish), and cook for about 5 minutes. Add the peppers and cook for another 3 minutes. Onions should be translucent and peppers soft.
- Add minced garlic and cook for about 30 seconds. Next, add the seasoned ground turkey and cook until fully cooked and browned.
- Once the turkey is cooked, add the beans, corn, crushed tomatoes, bay leaves, and the rest of the seasonings. Bring to a boil, stirring occasionally.
