Nonstick vegetable spray, for coating pan
7 ounces bittersweet chocolate
3/4 cup (1 1/2 sticks) unsalted butter
3 large eggs
1 cup granulated sugar
1/2 cup lightly packed dark brown sugar
2 tablespoons dark corn syrup
1 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted nuts
6 ounces mini marshmallows

Steps:

  • Preheat oven with a rack in the middle of the oven to 350 degrees. Coat a 9 by 13-inch baking pan with nonstick vegetable spray.
  • Melt the chocolate and butter in a completely dry bowl or in the top of a double boiler set over barely simmering water. In a large bowl, mix together the eggs, granulated sugar, brown sugar and corn syrup until blended. Mix in the chocolate mixture. In a separate bowl, stir the flour, baking powder and salt together with a fork. Mix it into the egg mixture. Stir in the nuts and 1/4 cup of the marshmallows. Scrape the mixture into the prepared pan. Bake for 25 minutes, until barely set. Coat the top with the remainder of the marshmallows and bake for 5 more minutes. Set the pan on a rack to cool. Cut into 1 1/2 by 3-inch bars.

1 small onion, chopped
olive oil
2 large potatoes, diced
6 -8 mushrooms, diced
1 medium green pepper, diced
1 tablespoon dried dill
pepper
cracked chile (to taste)

Steps:

  • In a large saucepan, add the onions to a splash of oil and saute on medium-high heat until translucent.
  • Add the potatoes, mushrooms, green peppers, dill, pepper, and chilies.
  • Turn down heat and cover until potatoes are soft enough to pierce with a fork.

This is another recipe handed down from my husband's family. During the stressful meeting-of-the-parents times over the course of our relationship, this hash brown casserole was perhaps one of the only things I could look forward to without some level of hesitation! We still make it as often as we can justify it, which sadly is less often than we wish it were. (Stupid calories.) We have tried making it with low-fat ingredients and it does work nicely, but full-fat ingredients will make it shine. Note that the sizing of frozen hash brown bags doesn't always allow for you to buy a two-pound bag, so you may need to mix and match until you get that amount. We usually have some frozen hash browns left over when we make it, which can be used in any number of other recipes as desired. Also note that the topping is technically optional, but we highly recommend using it. It adds a wonderful texture that we would miss if it weren't included. If you have any casserole left over (no promises!) then this reheats well too.

2 lbs frozen hash browns, thawed
1/2 cup butter, melted
2 cups sharp cheddar cheese, shredded
1 (10 ounce) can cream of chicken soup
1 tablespoon salt
1/2 teaspoon garlic powder
2 cups sour cream
1/4 cup butter, melted
2 cups corn flakes, crushed

Steps:

  • Mix all casserole ingredients together in a large bowl, then pour into a greased 9x13 pan.
  • If using the topping, mix the topping ingredients together in a medium bowl, then sprinkle it over the top of the casserole.
  • Bake at 350 degrees, uncovered, for 1 hour.

2 pkg shredded frozen hashbrown potatoes
1 pkg large package shredded cheddar cheese
1 large container sour cream
2 can(s) cream of celery soup
2 stick butter, melted
1 pkg real bacon bits
3 tsp black pepper

Steps:

  • 1. Mix all ingredients in a super duper large bowl. May need a strong guy to help. Put in lasagna pan or large baking dish and bake at 350(about an hour and a half) until top and sides get nice and brown and hot in the middle.
  • 2. You can always cut the recipe in half...if I'm having about 15-20 people over, there aren't any leftovers. You can also add chopped green onion or more bacon bits if you like. I prefer to add more shredded cheese than the large package.

  • Wash the potatoes, leaving the skins on. Use the large side of a box grater or a food processor large grating blade to grate the potatoes. Place the grated potatoes into a large bowl and fill it with cold water. Tip the bowl to drain off starchy water, then fill it again. Stir the potatoes to release starches soak them for 2 minutes.
  • Drain the grated potatoes and squeeze out any excess water. Transfer them to a clean, dry towel. Wring the potatoes in the towel to remove as much liquid as possible. Place the potatoes in a bowl and stir with the kosher salt and lots of fresh ground black pepper.
  • In a large, heavy skillet (cast iron is best), heat the olive oil and butter over medium high heat. Add the potatoes in an even layer and press them down gently with a spatula. Cook for 4 to 5 minutes without stirring until browned on the bottom. Flip and cook additional 6 to 7 minutes until cooked through, stirring and flipping occasionally to ensure all parts are browned. If necessary, drizzle with a little olive oil when you are stirring to continue the crisping. Taste and add additional salt if necessary: serve immediately.
