Serve this caramelized onion dip with sweet potato chips - a cheesy appetizer.

2 tablespoons butter
3 large sweet onions, thinly sliced
1 package (8 oz) cream cheese, softened
2 cups shredded Swiss cheese (8 oz)
1 cup freshly grated Parmesan cheese
1 cup regular or reduced-fat mayonnaise
Food Should Taste Good™ sweet potato tortilla chips, as desired

Steps:

  • Heat oven to 375°F. Lightly spray 1 1/2- to 2-quart casserole with cooking spray.
  • In 12-inch skillet, melt butter over medium heat. Cook onions in butter 30 to 40 minutes, stirring often, until caramel colored.
  • In large bowl, mix cheeses, mayonnaise and onions. Spoon into casserole.
  • Bake uncovered 30 minutes or until golden and bubbly. Serve with sweet potato chips.

1 tablespoon vegetable oil, or as needed
1 large onion, thinly sliced
2 tablespoons butter
2 tablespoons white sugar, or as needed
1 cup sour cream
1 cup plain yogurt
½ cup mayonnaise
salt and ground black pepper to taste

Steps:

  • Heat oil in a skillet over low heat; stir in onion. Cook and stir until onion is soft but not browned, 20 to 30 minutes. Increase heat to high, add butter, and sprinkle sugar over onions. Cook and stir frequently until onion is very tender and dark brown, 8 to 10 minutes more. Remove from heat and cool to room temperature.
  • Combine sour cream, yogurt, and mayonnaise together in a bowl; season with salt and black pepper. Mince cooled onions on a cutting board; stir onions into sour cream mixture. Store in refrigerator to allow flavors to blend, at least 1 hour.

6 sweet onions (medium), peeled and cut into 1/4-inch rounds
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Melt butter in a large skillet over medium heat. Add onions; cook, stirring occasionally, until all juices have evaporated, about 20 minutes. Reduce heat to medium-low, and cook, stirring occasionally, until onions are very tender and golden brown, 1 hour to 1 1/2 hours. Season with salt and pepper, and serve.

2 (3/4 ounce) wedges Laughing Cow light swiss cheese, room temperature (2 of the wedges)
3/4 cup onion, diced
1/4 cup fat free egg substitute (like Egg Beaters Original)
1/2 teaspoon salt
1/4 teaspoon chili powder
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees.
  • Place squash in large microwave-safe bowl with 1/4 cup of water. Cover and microwave for 6 minutes. Once cool enough to handle, uncover and drain water. Set aside.
  • Place onions in a small microwave-safe dish with 2 tablespoons water. Cover and microwave for 3 minutes. Once cool enough to handle, uncover and drain any excess water. Set aside.
  • Place squash and all other ingredients except for the onions in a blender. (Make sure squash cubes are not still piping hot.) Pulse until thoroughly mixed (but not liquefied). Remove blender from the base, and then stir in the onions.
  • Transfer squash mixture to a small casserole dish sprayed with nonstick spray. Place in the oven, and bake for 35 - 40 minutes (until edges begin to brown). Then serve with a spoon as you would mashed potatoes! Enjoy!

Steps:

  • Heat butter in a large pan over medium-high heat on the stove. Once butter has coated the bottom of the pan, add onions, salt and cayenne pepper. Onions may be piled high in the pan, but they'll cook down. Saute for 10 minutes, stirring often.
  • Reduce heat to medium-low and cook for an additional 25 - 30 minutes, stirring occasionally, until onions are browned and caramelized.
  • Meanwhile, in a large bowl, combine sour cream, mayo and cream cheese. Whisk until smooth and then refrigerate.
