GRANNY'S HOMEMADE NOODLES



Granny's Homemade Noodles image

These are what my grandmother made. I love them. You can add chicken or beef and whatever vegetables you want.

4 eggs
2 tablespoons water
3 cups all-purpose flour
1 teaspoon salt
½ teaspoon baking powder

Steps:

  • Beat the eggs and water together in a bowl. Sift the flour, salt, and baking powder into a separate large bowl and make a well in the center. Pour the beaten eggs into the well, then stir in the flour mixture until a soft dough forms.
  • Roll the dough into a very thin layer on a lightly-floured surface; cut into 1/2 inch strips. Allow to dry at least 4 hours before using.

An old family recipe from St. John Lutheran Church member, Lillie Kauitzsch, Bartlett, Texas. A much better taste than store bought. I also remember my great-grandmother making noodles like this when I visited her in Oklahoma, many moons ago. Preparations time is an estimate.

3 egg yolks
1 whole egg
3 tablespoons cold water
1 teaspoon salt
2 cups flour

Steps:

  • Beat the egg yolks with the whole egg until very light.
  • Beat in the salt and water.
  • Stir in the flour and work with hands until blended.
  • Divide dough into 2 parts.
  • Roll out each part as thin as possible on a lightly floured board.
  • Let stand until partially dry (like chamois skin), at least 1 hour, then roll up like a jelly roll and cut into strips of any desired width.
  • Shake out strips and allow them to finish drying before using or storing them.

2 cups flour
3 egg yolks
1 egg
2 teaspoons salt
1/4-1/2 cup water

Steps:

  • Measure flour into bowl; make a well in the center and add egg yolks, whole egg and salt.
  • With hands, thoroughly mix egg into flour.
  • Add water, 1 tablespoon at a time, mixing thoroughly after each addition.
  • (Add only enough water to form dough into a ball.).
  • Turn dough onto well-floured board; knead until smooth and elastic, about 10 minutes.
  • Cover; let rest 10 minutes.
  • Divide dough into 4 equal parts.
  • Roll dough, 1 part at a time, into paper-thin rectangle, keeping remaining dough covered.
  • Roll rectangle around rolling pin; slip out rolling pin.
  • Cut dough cross-wise into 1/8-inch strips for narrow noodles and 1/4-inch for wide noodles.
  • Shake out strips and place on towel to dry, about 2 hours.
  • When dry, break dry strips into smaller pieces.
  • Cook in 3 quarts boiling salted water (1 tablespoon salt) (We use chicken broth.) 12 to 15 minutes or until tender.
  • Drain thoroughly.

This is my late mother-in-laws recipe for noodles -- her favorite for flavor and because they don't spring back when you roll them. At every family gathering she'd make the best Chicken and Noodles, dropping her prepared noodles into homemade chicken broth along with shredded cooked chicken, then serving them over mashed potatoes. I've made them many times and everyone loves them. When making multiple batches, and lacking counter space, I hang the rounds on clean plastic hangers to dry.

2 eggs
3 tablespoons butter, melted and cooled
1 ¼ cups all-purpose flour
¼ teaspoon baking powder
1 teaspoon salt

Steps:

  • In a large bowl, whisk the eggs and melted butter together with a fork. Stir in the flour, baking powder and salt until dough becomes stiff. Knead on a lightly floured surface or in the bowl for a few minutes to blend completely. Divide the dough into thirds. On a lightly floured surface, roll each piece into a sheet about 1/16 of an inch thick. Place each sheet onto a dry cloth and set aside for 30 to 45 minutes to partially dry.
  • When the noodle sheets are somewhat dry, roll up one at a time into a loose spiral and cut into strips as wide as you want using a sharp knife. Spread out the noodles to dry for about 1 hour before cooking or storing in freezer containers. To use frozen noodles, thaw in the container before using.
  • To cook the noodles, drop into rapidly boiling water or broth, and cook until tender, 7 to 10 minutes.

1 teaspoon salt
3 large egg yolks
1 large egg
1/3 to 1/2 cup water

  • In medium bowl, mix flour and salt. Make a well in center of flour mixture. Add egg yolks, whole egg and water to well; mix thoroughly. (If dough is too dry, mix in enough water to make dough easy to handle. If dough is too sticky, mix in enough flour to make dough easy to handle.)
  • Divide dough into 4 equal parts. On lightly floured surface, roll one-fourth of dough at a time into rectangle, 1/16 to 1/8 inch thick (keep remaining dough covered). Making noodles by hand is a fulfilling cooking project. The results are perfectly chewy noodles, even with ragged edges and imperfect lines.

3 2/3 cups (450 g) bread flour or all-purpose flour, plus extra for dusting
2 teaspoons sea salt

Steps:

  • Make the dough:
  • Combine the flour and salt in a large bowl. Using a pair of chopsticks, gradually stir in 1 cup (225 ml) of room-temperature water, a little at a time. It will look dry and rough-this is normal. Using your hands, bring the dough together, incorporating any dry bits of flour. When the dough comes together into a large ball, turn it out onto a smooth work surface (preferably not wood) and knead for 8-10 minutes, until the dough is smooth and malleable. Cover in plastic wrap and allow to rest at room temperature for 45 minutes. You can also leave it to rest overnight in the fridge-just make sure you bring it back to room temperature before the next step.
  • Roll out the dough:
  • After the first resting period, knead the dough for 2-3 minutes, then rest it again for 15-20 minutes-this relaxes the gluten and makes the dough easier to roll out. By now, the surface will look very smooth. Sprinkle your work surface with a little flour and divide the dough into four equal pieces. Working with one piece at a time (keep the others covered with a damp tea towel), roll it out into a roughly 9 x 12-inch (22.5 x 30 cm) rectangle (dust the rolling pin or surface with more flour if the dough sticks). If at any time the dough bounces back too much when you are rolling, simply leave it to relax for a few minutes. The more time you let it rest, the easier it will be to work with.
  • Cut and pull the dough:
  • Lightly dust the dough with flour and, using a sharp knife, cut it into ½-1inch-wide (1.25-2.5 cm) strips. Lift up each strip and gently pull, running your thumb and index finger along the noodle to elongate the strand. You don't have to pull too hard, just enough to slightly stretch the dough. Dust the strands with more flour to stop them sticking. Transfer the noodles to a floured sheet pan, cover with a tea towel, and repeat with the remaining dough.
  • Cook the noodles
  • Bring a large saucepan of well-salted water to the boil. Add the noodles in batches of two or three handfuls (depending on the size of your pan) and cook for 2-3 minutes, until the noodles float to the surface. Remove them from the water with tongs. Fresh noodles stick together easily so dress them immediately with a few drops of sesame or vegetable oil. If you plan on eating them later, submerge the noodles in an ice bath; when ready to serve, reheat them in boiling water for about 1 minute.
  • Note: You can also freeze these noodles. Dust them with rice flour to separate the strands and place them on a parchment paper-lined sheet, then place the tray in the freezer. Once frozen, transfer the noodles to a freezer container or bag. To cook, plunge the frozen noodles straight into boiling water (do not thaw first) and cook until they float to the top.

These are a great side dish simply cooked in the boullion or broth or a great meal when cooked with cooked chicken, turkey, or beef. (Note: Preparation time does not include drying time).

  • Measure flour into bowl and make a "well" in the flour.
  • Drop the remaining ingredients into that "well."
  • Work dough until it is stiff.

  • Let dry a minimum of two hours then cut into strips (I use a pizza cutter to cut the strips). You may dry longer.
  • Bring boullion to a boil. If you are cooking the noodles with meat, you will want to bring the cooked meat to a boil with the broth.
  • Add noodles and bring back to full boil. Lower heat to low-medium and cover pan.
  • Cook covered for 18 - 20 minutes.
