CREAMY PEAS-N-CARROTS CASSEROLE
Carrots, peas, and onions get together in this creamy, cheesy casserole. What a delicious way to eat your veggies!!

Steps:
- Place carrots in a saucepan with a small amount of water, cover, and cook for 6 minutes over medium heat.
- Add onions, bring to a boil, and then reduce heat.
- Cover pan and allow to simmer for 5 minutes and then drain.
- Add peas to carrots and toss.
- In a shallow 3 quart baking dish, add 4 cups of vegetables, sprinkle with cheddar cheese, and top with remaining vegetables.
- In a saucepan, melt 1 tablespoon of butter over medium heat, then stir in flour, nutmeg, salt, and pepper.
- Gradually add milk, stirring constantly.
- Bring milk to a boil, and stir for 2 minutes.
- Pour milk mixture over vegetables.
- Put remaining 3 tablespoons of butter and cracker crumbs in a skillet, cook and stir over medium heat until toasted.
- Sprinkle crackers over casserole, and bake at 350 degrees for 30 to 40 minutes.

WHITE GRAVY/ SAUCE WITH PEAS
This white sauce is affectionately known as "Pea Gravy" in our house. Makes me smile & laugh every time I say it. I grew up on the stuff. It was always served over rice alongside Recipe#284482. Enjoy!

Steps:
- Over low heat, slowly melt the butter in a sauce pan. **I often let it get to the brown butter stage but you don't have to. I'm just mentioning this so that you know that it's ok and not burnt!
- Add the bouillon, whisk, then add the flour. Continue whisking until completely incorporated. It will be thick and pasty.
- Continue whisking and cook a bit longer to get rid of the raw flour taste. About 1 minute.
- Over LOW heat, add milk, 1/2 C at a time continue to whisk while the sauce thickens. Slowly add another 1/2 C, whisk until creamy. Continue adding milk until it no longer thickens and it is creamy.
- Add the frozen peas, allow to warm through, about 5 minutes.
- Serve hot.
BEEF, RICE, PEAS AND CARROTS ONE DISH MEAL
Quick, simple supper. My 3 year old ate 6 servings, so I guess its kid friendly too. :) I used a very lean beef that didn't require draining, if you use a fatty meat you may want to drain it before step 3. If you don't want to use minute rice, you can double the water, use regular rice, and let it simmer about 7 minutes longer.

Steps:
- Dice onion (I like large chunks, you may prefer it smaller.)
- In a medium sized pot, brown ground beef, with onion. (Add a clove or two of garlic if desired.).
- When the beef is done, add the peas and carrots, and 2 1/2 cups of water. Let it reach a boil, and turn heat to medium.
- After about 5 minutes, add the minute rice, and an additional 1/2 cup of water if needed. Simmer for 5 minutes or so, until the rice and vegetables are tender.
- Season with salt and pepper to taste just before serving.

GOOD OLD MEAT PIE
A great deep dish meat pie made with potatoes, carrots and peas in a rich gravy. Lamb chicken or pork can be used in place of beef. A great recipe for leftover meat!

- Preheat the oven to 425 degrees F (220 degrees C). On a lightly floured surface, roll the pie crust out into a 12 inch circle. Set aside.
- Melt margarine in a saucepan over medium heat. Add potato and onion, and cook until the onion is tender, but not brown. Sprinkle the flour over the mixture, and stir to blend. Season with oregano, black pepper and garlic powder. Pour in the beef broth, and add the peas, carrot and beef. Bring to a boil. Transfer the mixture to a 2 quart casserole dish, and place the pastry over the top. Cut slits for steam, and flute the edges.
- Place on a baking sheet, and bake for 25 to 30 minutes, or until crust is golden. Let stand 10 minutes before serving to thicken.
