canola oil cooking spray
1/4 cup honey (60 mL)
3 Tbsp canola oil (45 mL)
2 Tbsp Dijon mustard (30 mL)
1 Tbsp curry powder (15 mL)
4 thick white fish fillets (about 5 oz/140 g each)
2 Tbsp ground flaxseed (30 mL)
2 green onions, minced (2)

Steps:

  • Preheat oven to 350 °F (180 °C). Lightly mist baking sheet or large casserole dish with canola oil cooking spray. In small container with lid, combine honey, canola oil, mustard and curry powder. Shake well. Drizzle about 2 Tbsp (30 mL) sauce on bottom of baking sheet. Place fish on top and cover with remaining sauce. Bake about 20 minutes or until fish is opaque and begins to flakes easily with fork. To serve, sprinkle with ground flaxseed and green onions.

4 large sole fillets
1/4 cup dry white wine
1 red pepper, cut into strips
1 green pepper, cut into strips
1/2 teaspoon curry powder
1/4 cup heavy cream
1 lime, juice of
salt, to taste
black pepper, to taste

Steps:

  • butter a frying pan, place filets in frying pan and season with salt and pepper.
  • add wine, lime juice and peppers. cover with sheet of waxed paper, bring to boil over med heat.
  • as soon as liquid starts to boil, remove pan from heat, and let stand 2 minutes.
  • remove fish and vegetables from pan and keep hot.
  • return pan to stove over high heat, incorporate curry powder into liquid and cook 3 minutes.
  • stir in heavy cream and contnue cooking 3 minutes over high heat.
  • pour sauce over filets and serve.

This is my family's favorite dish, I usually double the honey mixture because we like more sauce. If I use chicken breasts I will either butterfly or pound them with a mallot, that way they're not as dry. I also cook a little longer so the sauce reduces and turns to a nice glaze.

1 whole cut up chicken (or chicken breasts or chicken thighs)
1/4 cup margarine, melted
1/4 cup prepared mustard
1/2 cup honey
1 teaspoon garlic salt
1 teaspoon curry powder

Steps:

  • Combine margarine, mustard, honey and spices.
  • Dip chicken in sauce and place in a 13x9 baking dish, pour remaining sauce over chicken.
  • Bake covered at 375 for 1 hour.
  • I usually bake uncovered for the last 30 minutes and turn the chicken as it browns.
  • Serve over rice.

1 tablespoon curry
1/4 cup melted butter
1 tablespoon grated fresh ginger
fresh cilantro

Steps:

  • Preheat oven to 350 degrees.
  • Mix together melted butter, honey, dijon mustard, curry.
  • Lightly grease shallow baking dish (I used olive oil).
  • Place fillets in baking dish and cover with sauce.
  • Bake uncovered for 15-20 minutes.
  • Top with cilantro.
  • Enjoy!
