2 medium sweet potatoes (about 1 1/2 pounds total)
3 to 4 quarts vegetable or canola oil
Kosher salt and freshly ground black pepper
1 family-size bag salted potato chips, crushed to crumbs
4 large eggs, whisked
2 cups all-purpose flour
1/2 cup mayonnaise
1/2 cup Dijon mustard
2 tablespoons honey
1 tablespoon apple cider vinegar
1/4 teaspoon cayenne

Steps:

  • For the sweet tots: Preheat the oven to 375 degrees F.
  • Prick the sweet potatoes, then place them on a baking sheet and roast until the fork tender, about 1 hour.
  • Pour the oil into a Dutch oven and heat to 350 degrees F.
  • Peel and mash the sweet potatoes. Season with salt and pepper, and mix in 1 cup of potato chip crumbs. Place the remaining crumbs in a shallow bowl.
  • Place the whisked eggs and flour each in shallow bowls and season with salt and pepper. Roll the sweet potato mash into 1 1/2-inch tots.
  • Dredge the tots in the flour; dip in egg, letting the excess drip off; then roll in the chip crumbs to coat.
  • Fry the tots until golden brown, 1 to 2 minutes. Remove to a paper towel-lined baking sheet and sprinkle with salt. Keep warm until ready to serve.
  • For the honey mustard: Mix the mayonnaise, mustard, honey, vinegar and cayenne in a bowl until well blended. Serve with the tots.

16 oz extra-lean ground beef
1/3 cup minced yellow onion
2 tbsp seeded and minced jalapeño chile pepper
2 tbsp fresh cilantro, minced
1 tsp sesame seeds
1 tsp ground flaxseeds
1/2 tsp ground black pepper
1/4 tsp coarse sea salt
1 tbsp Dijon mustard
1 tsp raw honey
4 whole-grain sandwich flats, toasted
1/2 vine tomato, sliced
1/2 avocado, peeled, pitted and sliced
1/4 red onion, sliced
Olive oil cooking spray
2 cups peeled and grated sweet potatoes (TIP: Wring out excess moisture with a clean towel.)
2 tbsp seeded and minced jalapeño chile pepper
2 tbsp fresh cilantro, minced
2 tbsp oat flour
1 tbsp grated yellow onion
1 1/2 tsp smoked paprika
1 tsp garlic powder
1/4 tsp ground black pepper
1 1/2 tsp olive oil
Coarse sea salt, to taste

Steps:

  • Prepare Sweet Potato Tots: Preheat oven to 350 ̊F. Line a large baking sheet with foil and mist with cooking spray. In a medium bowl, mix potatoes, 2 tbsp each jalapeño and cilantro, flour, 1 tbsp yellow onion, paprika, garlic powder and 1⁄4 tsp black pepper until well combined. Stir in oil. Scoop 1 tbsp mixture and use your hands to form into a cylinder; transfer to sheet. Repeat with remaining potato mixture, leaving 1 inch between each. Bake for 15 minutes, then sprinkle with salt, to taste, and rotate baking sheet in oven. Bake for 15 to 20 more minutes, until golden. Let cool on sheet for 3 to 4 minutes. In a large bowl, mix beef, 1/3 cup yellow onion, 2 tbsp each jalapeño and cilantro, sesame seeds, flaxseeds, 1/2 tsp black pepper and 1/4 tsp salt until well combined. Divide into 4 3/4- to 1-inch thick patties; use your thumb to form a slight indent in center of each. Mist a grill pan with cooking spray and heat on medium-high (or use an outdoor grill). Transfer patties to pan and cook, turning once, until cooked through, 4 to 5 minutes per side. Meanwhile, prepare sauce: In a small bowl, whisk mustard and honey. Cover and refrigerate until needed. Divide patties among sandwich flats and top with sauce, tomato, avocado and red onion. Serve with Sweet Potato Tots.

1 lb lean ground beef (chuck or round)
4 teaspoons onions, diced
1/4 teaspoon dried oregano
salt and pepper
4 slices cheddar cheese (or American)
4 lettuce leaves
4 tomatoes, slices
4 hamburger buns
1/4 cup honey
6 tablespoons Dijon mustard
1/4 teaspoon dried oregano (1 tsp. fresh)
1 teaspoon lemon juice (optional)

Steps:

  • Combine mustard, honey, dried oregano, and lemon juice, if using, to make sauce.
  • To ground beef, add 2 tbls. of the above mustard sauce, oregano, onions, salt and pepper. Mix together lightly, but make sure it is fully incorporated. Form into 4 burgers. Grill or broil 4 to 5 minutes on each side for medium. When the burgers are almost cooked, place a slice of cheese on each one. Place on bottom of bun and top with lettuce and tomato. Spoon the rest of the honey mustard sauce over the top and place top bun over all. Enjoy!
