8 bone-in/skin-on chicken thighs, excess skin trimmed
kosher salt & freshly ground black pepper, to taste
1 teaspoon garlic powder
2 tablespoons olive oil, divided
2 tablespoons unsalted butter
1 large shallot, finely chopped
1/2 cup pure honey
1/3 cup whole grain (stone ground) mustard
1/4 cup dijon mustard
2 teaspoons curry powder
1/2 teaspoon cayenne pepper
1 tablespoon worcestershire
rice & side salad or steamed broccoli, if desired- for serving

Steps:

  • Preheat the oven to 375°F. Then place the oven rack into the center position.
  • Pat the chicken dry with paper towels and place them into a large resealable plastic bag. Season the chicken with salt and pepper, to taste, along with the garlic powder. Add in 1 tablespoon of olive oil and use your hands to massage the spices into the chicken to fully coat. Set chicken aside to marinate for at least 20 minutes.
  • Meanwhile, let's prep the honey mustard sauce. In a medium bowl, combine the honey, whole grain & dijon mustards, curry powder, cayenne pepper, and the worcestershire. Stir the mixture well to thoroughly combine and then set the bowl aside.
  • Heat a large (10-12 inch), oven-safe skillet over medium-high heat and add in the remaining 1 tablespoon of oil along with the butter.
  • Once the oil/butter is sizzling, add the chicken into the pan, working in batches. Let the chicken brown for 2-3 minutes on each side or until a deep, golden-brown color is achieved on both sides. Note: At this stage we're just browning the chicken, it will cook all the way through in the oven. Then place the browned chicken aside onto a clean plate and repeat the process until all chicken has been browned.
  • With all chicken set aside, add the shallot into the pan. Sauté the shallot, until tender, about 1-2 minutes. Then pour the honey mustard sauce into the pan, stirring continuously. Allow the sauce to come up to a slight boil and then turn off the heat.
  • Add all the browned chicken back into the skillet and spoon the sauce over the chicken pieces. Transfer the skillet into the oven.
  • Bake the chicken for 20 minutes on one side. Then flip the chicken over, basting the chicken, and bake on the other side for another 15-20 minutes or until the internal temperature reaches at least 165°F.
  • Allow the chicken to cool down for 10 minutes. Then serve immediately alongside your favorite side dishes and enjoy!

700 g / 1.4 lb chicken tenderloin or chicken breast cut into thick strips ((Note 1))
Salt and pepper
2 tbsp flour
1 tsp garlic powder
1 tbsp mayonnaise ((Note 3))
1 tsp cornstarch / cornflour or 2 tsp flour
1 1/2 tbsp + 1/2 tbsp olive oil
2 cloves garlic (minced)
1 cup chicken broth / stock ((250ml))
1/4 cup Dijon mustard ((70g))
1/4 cup honey ((85g))
1 - 2 tbsp wholegrain mustard, adjust to taste
2 tsp sprigs thyme or 1/2 dried thyme ((Note 4))
Fresh parsley, finely chopped

Steps:

  • Sprinkle chicken with salt and pepper, then toss with Seasoning if using.
  • Thickener: In a small bowl, mix together the mayonnaise and flour.
  • Heat 1 1/2 tbsp oil in a skillet over medium high heat. Add chicken and cook for 2 minutes on each side or until golden. Remove onto a plate.
  • Reduce heat to medium. Add remaining oil in the middle of the skillet and put garlic straight onto the puddle of oil. Sauté for 20 seconds or until golden (don't let it burn).
  • Add chicken broth, bring to simmer, scraping the bottom of the fry pan.
  • Whisk in Dijon Mustard and honey, then whisk in Thickener (make sure you scrape it all in).
  • Add thyme and wholegrain mustard, if using.
  • Cook for 1 - 2 minutes or until starting to thicken. Adjust salt and pepper to taste.
  • Return chicken and any juices pooled on the plate into the sauce. Turn to coat and reheat through - about 1 1/2 minutes - or until sauce is thickened to your taste.
  • Serve on mashed potato, garnished with parsley, with a simple side salad.

salt and pepper to taste
½ cup honey
½ cup prepared mustard
1 teaspoon dried basil
1 teaspoon paprika
½ teaspoon dried parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sprinkle chicken breasts with salt and pepper to taste, and place in a lightly greased 9x13 inch baking dish. In a small bowl, combine the honey, mustard, basil, paprika, and parsley. Mix well. Pour 1/2 of this mixture over the chicken, and brush to cover.

6 bone-in skin-on chicken thighs
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
1/2 cup white wine, such as Pinot Grigio
One 14-ounce bag frozen pearl onions
4 cloves garlic, thinly sliced
1/4 cup low-sodium chicken stock
3 tablespoons honey mustard
8 ounces baby bella mushrooms, quartered
1 tablespoon fresh thyme leaves
1 cup frozen petite peas

Steps:

  • Preheat the oven to 400 degrees F.
  • Pat the chicken thighs dry and sprinkle the skin side generously with salt and pepper.
  • Add 1 tablespoon oil to a large, high-sided ovenproof skillet and heat over medium-high heat. When the oil is shimmering, add the chicken thighs, skin-side down. (This may have to be done in batches, depending on the size on your chicken thighs, to avoid overcrowding the skillet.) Sprinkle the underside of the chicken generously with salt and pepper. Cook until the chicken skin is golden brown, crispy and easily releases from the pan, 4 to 5 minutes. Flip the chicken and continue to cook for an additional 2 minutes. Remove the chicken to a plate and set aside.
  • Turn the heat down to medium-low and add the white wine. Cook, scraping up any brown bits from the bottom of the skillet, until the harsh alcohol smells burns off and the wine has slightly reduced, about 1 minute. Add the frozen onions and garlic. Cook until fragrant, about 2 minutes. Add the chicken stock and 2 tablespoons honey mustard. Stir the mixture until well combined and emulsified. Add the mushrooms and thyme leaves to the skillet and stir to coat the mushrooms in the mixture.
  • Turn the heat off. Nestle the chicken into the vegetable mixture. Add the remaining tablespoon honey mustard and tablespoon oil to a small bowl. Whisk to combine. Brush the tops of the chicken thighs with the honey mustard mixture.
  • Transfer the chicken to the oven and cook until the vegetables are browned and the chicken is 165 degrees F, 35 to 40 minutes.
  • Turn the oven off. Remove the chicken from the oven and add the frozen peas. Stir slightly to submerge them in the sauce. Return the skillet to the oven until the peas are heated through, 2 to 3 minutes.
  • To serve, plate the chicken and vegetables and top with the pan sauce.

salt and ground black pepper to taste
1 tablespoon olive oil
2 large yellow onions, sliced and separated into rings
6 cloves garlic, chopped
3 (14 ounce) cans chopped tomatoes with juice
1 cup dry white wine
1 cup water
2 tablespoons grainy mustard
1 tablespoon chicken soup base (such as Better than Bouillon®)

3 tablespoons olive oil
2 tablespoons thyme, minced
3 teaspoons marjoram, minced

4 -5 bone in skin on chicken thighs
2 cups baby potatoes, halved. Any variety
1 tablespoon olive oil
1 tablespoon dried rosemary and salt & pepper for potato seasoning (to taste)
3 tablespoons Dijon mustard
3 tablespoons whole grain mustard
4 tablespoons honey
2 -3 tablespoons chicken stock or 2 -3 tablespoons broth
3 -4 sprigs fresh rosemary, with a few extra for a garnish
1 tablespoon olive oil
1 tablespoon whole grain mustard

Steps:

  • Preheat oven to 400.
  • Combine Mustard Rub ingredients in a small bowl then use fingers to massage and coat chicken rubbing both sides and under skin.
  • Whisk together the Honey Mustard sauce; Dijon and whole grain mustard, honey and chicken stock. Set aside.
  • Heat olive oil in an oven proof skillet over med/high heat. Add chicken, skin side down, and sear both sides for 2 to 3 minutes until golden brown.
  • Remove chicken from skillet and set aside.
  • Place potatoes in skillet and sprinkle with salt, pepper and dried rosemary.
  • Bake seasoned potatoes( in same skillet) for 18-20 minutes until easily pierced with a fork.
  • Remove skillet from oven, and add chicken back to skillet to combine with potatoes.
  • Drizzle honey mustard sauce over the the thighs. Be generous! Add fresh rosemary sprigs.
  • Place skillet back in oven and roast for 25-30 minutes until chicken is completely cooked through with internal temp of 175 degrees F.
  • Remove from oven, garnish with rosemary sprigs and serve.
