Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Beat eggs well. Dissolve baking soda with a little milk. Mix together the rest of the ingredients to make a soft dough.
- Bake for 8 to 10 minutes. DO NOT OVER BAKE. Frost with your favorite icing.

OLD GERMAN HONEY COOKIES
I got this recipe from my grandmother who got it from her grandmother. She had to translate it and then figure out measurements. The original recipe called for "enough flour to make a dough". Thankfully grandma knew what kind of dough.

Steps:
- In a saucepan over low heat, melt together sugar, shortening and honey. Let cool.
- Mix together eggs, vanilla, baking soda and ginger. Gradually add to cooled honey mixture.
- Slowly add 4 cups of flour to mixture. Stir until well blended. Drop by teaspoonfuls onto cookie sheets about 2 inches apart. Bake at 350 degrees F (180 degrees C) until golden (about 12-15 minutes).

Very simple and tasty cookie. I really like using honey in anything I make as I feel it gives a very unique flavor. Delicious.

- Make into ball the size of walnuts.
- Roll in sugar.

- Preheat oven to 350 degrees F. Combine ingredients in this order: Cream the margarine and sugar with an electric mixer. Add eggs, 6 tablespoons of honey, and 1 teaspoon vanilla and blend until smooth with the mixer. Into this mixture, add flour and baking soda. Mix into a thick dough. Chill dough until firm, preferably in freezer, approximately 2 hours. Pull off small pieces and roll into 1-inch balls. Place on ungreased cookie sheet. Bake for 10 to 15 minutes.

Steps:
- Heat oven to 375°F.
- Beat margarine, brown sugar, honey, and egg in a medium bowl on medium speed, scraping bowl constantly, until smooth. Stir in remaining ingredients.
- Drop dough by teaspoonsful onto an ungreased cookie sheet.
- Bake until set and light brown around edges (surface of cookies will appear shiny), 7-9 minutes.
- Let stand 3-5 minutes before removing from cookie sheet.
- Variations:.
- Honey-Bran Cookies: Stir 1 cup of shredded bran cereal into batter.
- Honey-Cinnamon Cookies: Mix 2 tablespoons sugar and 1/2 teaspoons ground cinnamon; sprinkle on cookies immediately after removing from oven.
- Honey-Coconut Cookies: Stir 1 cup of shredded coconut into batter.

- In a large bowl, cream shortening and brown sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in honey and extract. Combine remaining ingredients; gradually add to creamed mixture and mix well. , Shape into two 12-in. rolls; wrap each in plastic. Refrigerate 2 hours or until firm., Preheat oven to 325°. - Mix oil, sugar, egg, Honey, Bicarb of Soda, Salt and mixed spice in a large bowl. Mix until well combined and smooth
- Sift the flour, and gradually stir into the smooth mixture. The mix will soon combine into a smooth dough at this stage I emptied the contents onto a lightly floured surface and kneaded the dough carefully until all crumbs were gathered up
- Roll out your dough to a desired thickness, and cut out your cookies. I managed to get 25 cookies using a 78mm round cutter.
- Preheat the oven to 180C and place cookies on a baking tray lined with baking parchment. I only have a small baking tray so I had to cook the cookies in 4 and a bit batches >.< Also place the cookies with enough space between them as they will spread while baking. Bake for 10-12 mins or until golden around the edges and cracked on top.
- Transfer baking paper on top a wire rack and leave to cool. Sprinkle with caster sugar and enjoy :)
- I added coloured sprinkles into the dough for colour and a different texture which added a nice touch to them. Can add fruit to the smooth batter stage, such as banana or chocolate chips for some extra chewyness and flavor

- Beat the butter and honey together until mixed well. This can be done by hand, with a hand mixer or with a stand mixer.
- Add the egg and vanilla extract to the butter mixture and blend well. If using a stand mixer - stir slowly, do not whip.
- Add the all-purpose flour and salt to the wet ingredients. It is easier if you add small amounts at a time. Stir until all ingredients are combined well.
- Divide the cookie dough into 2 equal parts & wrap them in plastic. Push the dough down into a long flat slab. Refrigerate for 30 minutes to chill the dough - or you can leave it until the next day.
