HEAVENLY HONEYDEW JUICE
We had some amazing honeydew juice at a Mexican restaurant and immediately tried to recreate it. We think this is even better than the original!

BELLINI ICE
This ice is fashioned after the Bellini, a peach and white Italian wine sparkler. The tart white grape juice paired with ripe sweet peaches create a fantastic flavor combination. - Place peaches in a food processor. Cover and process until pureed. Transfer to an 11x7-in. dish. Stir in the grape juice, carbonated water and lime juice. Freeze for 1 hour; stir with a fork., Freeze 2-3 hours longer or until completely frozen, stirring every 30 minutes. Stir with a fork just before serving; spoon into dessert dishes. Garnish with peach slices if desired.

HONEYDEW COCKTAIL
A cocktail worthy of Fred Astaire -- honeydew, lime juice, mint, and vodka, whirred in a blender and poured over crushed ice.

- Place melon, lime juice, mint, sugar, and vodka in a bar blender. Blend until smooth, about 45 seconds. Pour through a cheesecloth-lined strainer into a pitcher.
- Place ice in 12-ounce glasses; pour liquid over ice. Swizzle and serve.
HONEYDEW TROPIC FREEZE
Steps:
- Put the melon, cream of coconut, rum, to taste, and about 2 cups of crushed ice in a blender. Puree until smooth. Pour into serving glasses and serve.

- Combine melon, sugar, and lemon juice in blender; process until smooth and sugar is dissolved.
- Stir in prosecco; pour into an 11x7 baking dish. Cover and freeze for 45 minutes.
- Stir mixture with a fork every 45 minutes until completely frozen and slushy (about 4 hours).
- Remove mixture from freezer and scrape with a fork until fluffy.
- Serve in dessert glasses.

HONEYDEW MELON & STRAWBERRY BELLINI GRANITA
Last summer when my son and I were constantly experimenting with granitas, ice creams, and fruit smoothies I came up with this fun adult version. It is very light and not overly sweet.

Steps:
- Combine melon, strawberries, and lime juice in a blender. Blend until smooth and strain. Pour into a medium sauce pot with sugar. Heat until the sugar dissolves, no need to boil.
- Remove from heat and add sparkling wine.
- Pour into an 11x7 inch baking dish, cover and freeze for about 1 hour. Remove from freezer and scrape with a fork every 30-45 minutes. Repeat this process for about 4 hours, or until granita is light and fluffy.
- Serve in a pretty glass of your choice with a sprig of mint.
- Enjoy.

- In a small saucepan, bring sugar and water to a boil over medium-high heat. Cook and stir until sugar is dissolved. Cool., Pulse honeydew, sugar syrup and wine in batches in a food processor until smooth, 1-2 minutes. Transfer to an 8-in. square dish. Freeze 1 hour. Stir with a fork. Freeze, stirring every 30 minutes, until frozen, 2-3 hours longer. Stir again with a fork just before serving.
