2 bacon strips, diced
1 small onion, chopped
2 teaspoons all-purpose flour
1/2 cup water
2 tablespoons cider vinegar
4 teaspoons sugar
1 tablespoon minced fresh parsley
1/4 teaspoon salt
2 cups refrigerated sliced potatoes
2 tablespoons diced pimientos

Steps:

  • In a large skillet, cook bacon until crisp. With a slotted spoon, remove to paper towels. In the drippings, saute onion until tender. Stir in flour until blended. , Add the water, vinegar, sugar, parsley and salt. Bring to a boil; cook and stir for 1-2 minutes or until thickened., Meanwhile, in a large saucepan, cook potatoes in a small amount of water until just tender, about 4 minutes; drain. Add the potatoes, pimientos and bacon to the sauce; toss gently to coat.

¾ cup chopped onions
2 tablespoons all-purpose flour
2 tablespoons white sugar
2 teaspoons salt
½ teaspoon celery seed
⅛ teaspoon ground black pepper
¾ cup water
⅓ cup distilled white vinegar

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool and slice thin.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside, reserving drippings.
  • Saute onions in bacon drippings until they are golden-brown.
  • In a small bowl, whisk together the flour, sugar, salt, celery seed, and pepper. Add to the sauteed onions and cook and stir until bubbly, then remove from heat. Stir in water and vinegar, then return to the stove and bring to a boil, stirring constantly. Boil and stir for one minute. Carefully stir bacon and sliced potatoes into the vinegar/water mixture, stirring gently until potatoes are heated through.

1 to 1 1/2 pounds new potatoes
1/4 pound bacon
1 medium onion, coarsely chopped
1 stalk celery, chopped
1/2 teaspoon all-purpose flour
1/2 teaspoon sugar
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup water
1/2 cup cider vinegar
Fresh snipped chives, optional garnish
Minced parsley, optional garnish
Hard boiled eggs, optional garnish

Steps:

  • Scrub potatoes and cook in boiling salted water until tender. Drain and, while hot, skin and cut into 1/4-inch slices. You should have about 4 cups. Set aside.
  • Place bacon in a skillet and fry until almost crisp. Remove bacon from pan and add onion and celery, cook until tender and transparent, remove from pan.
  • Drain off all but one tablespoon of bacon fat; add flour, sugar, salt and pepper to skillet stir until slightly browned. Add vinegar and water and cook until mixture is slightly thickened. Add back the bacon, onion, and celery.
  • Pour hot dressing over potatoes; stir gently to blend. The potatoes should look glossy. Garnish with hard-boiled egg slices, sprinkle minced parsley, and chives over top. Serve warm.

1 yellow onion, quartered

1 large red onion, diced
3/4 cup cider vinegar
1 tablespoon Dijon mustard
1/4 cup canola oil or olive oil
Salt and freshly ground pepper
8 green onions, thinly sliced
1/4 cup chopped fresh parsley leaves

Steps:

  • Preheat the grill to high. Place potatoes in a large pot with the yellow onion and cover with cold water. Cook, on the grates of the grill, or on a burner, until tender. Drain, discard the onion, and cut the potatoes into cubes when cool enough to handle. Place the potatoes in a large bowl and cover to keep warm.
  • Place a large saute pan on the grates of the grill. Add the bacon and cook until crisp. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Add the red onion to the rendered bacon fat and cook until soft, about 3 to 4 minutes. Carefully add the vinegar and mustard and cook for 2 more minutes.   • 1. Put the potatoes in a large saucepan. Add 2 tablespoons salt and enough cold water to cover by 1-inch. Bring to a boil, lower the heat, and simmer until fork-tender, about 30 minutes. Drain and cool slightly.

  • Reduce heat, saute onion until translucent.
  • Don't drain the fat.
  • Add vinegar, sugar, mustard, and mustard seed.
  • Whisk 2 tbs flour into stock, add to pan, bring to boil.
  • Taste mixture, and adjust sugar-to-vinegar ratio, if necessary.
  • Slice potatoes, and coat with dressing.

Paul Prudhomme's Hot German Potato Salad image

This is the best German potato salad recipe that I have ever found. The spices really make it wonderful.

1 teaspoon dry mustard
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon white pepper
1/2 teaspoon black pepper
1/2 teaspoon salt
20 unpeeled small red new potatoes
4 hard-boiled eggs, peeled and chopped
8 slices bacon, diced
1 cup chopped onion
1/4 cup all-purpose flour
1 cup chicken stock or 1 cup canned broth
3/4 cup distilled white vinegar
1/2 cup sugar
1/2 cup chopped green onion tops or 1/2 cup chives

Steps:

  • Combine the six seasonings.
  • Cook the potatoes in a large pot of water until just tender (about 5 minutes from when the water starts to boil). Drain and cool under cold running water. Slice the potatoes about 1/4 inch thick and place in a large bowl. Add eggs and mix well.
  • Saute the bacon until browned. Remove the bacon from the pan and set aside, reserving the drippings.
  • Pour off all but 2 tablespoons of bacon drippings and set skillet over high heat. Add the onions and cooks, scraping the skillet occasionally, until the onions are golden, about 3-5 minutes. Add all of the seasoning mix, and whisk in the flour. Slowly add the chicken stock, vinegar and sugar, whisking constantly. Cook, whisking frequently, until the mixture is thick, about 5-6 minutes. Remove from heat.
  • Fold the sauce into the potato and egg mixture, add the green onions tops and bacon, and combine thoroughly.
  • Best served warm, but also good at room temperature.

6 red potatoes
5 slices bacon, cut into pieces
1/3 cup onion, chopped
1/3 cup celery, chopped
1/4 cup water
1/2 cup cider vinegar (to taste)
1/2 teaspoon sugar (to taste)
1/2 teaspoon salt (to taste)
1/2 teaspoon ground pepper (to taste)
2 teaspoons cornstarch
2 tablespoons cold water

Steps:

  • Cool potatoes whole with skin on and cook until fork tender. Remove peels while hot and cut into bite sized pieces.
  • In a skillet cook bacon pieces until crispy and remove just the bacon and set aside.
  • Add chopped onion and celery to bacon grease in skillet and cook until tender.
  • In a sauce pan or microwave heat to boiling, water, vinegar, sugar, salt and pepper.
  • add water/vinegar mixture slowly to onions/celery and add in reserved bacon. Heat to simmer.
  • In a small bowl or cup mix together cornstarch and cold liquid and add it simmering vinegar sauce.
  • In a slow cooker add potatoes and pour vinegar/bacon mixture over potatoes and stir. Heat on low for a couple of hours or more so it is warm for serving.
