SOUTHERN STYLE SEASONED GREEN BEANS (FROM CANNED)
A lot of folks simply open a couple of cans of green beans, heat, add a bit of butter...and wonder why no one eats them! This simple little "tweak" turns them into a delicious, satisfying side that'll change the way you think of canned green beans.

Steps:
- Cook the bacon in a heavy sauce pan (do not crisp the bacon, just cook enough to extract the drippings). Remove from heat.
- Empty the 2 cans of cut green beans into the sauce pan directly on top of the cooked bacon and drippings.
- Add salt to taste and then the 1/4 teaspoons of minced garlic. Stir well and return to heat.
- Bring to a boil over medium heat, then reduce heat to med-low, cover, and simmer for at least 30 minutes (1 hour is better).
- Serve and enjoy.
- NOTE - Use good quality canned green beans. My family prefers "flat beans" (Cut Italian Green Beans), but regular cut will taste just as good.

- Place the chopped bacon in a skillet, and cook over medium heat, stirring occasionally, until evenly browned, 8 to 10 minutes. Drain the bacon pieces on a paper towel-lined plate.
- Melt the butter in a skillet with a lid over medium-low heat, and cook and stir the onion until translucent, about 5 minutes. Stir in the cooked bacon, green beans, potatoes, garlic, and chicken broth. Bring to a boil, cover, and simmer over low heat until the green beans are tender, about 10 minutes. Sprinkle with vinegar, salt, and pepper, and serve.

These are FANTASTIC! This recipe was revised from an old family favorite! My southern roots come through on this one! Either way the beans end up melting in your mouth and the cooked bacon adds more flavor! REALLY tasty! Good for cookouts or to compliment any meal!

Steps:
- Put green beans in pot- if canned add juices, if frozen add water enough to see but not cover beans- cook on medium heat.
- Fry bacon until cooked but not too crisp- drain on paper towel.
- Cut onion in large (thick) slices and break rings apart in to beans.
- Crumble or rip bacon apart add to beans.
- Add spices to taste.
- Let cook for a few hours on low heat.
- If want to serve sooner- turn heat up and cook until water boils down.
- OR can put in crockpot on low all day long and let simmer.

- Pour green beans into a colander to remove any liquid from jar or can.
- Rinse lightly with cool running water, let drain.
- Slice the pork side meat into ½ thick slices.
- Place pork in a sauce pot over medium heat.
- Cook meat until the fat sections appear translucent in color. Remove the meat if desired but leave the rendered fat in the pot to season the beans as they cook.
- Add 2 cups of warm water.
- Add the drained green beans. Add more water if needed to reach about 1 inch over top of beans.
- Add Sugar
- Add Black Pepper
- Add Salt
- Stir well and bring to a low boil. Cover pot, REDUCE heat to medium-low, simmer 30-45 minutes or until done.
- Taste a bean or two to see if they are cooked to your desired tenderness. Add more salt if needed, or more water if needed to finish cooking the beans to your taste preference.
- Remove from heat when done, cover until ready to serve.
- Serve warm and Enjoy.
DOWN-SOUTH STYLE GREEN BEANS
This recipe can also be cooked in a crock pot, and simmered all day. If fresh green beans are not available, use frozen. Just good ol' Southern style green beans with FLAVA!!

- Mix spices together in small bowl.
- Pre-heat skillet to medium heat. Add bacon and salt pork. Saute to release their flavor. Cook until bacon is fully cooked. Remove and set aside the bacon and salt pork.
- Add sliced onions and saute 3-4 minutes. Add chopped garlic cloves and cook another minute. Season the vegetables with a 1/3 of the spice mix.
- Add the smoked pulled pork if using and cook for a minute or two just long enough to release the flavor.
- Add green beans and mix well to coat most of the beans in the infused bacon fat. Add chicken stock, water plus half the remaining seasoning. Mix well and bring to a boil then reduce to simmer. Cook covered 1 1/2 - 2 hours. Halfway through cooking add remaining spices. Remove from heat and serve.
