SOUTHERN STYLE SEASONED GREEN BEANS (FROM CANNED)

Southern Style Seasoned Green Beans (From Canned) image

A lot of folks simply open a couple of cans of green beans, heat, add a bit of butter...and wonder why no one eats them! This simple little "tweak" turns them into a delicious, satisfying side that'll change the way you think of canned green beans.

Provided by Soleilbb

Categories     Low Protein

Time 40m

Yield 4 cups, 4-6 serving(s)

Number Of Ingredients 4

2 (14 1/2 ounce) cans cut green beans (not french-style)
4 slices thick-cut bacon
1/4 teaspoon minced garlic
salt

Steps:

  • Cook the bacon in a heavy sauce pan (do not crisp the bacon, just cook enough to extract the drippings). Remove from heat.
  • Empty the 2 cans of cut green beans into the sauce pan directly on top of the cooked bacon and drippings.
  • Add salt to taste and then the 1/4 teaspoons of minced garlic. Stir well and return to heat.
  • Bring to a boil over medium heat, then reduce heat to med-low, cover, and simmer for at least 30 minutes (1 hour is better).
  • Serve and enjoy.
  • NOTE - Use good quality canned green beans. My family prefers "flat beans" (Cut Italian Green Beans), but regular cut will taste just as good.

SOUTHERN-STYLE GREEN BEANS RECIPE

Southern-Style Green Beans Recipe image

Forty years ago, in an early collection of Southern Living vegetable recipes, the "Final Touches" chapter included clever twists on classic sauces and festive relishes along with novelties such as chive-blossom vinegar and tarragon-herb butter. In defense of the old-school recipes in the preceding chapters, we offered this introduction: "Southerners have never apologized for cooking their green beans 'to death,' but it is not widely known that properly motivated we can cook them as crunchy as the most sophisticated chef can and dress them in many ways, from herb-buttered to hollandaised to amandined. It is just that we may want to cook them half a day with salt pork or ham hocks if we are alone with the home folks; and that is a preference that bears no relationship to ignorance." As much we love all the new crunchy, barely blanched, paired-with-walnuts-and-feta green bean creations (and we truly do), there's still something so wonderful about the way a hambone broth infuses old-fashioned Southern-style green beans with a salty, meaty smokiness.

Provided by Southern Living Test Kitchen

Categories     Side Dishes

Time 1h40m

Yield 10-12

Number Of Ingredients 5

3 pounds fresh green beans, trimmed
1 (1/2-pound) ham hock
5 cups water
2 teaspoons table salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Remove the strings from the beans, and cut the beans into 2-inch pieces. Wash the beans thoroughly.
  • Place the ham hock and 5 cups water in a Dutch oven; bring to a boil. Reduce heat, and simmer 1 hour. Add the beans, salt, and pepper; cook, stirring occasionally, 30 minutes or until tender.

2014-06-18 Old Fashioned Slow Stewed Southern Green Beans I make my speedier version of green beans the same way most of the time - a little bacon, a little onion and a little chicken broth or plain water. Sometimes, new potatoes are added. Doesn't matter whether the beans are fresh, frozen or canned - I use the same method for them all, and each of those elements add so much depth and flavor to green beans.

  • Dice bacon and cook in the pot over medium heat until crispy, about 6 minutes. If using ham, add 1 tablespoon of bacon grease or oil to the pot and brown the ham. If using smoked sausage, slice or dice the sausage and brown in 1 tablespoon bacon grease or oil. If using smoked turkey, skip this step but add 1 tbsp of bacon grease or oil to the pot for the onions.
  • Wash and trim beans, chop the onions, and slice the garlic while the bacon is cooking. If you like crispy bacon, remove bacon now, otherwise leave it in the pot to cook with the beans.
  • Add the onions and bay leaf to the pot and saute until the onions have softened. Add the garlic and beans and add enough broth to just cover the beans. (If you like your beans with vinegar and a little sugar, add it now. I go by taste.)
  • Bring the pot up to a boil, then turn it down to a simmer and simmer the beans for 40 minutes up to 1 1/2 hours for a pound of beans. I like my beans more firm, so I cook for about 40 minutes or until the beans are tender when pierced with a fork. Traditional southern green beans are cooked for a long time!
